Easy, aromatic spice blend for making biryanis and curries!
Spiceable Tikka Masala Spice Blend
METHI MATTAR PULAO - The one-pot weekend meal you didn’t know you needed.😋
Serves: 3
Ingredients:
1.5 cups of Jeera samba rice
2.5 cups of water
2 cups of fresh methi/fenugreek leaves, washed thoroughly
1 cup of frozen green peas
2 tablespoons of cold-pressed peanut oil
1 tablespoon of ghee
1 medium red onion, sliced
1 small vine/globe tomato
Salt to taste
Lemon juice
Green masala paste:
4-5 green chilies
3-4 stalks of mint
10-12 stalks of coriander leaves
4 cloves of garlic
3/4 inch of ginger root
Water
2.5 teaspoons of Biryani Powder: (The recipe is my reels)
➡️ Heat oil & Ghee in a pressure cooker on medium heat.
➡️ Add and Sauté onion until light brown.
➡️ Add and sauté the green paste on low heat until oil separates.
➡️ Add biryani powder, and sauté for a couple of seconds.
➡️ Add in chopped tomato and cook until soft.
➡️ Add methi leaves, salt and green peas. Sauté and partially cook for a couple of minutes.
➡️ Add white rice, water and lemon juice.
➡️ Allow the mixture to come to a boil. Taste for salt and adjust.
➡️ Cover the lid and pressure cook until 2 whistles. Then allow the pressure to release naturally.
➡️ Gently mix and serve with raita. Enjoy!

These were a few meals and hot kashayas (couldn’t take pictures of a lot more) that we were served at during the 4-day Inner Engineering Retreat last weekend - Simple yet delicious, and mostly pranic food.

Red Rice Paddu - Sooo yummy!🤤 🌱Red rice batter 1 cup red rice 1/4 cup split urad dal 2 tsp fenugreek seeds 👉🏽Soak all the above ingredients in water for about 5 hours. Drain and grind them into a smooth batter adding as little amount of water as possible. 👉🏽Transfer the batter into a bowl, and mix well for 2-3 minutes. Cover and let it ferment for 10-12 hours in a warm place. 👉🏽Then add salt to taste and combine. You could make idly, dosa and paddu with this batter. 🌱For paddu: 👉🏽Combine red rice batter, cumin seeds, finely chopped onion, grated carrots, finely chopped green chilies, and chopped dill together. 👉🏽Cook them in paddu maker on low-medium heat for 3-4 minutes on each side. GREEN GRAM CURRY Re-sharing this delicious green gram curry recipe as a reel because it’s worth it!😋 Soak a cup of green gram for 6 hours. Heat 2 tbsp peanut oil in a pressure cooker. Add 1/2 tsp cumin seeds, 2 cloves of crushed garlic, 2 slit green chilies and a small chopped onion. Sauté until onion turns slightly brown, then add 1/4 tsp turmeric powder, 1 tsp Kashmiri red chili powder and 1/2 tsp garam masala. Sauté for a few seconds and add a large chopped tomato along with salt. Cover and cook until tomato soft and mushy. Add soaked & drained green gram along with 2 cups of water. Once the mixture comes to a boil, add a handful of chopped cilantro and pressure cook for two whistles. Gently mash once the pressure naturally releases. Finish with a tempering of- 2 tbsp ghee, mustard seeds, hing, dried red chilies and a few curry leaves. Pour this over the curry and serve with chapati/roti. Enjoy! AIR-FRIED BEETS Tried this version of beets during the last holiday season and it was an instant hit. It’s sweet, mildly spicy, garlicky, well-cooked & full of flavor!😋 🌿1 medium beetroot, skin-peeled & cut into 1/2 inch-ish slices as shown 🌿1 tbsp olive oil 🌿Salt as per taste 🌿Black pepper powder as per taste 🌿1/2tsp Garlic powder Prep beets as shown. Add beet slices, olive oil, salt, pepper and garlic powder into a mixing bowl, and toss to coat. Preheat air fryer at 390F. Add seasoned beets into air basket and cook at 390F for 10 minutes, tossing half way through. Garnish with cilantro and serve as is or with your favorite dip.
