Ingredients
1 lb. 90% lean ground beef
1 cup dried bread crumbs
1/2 cup diced yellow onion

Chicken & Cheese Enchiladas with Green Chilies
This is so tasty and so darn easy to make!
Ingredients
10 soft taco shells
2 cups cooked, shredded chicken (I used leftover rotisserie chicken)
2 cups shredded Monterey Jack cheese
3 Tbsp. butter
3 Tbsp. flour
2 cups chicken broth
1 cup sour cream
1 (4 oz) can diced green chilies
optional: diced green onions and sliced black olives (my favorites)
Directions
Preheat oven to 350 degrees. Grease a 9×13 pan. Mix chicken and 1 cup cheese. Roll up in tortillas and place in pan.
In a sauce pan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly. Stir in sour cream and chilies. Do not bring to boil, you don’t want curdled sour cream.
Pour over enchiladas and top with remaining cheese, and if you like diced green onions and black olives.
Bake 22 min covered, remove foil and then high broil for 3 min to melt the cheese. Enjoy!.

Walking Taco Casserole 😋 - Don't LOSE this recipe
Ingredients :
1 1⁄2 pounds Ground Beef
1⁄3 large Onion, chopped
1 can Green Chilies, small can
1 can Enchilada Sauce
2 ounces Cream Cheese
1 bag Fritos Corn Chips
1 bag Shredded Cheese
3⁄4 cup Lettuce, shredded
1⁄2 cup Tomato, fresh, diced
16 ounces Salsa8 ounces Sour Cream
Instructions :
Brown ground beef with onion.
Add green chilies, enchilada sauce and cream cheese.
In a 9×13 pan, repeat layers as follows: Fritos chips Meat Mixture Shredded Cheese.
Bake at 350 for 15-20 minutes or until cheese is bubbly.
Top individual servings with lettuce, tomatoes, salsa, sour cream as desired..

CAJUN SHRIMP PASTA WITH SAUSAGE
Ingredients
½ pound large shrimp, peeled and deveined, tails removed
1 andouille sausage, about ½ pound, sliced into rounds
1 – 2 tablespoons cajun/creole spice mix, adjust to your spice/heat level
Olive oil
½ medium yellow onion, thinly sliced
½ red bell pepper, thinly sliced
1 teaspoon dried thyme
1 teaspoon smoked paprika
1 tablespoon cajun/creole spice mix
1 teaspoon brown sugar
1 – 2 cloves garlic, finely chopped (1 large or 2 small)
½ cup crushed tomatoes
¾ cup chicken broth
1 teaspoon Worcestershire sauce
¾ cup heavy cream, or ½ & ½ (I prefer heavy cream!!)
12 ounces fettuccine or farfalle (bowties)
Kosher salt and fresh cracked black pepper
Grated Parmesan and chopped parsley, for serving
Directions
Bring large pot of water to boil for pasta. Toss shrimp with 1 – 2 tablespoons of cajun seasoning and coat well. Heat a large skillet over medium high heat and drizzle bottom of pan with olive oil. Add shrimp and cook for 2 minutes or so until starting to curl. Flip shrimp over and cook another minute or two and then remove to a plate and set aside. Drizzle pan with a little more olive oil, add sausage and brown until nicely caramelized, about 4 – 5 minutes. Remove to plate, set aside.
Add pasta to salted boiling water and cook until al dente, a minute less than package instructions.
Lower heat to medium and add another good drizzle of olive oil to the pan, add the onion, red bell pepper, thyme, smoked paprika, 1 tablespoon cajun seasoning, brown sugar and a generous pinch of salt. Sauté until onion and pepper have softened a bit, scraping up any browned bits that you can. Add the garlic and cook until fragrant, about 30 seconds.
Add crushed tomatoes, chicken broth and Worcestershire sauce and bring to a simmer, stirring and scraping up any brown bits from bottom of pan, simmer a couple minutes. Add cream and stir to combine, bring to a simmer. Once simmering, add cooked pasta and andouille sausage and stir to combine and heat through, 2 – 3 minutes. Add more chicken broth or cream if it seems dry or you’d like more sauce (I added ¼ cup of each). Salt and pepper to taste and then lastly, add blackened shrimp and combine, or place shrimp on top of pasta. Sprinkle with some more freshly cracked black pepper, grated Parmesan and chopped parsley. Enjoy!

Nacho Cheese Beef Wrap - OMG😱 DON'T LOSE THIS😋
Ingredients
1 pound ground beef, lean.
1 cup Nacho Cheese Sauce
½ cup Sour Cream
1 can Rotel, green chilis with diced tomatoes
½ cup chopped green peppers
½ cup diced onions
1 packet Taco Seasoning Mix
Doritos, Nacho Cheese flavored, crushed
4 flour tortilla wraps
Shredded lettuce
Instructions
In a skillet, crumble and brown the ground beef
Cook thoroughly, drain excess fat
Add in the onions, peppers and saute for 4 minutes
Add in the Taco seasoning packet and stir
Add the Rotel and Nacho Cheese Sauce in a bowl
Stir well
Lay four large tortillas out on the counter
Spoon a layer of the nacho cheese mix down the center of each tortilla
Top with some meat mixture, sour cream, onions, peppers, crushed Doritos
Fold in the sides of the tortillas and roll up like you would a burrito.
Heat another skillet on medium heat
Place the wraps into the skillet and toast until crispy on both sides
Serve immediately, topped with your favorite toppings.
