My wonderful husband boiled us some crawfish this past weekend, and I had some leftover tails that needed to be eaten this week. So, I made a keto version of crawfish etoufee!

I sautéed some onions, celery, garlic, bell pepper, and parsley with some butter and creole seasoning.

Then, I stirred in 2 tsp. xanthan gum, and cooked for a few minutes on medium heat.

Next, I added 32 oz chicken broth and stirred until thickened.

I added my leftover, cooked crawfish tails and simmered for about 20 minutes. We ate this over cauliflower rice, and it was great!

My keto option at Papa John's! I got the Chicken Alfredo Papa Bowl and it's really good. It has grilled chicken, onions, bell pepper, mushrooms, roma tomatoes, and spinach, baked over Alfredo sauce with romano and parmesan cheese.

Good morning! How was Super Bowl night? Ours was great! We had a "fry"-day and fried chicken wings, onion rings, pickles, mozzarella cheese sticks, and low- carb tortillas cut into chips for our spinach dip. We used Carbquik mix for the breading, which allowed us to stay low carb.

I finally made it to One-derland, (under 200 lbs). I weighed in at 199.8 lbs. this morning, so I'm so pumped! I'm down 7 lbs in 5 weeks, and gaining muscle!

So I made a crustless pizza and I have me some Lily's to get me through!

I missed 4 workout days! It seems like it's just been one thing after another. But I'm getting back on track tonight! On a good note, I have not gone off my keto diet at all. I am so proud of our family for sticking to it and staying away from sugar. I had some doctor appointments, a day shift (first in 4 months), and some deep cleaning for 2 days. I'm ready to get back to my workout routine, starting tonight.
