Château du Rocher ~ Mézangers
A historic monument and one of the most beautiful castles in Mayenne, looking incredible on a sunny but frosty day here.
The Château du Rocher takes its name from the granite outcrop of the Armorican Massif on which it was built in the 13th century.
It's surrounded by very English-style parkland which is lovely to walk around and the château's majestic silhouette is reflected in the huge pond in the grounds.
It's also a stones throw from Étang du Gué de Selle, a gorgeous lake for walking and swimming (if you are brave enough!) 😉 and a great restaurant overlooking the lake too.

~ One-Pot Winter Bake ~
We had a super lazy lunch with our friends yesterday and this was delicious! 💛
Recipe & Method below:
Smoked Salmon Bake
Serves 4
350g hot-smoked salmon, skinned, deboned and flaked
1 tbsp butter, plus extra for greasing
800g King Edward potatoes, peeled and sliced
1 onion, peeled and sliced
1 garlic clove, peeled and finely chopped
2 tbsp chopped fresh dill
2 tosp chopped fresh parsley
3 eggs
150ml single cream
black pepper
20 x 10cm deep-fill tin
Method
Preheat the oven to 190°C/gas mark 5 and grease the tin.
Place the sliced potatoes in a large saucepan, cover with cold water and bring to the boil. Drain thoroughly. In a frying pan, melt the butter, add the onion and garlic, and sauté for 10 mins until softened. Layer one third of the potato slices in the bottom of the prepared tin, then scatter over a third of each of the salmon, onion mixture and both herbs. Repeat the layers twice with the remainder of these ingredients. In a jug, whisk together the eggs and cream, and season with pepper. Pour over the potato layers and bake for 30 mins until crispy and the mixture is completely firm. Cut into four slices and serve immediately.
I switched ours up by swapping hot smoked salmon for hot smoked mackerel and I added cooked prawns to ours too. I served it with roasted carrots, broccoli and homemade bread.

Dad's funeral service on Wednesday was very emotional as I'm sure you can imagine but also a wonderful celebration of his life. I was so overwhelmed and moved at how many friends and family came to support us through it and show their respects to dad too 🥲
