Almond Crust
1 cup (120g) raw almonds
1/2 cup (60g) dates, pitted (about 8-10 dates)
2 tbsp (16g) unsweetened cocoa powder
2 tbsp (10g) unsweetened shredded coconut
1/4 tsp (1g) salt
1 tbsp (15ml) water
1/2 tsp (3g) almond extract
Raspberry Jam
12 oz (350g) fresh or frozen raspberries
1/3 cup (70g) sugar
1 tbsp (15ml) lemon juice
Almond Ice Cream
1 1/4 cup (300g) whipping cream, chilled
1/2 can (7 oz, 198g) sweetened condensed milk
1 tsp (5g) almond extract

How to make Ice Cream Cake
There are lots of different methods, sizes and shapes of ice cream cakes out there. I tried to make mine as simple and straight forward as possible, using 8 inch metal cake pans lined with plastic wrap (for easy removal) and store bought everything. When you’re planning a party, who has time to home make EVERYTHING?! Not this girl.

Line two 8-inch cake pans with plastic wrap.
Spoon softened ice cream into prepared pans, pressing out air bubbles as you go.
Freeze two layers in the freezer for 8-12 hours.
One hour before assembly, freeze cake plate.
Unwrap and place one layer onto a cake plate.
Add crushed cookies and hot fudge (that hasn’t been heated up!)
Top with the second layer.
Frost with whipped cream and sprinkles, if desired.
Freeze until completely hardened.
Cut using a large knife dipped in hot water.

4 chocolate-coated chocolate-cream centre biscuits, coarsely chopped

1 chocolate-coated bar, caramel and peanut-flavoured, coarsely chopped

1L Coles Belgian Chocolate Ripple ice cream, softened

2 x 40g nougat bars, coated in chocolate & coconut, coarsely chopped

4 chocolate-coated wafer balls with hazelnut centres, coarsely chopped

Chocolate fudge topping, to serve

Assorted chocolates, to serve

Assorted biscuits, to serve
