Burnt aubergine with tahini, crispy garlic and chilli morita. You can get creative with the ingredients you want to add but I really encourage you to try and cook aubergine this way. Depending on the size you can cook them directly over a flame for 15-20 minutes until blackened. This adds a smokey flavour but also creates steam which cooks the aubergine! I like to leave the cooked flesh in a colander to drain off the excess liquid for 30 minutes. The addition of the fried crispy garlic and chilli elevates it and the creaminess from the tahini. Delicious! This is definitely my favourite way to eat aubergine.
