The puffs may be decorated, left plain or garnished with chocolate sauce, caramel, or a dusting of powdered sugar. Savory profiterole are also made, filled with pureed meats, cheese, and so on. Here is a recipe for pickeld magnolia flowers:
🌸🌸🌸
You need:
- 15 young, not open magnolia flowers
- 250ml rice wine vinegar
- 50gr sugar
- A pinch of salt
🌸🌸🌸
Very Gently wash and dry the flowers. Remove the stems and petals from the centre of the flower. Then sterilise a large jar with hot water and place the washed flowers inside it. Heat the vinegar, sugar and salt to boiling, then simmer for five minutes. Pour the hot liquid over until the magnolias are completely covered. Quickly seal the lid while hot. Allow the jar to cool to room temperature then put it in the fridge. The pickeld Magnolia flowers are ready to eat after three days. Store them in the fridge.

The pickeld flowers can be used like pickled ginger or chopped in salads. They taste a little milder than pickled ginger. If you want to try more recipes with magnolia, you can also make magnolia syrup.

Some Magnolia species, such as the Tulip Magnolia, are very popular decorative woods. Tulip magnolia is common enough that it is often referred to simply as "magnolia". The genus was named after the French botanist Pierre Magnol (1638-1715).

Here are some more infromation about the Tulip Magnolia (Magnolia soulangeana): it is a hybrid of the genus Magnolia and a cross of the Chinese Yulan magnolia (Magnolia denudata) and the Purple magnolia (Magnolia liliiflora).

The first crossing was achieved by Γ‰tienne Soulange-Bodin in 1820. The hybrid quickly became popular as an ornamental woody plant, and the first plants were introduced to England as early as 1827.

🟑🟑🟑 Today we tell you a little more about curcumin, a natural chemical compound that is the main component of the spice turmeric – here used to color the pudding inside of our giant mochi from one of our videos.

🟑🟑🟑 Curcumin has been used in the Indian healing art of Ayurveda for over 5000 years. There it is used to treat respiratory diseases, as well as liver diseases, anorexia, rheumatism and sinusitis.

🟑🟑🟑 Curcumin is not approved as a drug in Germany. But it is approved as a food additive and nutrient source added to food under the number E100. Permitted daily dose is 3 mg/kg body weight.

🟑🟑🟑 Turmeric was already mentioned in 1280 by Marco Polo in the reports of his travels to China and India. In the 13th century, the spice was brought from India to Europe by Arab merchants. Turmeric used during the British rule in India in combination with other spices as curry powder.

🟑🟑🟑 Curcumin is also a direct dye for cotton and silk. Due to its low lightfastness and unstability in alkaline, its use as a textile dye has no significance. Turmeric should be stored in the dark and not too long, because the color fades quickly in light and it loses flavor.

For one of our videos we experimented a bit with the color of purple cauliflower. Traditionally, cauliflower has been bred so that the head would grow without any of the natural pigments. But due to recent interest in colorful varieties, it's not uncommon to find purple, green, and even orange cauliflower.

The purple cauliflower’s color comes from the same antioxidant found in the purple potatoes we talked about last week. It comes from 'anthocyanins', natural pigments which also give red cabbage or grapes their beautiful purple color. Sun exposure further exaggerates it's effect on the cauliflower, resulting in bright purple heads.

Anthocyanins have halochromic properties. This means that they have a very special trait of changing color, depending on the pH of the solution it's mixed with.

So for our experiments we added different acids like lemon juice or vinegar to the cauliflower resulting in this great pink color. It also makes a difference if you cook or steam the cauliflower. If you steam it, it won’t loose as much of it’s color than when you cook it, because a lot of the pigments dissolve into the cooking water.

Today we are introducing an artificial food colorant:

Brilliant blue, E133, is a blue triphenylmethane dye that is used as a food colorant, but only in the permitted doses of 6 mg/kg body weight per day.

Brilliant blue is used to color beverages, food and medicines, as well as in liquid detergents, fabric softeners, in mouthwash, toothpaste and perfumes.
Brilliant blue is considered harmless because most of the dye is excreted after consumption. However, some animal studies showed that brilliant blue in high doses can be deposited in kidneys and lymphatic vessels.

For this reason, brilliant blue is only approved for certain products:
edible coatings for cheese and sausage, candy, cakes, cookies, pastries, spirits, fruit and fruit wines, ice cream, desserts, sauces, condiments, appetizers.

So don't eat too much smurf ice cream! According to the packaging of our sky ice cream, a natural colorant has been used for this ice cream. However, since E133 is the most common colorant for blues ice cream, we wanted to introduce this colorant to you nevertheless.

If you've always wondered why the potatoes in our video β€žSapphire Potato Artist Mukbangβ€œ are so purple, here's the answer:

Due to a very high content of the natural pigment anthocyanin, some potato varieties appear purple.
Anthocyanins are water-soluble plant pigments that give flowers and fruits of many plants an intense red, purple or blue color.
In potatoes, the dye is formed in the skin and protects the potato from the sun's rays. This dye is also said to be very healthy for us consumers: compared to other potatoes, purple potatoes contain up to ten times more of this antioxidant and it is also said to have a positive effect on blood pressure.

Yet another reason to eat more purple!
Just like yellow potatoes, purple potatoes can be divided into floury and waxy varieties. Basically, you can use them in the kitchen just like conventional yellow potatoes. You should only keep in mind to cook them with skin, because the dye is water-soluble and the potatoes could otherwise lose their color.

This week you can learn about different dyes that color our food:

Today you can learn something about the dye of beetroot juice, which we used for the recipe of these pickled eggs:

The striking red color is mainly due to the high concentration of the glycoside betanin from the group of betalains. Betalains are a group of chemically very similar water-soluble flower and fruit pigments. In the past, beet was also used as a dyeing plant. Betanin is used as a natural dye for food under the number E162.

After consumption, urine can turn red and f***s can turn reddish to black, which is completely harmless.

The nut-like β€šgametophyteβ€˜ inside the Ginkgo seeds taste very delicious when cooked or fried. They are particularly esteemed in Asia, and are a traditional Chinese food. Ginkgo nuts are used in congee, and are often served at special occasions such as weddings and the Chinese New Year. Japanese cooks add ginkgo seeds (called _ginnan_) to dishes such as chawanmushi, and cooked seeds are often eaten along with other dishes or as a snack with beer, sake or wine.
πŸŸ’β€‹πŸΊπŸŸ’πŸΆπŸŸ’
There are different ways to prepare the nuts: You can either first bake the cleaned ginkgo seeds at 350Β°F for about fifteen minutes, then crack the shell with a hammer or rubber mallet. Place them between layers of dish towels to avoid smashing the nut meats and having the shells fly all over the room. Then, rub off any papery skins that cling to the nut meats.
You can also first crack the raw shells and fry the seeds in a pan with a little bit of salt for a few minutes. Then remove the brown skin around them and enjoy the delicious green seeds.

Just be careful not to eat too many Ginkgo seeds or over a long period of time. Eight seeds per day for adults and three for children are ok, larger quantities can cause poisoning.

In autumn, between October and December, you can collect ginkgo seeds for cooking. You can find the seeds under female ginkgo trees laying on the ground. When you pick them up, make sure to wear gloves and bring a plastic bag because the fruit-like outer layer of the seed has a very strong, unpleasant smell that gets stuck to your hands if you don’t protect them. You can squeeze the hard shell inside the β€˜fruit’ into the plastic bag and take them home. Wash away any fleshy remnants clinging to the seeds. The seeds can then be frozen, in their shells, for later use, or prepared right away. Ginkgo nuts should only be eaten cooked, not raw.

Ginkgo trees have separate sexes, some trees being female and others being male. In autumn the female trees produce a foul-smelling seed which stinks like rancid butter or vomit. It is designed to attract carnivorous animalsβ€”possibly dinosaurs, long ago! Since many people find the smell very unpleasant some urban planners prefer using male plants for landscaping, then causing biodiversity issues in cityscapes. But you can still find lots of Ginkgo seeds from female trees in many city parks or along the streets. Just follow your nose!

The fleshy outer layer of the seed (the β€šsarcotestaβ€˜) is light yellow-brown, soft, and fruit-like. This is the part of the seed that smells so bad. Beneath it is the hard β€šsclerotestaβ€˜ (the shell of the seed) and inside a papery β€šendotestaβ€˜, with the β€šnucellusβ€˜ surrounding the female β€šgametophyteβ€˜ at the center, which you can actually eat! It is quite delicious when cooked or fried, despite the bad smell of it’s outer layer. The nuts resemble a pistachio with a soft, dense texture that tastes like a combination of edamame, potato and pine nut or chestnuts.

They are, however, mildly toxic. Only a few seeds should be eaten at a time. The nut contains bitter cyanogenic glycosides. These break down when the nut is cooked, but it retains the compound 4-methoxypryridoxine, which depletes vitamin B6 and is especially toxic to children.

This summer we made some Montblanc for the exhibition 'Silver Skin' together with at .haus.opherdicke This time we combined it with pink whipped cream. It was served on the beautiful ceramics of tiefkeller which were presented on the felled beech trees of the sculpture garden. The visitors could try some while walking through the installation. 🐝🌰🌸🐝🌰🌸🐝
