Lemon with Ginger, Lemongrass, Sugar, and Salt
Today, I am soaking lemons with the following ingredients:
Lemons (6 kg)
Lemongrass (3 kg)
Ginger (I'll wait until December for yellow-fleshed ginger and add it later): 3 kg
Rock sugar (crystallized from cane syrup): 10 kg
Salt (coarse sea salt): 1 kg
The corresponding ratio is:
1 kg lemon - 1.7 kg sugar - 0.5 kg lemongrass - 0.5 kg ginger - 150 g salt (1.5 lạng of salt).
Method:
Wash all the ingredients (lemons, lemongrass, ginger, and the jar) thoroughly and rinse them with alcohol before preparing (this helps the soaking process remain flavorful).
Let the alcohol dry before proceeding.
Thinly slice the lemons.
Crush the ginger and lemongrass (grind them finely).
Layer the ingredients: first a layer of lemons, then a layer of sugar, salt, lemongrass, and ginger. Repeat until the top layer is completely covered with sugar (make sure no lemon slices are exposed).
Leave it until the sugar completely dissolves. Open the jar and stir. (Remember to stir occasionally, about 3-4 times, and then stop.) Seal the jar tightly and let it sit for at least 6 months before using.
How to use:
Drink directly or mix with warm water. You can also mix it with coconut water, sugarcane juice, or fresh lemon juice.
