Lebanese Spaghetti with Yoghurt - macaroni bi laban
(Serves 2-4)

It’s believed this dish was inspired when using leftover garlic yoghurt sauce for Shish Barack. It’s also been said to be a healthier version of an Alfredo pasta sauce. This pasta dish is quick to make & eaten warm or cold (great for the summer). You could also change the pasta shape too if not using spaghetti.

Ingredients:
250g spaghetti/ pasta shape
1 fat garlic clove, crushed
1 tsp seasalt or to taste
400mg natural/ Greek-style yoghurt
1 tbsp ghee or EV olive oil
25g pine nuts/ flaked almonds
Small bunch parsley/ coriander, finely chopped
1/4 tsp black pepper
1/4 tsp allspice

🍝Follow instructions on how to cook pasta in boiling salted water.
🥣 In a large bowl for serving, mix crushed garlic with salt making a paste. Add yoghurt & stir well using spoon or whisk. Keep aside.
🍳In a small frying pan, add ghee/ oil then add fresh herbs & fry for 2 mins, add pine nuts & fry another 2-5 mins until pine nuts are lightly browned.
🎁When pasta is ready, using tongs add to yoghurt bowl making sure to reserve the pasta water. Mix pasta with yoghurt. If it’s too thick, add a little pasta water to a consistency you desire.
🎩To serve, decorate with parsley & pine nuts then drizzle the oil over the pasta. Serve immediately.
‼️Optional - you may wish to add chilli flakes, Frank’s chilli sauce or any fresh chopped chillies. If you wish to enhance further, some people add fried minced meat with onions that’s cooked & included with parsley & nuts them topped over the pasta & served.

Roasted chicken with chestnuts & lamb rice (Serves 6)

𝓨𝓸𝓾 𝓝𝓮𝓮𝓭:
𝙲𝚑𝚒𝚌𝚔𝚎𝚗
2.2kg whole chicken
2 onions, wedges
2 carrots, 1cm slices - unpeeled
2 large celery sticks, 3cm slices
2 cups water
1 lemon cut in half
2 bay leaves
1/2 tsp each - ground allspice & black pepper
1 tsp salt
1 tsp fajita or chicken seasoning
25g butter
2 tbsp light olive oil
𝚁𝚒𝚌𝚎
400g minced lamb
2 tbsp light olive oil
1 large onion, finely chopped
2 cups basmati rice, washed & pre-soaked
1 ltr chicken stock
50g pine nuts
1 tsp salt
1 tsp each - ground allspice & cinnamon
1/2 tsp ground nutmeg
360g vacuum packed chestnuts (we like Merchant Gourmet)
2 x 25g butter
1/2 tsp brown Demerara sugar
200g mixed nuts (raw cashew, flaked almond, red peanuts, pistachios, etc)
50g pomegranate seeds
30g parsley, finely chopped
𝙶𝚛𝚊𝚟𝚢
50g butter
30g plain flour
Stock from roast chicken (approx 500ml)
1 tbsp Worcestershire sauce

🔥Pre-heat oven at gas 9/240C/220fan
🐓In tray place chicken, under skin breast add butter, cover chicken with squeezed lemon & place inside cavity with bayleaves. Rub S&P, seasoning & olive oil over skin. Add onions,carrots & celery around chicken, roast 30 mins.
⏳After 30 mins, lower gas 6/200C/180fan, baste & add water. Roast 1 hour until chicken cooked.
🍳In frying pan, add butter on low heat, add nuts, fry 5 mins until golden - transfer to plate. Using same pan, add butter & chestnuts, add sugar & fry 5 mins. Add plate to cool.
🍚In medium pan on high heat, add oil & lamb, fry until browned, add onions fry 3 mins, add p-nuts. Add salt, allspice,cinnamon,nutmeg & fry 2 mins. Drain rice & add pan, stir 1 min, add stock, stir again & cover - simmer 25 mins until water gone. Get cloth for lid & cover rice & absorb steam.
🥫Gravy - in small pan on low heat, melt butter with flour to make rue, add stock from chicken & add more in hot water if needed. Keep stirring with spoon/whisk until smooth, add Worc-sauce.Taste & simmer 10 mins.
🍛 Serve - place rice on large platter as a bed, add chicken on top cut into pieces, place chestnuts in centre, sprinkle other, sprinkle pomegranate & parsley!
