1 - It’s best to buy an extra virgin olive oil (evoo) from a single origin. Better if it’s PDO (protected designation of origin) or PGI (protected geographical indication). This is so the consumer knows where the olive comes from.
2 - Buy an extra virgin olive oil in a dark glass bottle.
3 - Once you buy the olive oil, use it because it oxidises with time.
