Delicious lunches made from leftovers of previous meals. Salad bowls and lettuce wraps are an easy economical option with food left on hand. An assortment of vegetables both raw and cooked - along with roasted tofu and sweet potato add the colorful nutrient packed substance to these meals. Homemade dressings and sauces are quick too. This one is lemon, mustard and olive oil with fresh dill. A delightful and healthy topping. 😋 I include large romaine leaves in my grocery shopping as an option for lettuce wraps or salad every week. I always know if there’s leftovers my family loves the little surprise packed rolls of lettuce. They equally love them with lunch meat and cheese, or canned chicken salad, if we have no other options. Making meals ahead with what we have is perfect for saving money and time later and makes it easy to stay on track with eating and fitness goals. One of the biggest changes that I made at the beginning of my #fitnessjourney was to prep tomorrow’s meals today. This habit alone stopped me from mindlessly eating things I shouldn’t throughout the day and resulted in weight-loss, muscle gain and a new found mindfulness about what I am doing to my body, inside and out.
