Cafe Amin a place which needs no introduction, it was established in 1956, further, due to space constraints, cafe Amin annex was inaugurated by the then Honorable Chief minister Mr. Anna Durai in the year 1967. It is famous for its paya (Lamb Trotters) and Biriyani. Cafe Amin’s biriyani was a favorite dish for most of the CM’s of Tamil Nadu and many celebrities, knowing about their heritage and their tasty biriyani we visited Cafe Amin and had a great opportunity in cooking along with their Biriyani Master and heard lots of stories about cafe Amin’s journey for the past 50 yrs.

The word Biryani is derived from the Persian word Birian, which means ‘fried before cooking’ and Birinj, the Persian word for rice. There are various theories related to the origin of this scrumptious dish. Many historians believe that biryani originated from Persia and was brought to India by the Mughals. Biryani was further developed in the Mughal royal kitchen.

The paya originated from the amalgamation of South and Central Asian cuisine. In Central Asia, it was known as pacha. The dish was adapted to the local cuisines by the Muslim cooks of Lahore, Hyderabad of Telangana State and Lucknow.[3]
Subsequently, paya became popular all over present-day India, Pakistan and Bangladesh. Outside the Indian subcontinent, is also available in restaurants that serve South Asian cuisine. In Delhi it is sometimes also referred to as "khurode" from the "khur" or hoof, Paaya means 'legs' in Hindi language.
A meat chop is a cut of meat cut perpendicular to the spine, and usually containing a rib or riblet part of a vertebra and served as an individual portion. The most common kinds of meat chops are pork and lamb. A thin boneless chop, or one with only the rib bone, may be called a cutlet, though the difference is not always clear. In Great Britain, the idea of a chop comes from the 17th century, when London chophouses started cooking individual portions of meat.
