Tackled the “famous” NYT chocolate chip cookie this week. 2 types of flour, “expensive” chocolate, 24+ hours of fridge rest. I have to say… it’s the most bakery worthy cookie I’ve made. They are huge, crispy AND soft, and delicious. I also experimented with one that I rolled in espresso sugar…. I think I maybe improved the recipe 😎.

Pastry week! It’s always the week that makes me nervous. So much could go wrong! Always impressed with this Juniors Heat A though - they are so good! They tackle choux and savory pies. I tackle oatmeal butterscotch cookies. And we do “where are they now” looking at - one correction to my segment on that - I did see an IG story from her just today so looks like she is doing those (gone after 24 hours).
