My wonderful husband boiled us some crawfish this past weekend, and I had some leftover tails that needed to be eaten this week. So, I made a keto version of crawfish etoufee!
I sautéed some onions, celery, garlic, bell pepper, and parsley with some butter and creole seasoning.
Then, I stirred in 2 tsp. xanthan gum, and cooked for a few minutes on medium heat.
Next, I added 32 oz chicken broth and stirred until thickened.
I added my leftover, cooked crawfish tails and simmered for about 20 minutes. We ate this over cauliflower rice, and it was great!
