Crispy fried chicken.
Ingredients: chicken thigh and drumstick, salt, flour
1) Dry brine the chicken in salt for 45 mins
2) Wash off the brine, put in a ziplock bag and dunk into a pot of 80 degree C water for 30 minutes
3) Dry the chicken, coat in flour and shallow fry in vegetable oil until golden brown on the outside
Tips: make sure to get all the air out of the ziplock bag so it doesn’t float in the pot. Heat the water up, put the chicken in the bag, put the bag in the water, then push all the air out of the bag and it should sink.
