Vegan Black Bean Soup
Ingredients:
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 teaspoon cumin
1 teaspoon chili powder
4 cups vegetable broth
1 can black beans, rinsed and drained
1 cup corn kernels
1/2 cup chopped cilantro
Salt and pepper to taste
Time: 30 minutes
Calories: 100 per serving
Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until the onion is translucent, about 5 minutes. Stir in the cumin and chili powder and cook for another minute.
Add the vegetable broth, black beans, and corn to the pot and bring to a boil. Reduce the heat to low and simmer for 15 minutes. Stir in the cilantro and season with salt and pepper to taste.
Serve hot, garnished with additional cilantro if desired. This soup is a great source of protein and fiber, and makes for a satisfying and healthy meal.
