My wonderful husband boiled us some crawfish this past weekend, and I had some leftover tails that needed to be eaten this week. So, I made a keto version of crawfish etoufee!

I sautéed some onions, celery, garlic, bell pepper, and parsley with some butter and creole seasoning.

Then, I stirred in 2 tsp. xanthan gum, and cooked for a few minutes on medium heat.

Next, I added 32 oz chicken broth and stirred until thickened.

I added my leftover, cooked crawfish tails and simmered for about 20 minutes. We ate this over cauliflower rice, and it was great!

Good morning! How was Super Bowl night? Ours was great! We had a "fry"-day and fried chicken wings, onion rings, pickles, mozzarella cheese sticks, and low- carb tortillas cut into chips for our spinach dip. We used Carbquik mix for the breading, which allowed us to stay low carb.

I finally made it to One-derland, (under 200 lbs). I weighed in at 199.8 lbs. this morning, so I'm so pumped! I'm down 7 lbs in 5 weeks, and gaining muscle!

So I made a crustless pizza and I have me some Lily's to get me through!

I missed 4 workout days! It seems like it's just been one thing after another. But I'm getting back on track tonight! On a good note, I have not gone off my keto diet at all. I am so proud of our family for sticking to it and staying away from sugar. I had some doctor appointments, a day shift (first in 4 months), and some deep cleaning for 2 days. I'm ready to get back to my workout routine, starting tonight.

It's that time again! LOL! Time to put away all holiday junk and re-gain good health. I didn't make any New Year resolutions, but I am definitely making changes. It's really been about 2 years of failed attempts of getting back to my healthy lifestyle. I've finally had enough. I've done it before, and I'm going to do it again! Here are my...sad...baseline photos. Not happy!

Since Monday, I started the keto diet, eliminating all flour, gluten, sugar, breads, pasta, rice, beans, tortillas, and high glycemic fruits and veggies. I'm mainly eating salads with unbreaded meats, and I feel fantastic today!

Starting next Monday, 1/9/23, I'll be starting a free workout bootcamp with my sis-inlaw. I am so pumped and ready to see my body change! Thank you Cheryl, for that motivation!!

It doesn't get better than this! Emily made me an omelette with bacon, onions, spinach, and tomatoes. And she made keto cinnamon rolls that were the bomb! I love it. The kids made me a homemade card and got me a pretty picture frame. And my wonderful husband is planning on making a prime rib roast for dinner...cannot wait! They know all I want is food!😆

Good morning and Happy New Year! It's the first Monday of 2022 and we're kicking it off with some hot No Oatmeal.
We have been completely off the keto train for the year 2021. I found out I was pregnant with my 4th kiddo in January 2021! I wanted to stay keto, but my morning sickness made it impossible. Then, we just completely fell out of it, falling quickly into our bad habits.
But- We are re-committing ourselves to the keto lifestyle, and we are so happy to be getting healthy again.
I am going to post recipes and pictures every chance I get, to help us all stay motivated.
Here's to 2022 and all the new adventures ahead!

Fish tacos!

Blackened tilapia
Fried low carb tortillas
Coleslaw mix
Tomatoes
Cilantro
Avocados
Lime

Sauce:
1/2 cup sour cream
1/3 cup mayo
2 Tbsp lime juice
1 tsp garlic powder
1 tsp Sriracha sauce

Jalapeño popper chicken
Serves 4:
4 chicken breasts
8-12 jalapeños, sliced in half with seeds removed
8 oz cream cheese
shredded Colby jack cheese
8-12 slices of bacon
16 oz bag of frozen fajita vegetable blend (onions, red and green bell peppers)

1. Cut chicken breasts into small tenders and season with desired seasonings. I used 2 Gringo's Chupacabra Rub.

2. Spoon cream cheese evenly into jalapeños and sprinkle with Colby Jack cheese.

3. Place chicken tenders onto cheese filled jalapeños.

4. Wrap with 1 slice of bacon for each popper.

5. Sear both sides of poppers in a cast iron skillet. Add fajita veggies, cook for about 5 minutes. Remove excess water.

6. Bake in cast iron skillet for about 15 minutes at 400 degrees.

I made some carne guisada for dinner tonight!
I had a 9lb. beef shoulder roast that I cut up into pieces and divided this into 15 servings.
Season beef with cumin, onion powder, garlic powder, salt, and pepper.
Brown beef tips on a cast iron pot.
Add water or beef broth to pot.
Add 8 oz tomato sauce. (Adjust for amount of beef used.)
Add 1 chopped onion and 2-3 cloves of garlic.
Add 1 teaspoon Xanthan gum and stir immediately.
Cover and bake in dutch oven at 325 degrees for 1hr 30 minutes.
Serve with low carb tortillas.
