If you were wondering if the tip I shared before works… Look at this beautiful crumb, super fluffy and flavorful blueberry muffins! I can guarantee this cheat improves many recipes and enhances flavor without artificial flavors and such. The crumb is not dry or dense and a clean paper liner are always good signs. Even though I recommend this for experienced bakers so you know how thick the consistency should be for different preparations this works for most recipes, box cake mix and even pancakes!

🤓 Foodies Tip‼️

When baking cakes, cupcakes, breads, etc., for some recipes is even better to use yogurt instead of milk. I’m making blueberry muffins for breakfast tomorrow so a little extra protein won’t hurt, plus it naturally enhances the blueberry flavor so I swapped the milk for blueberry greek yogurt! Win-win situation! I just thin it out a bit with about 1-2 tbsp of water and they come out perfect, full of flavor and super fulffy; this works with boxed mixes too if you’re on the lazy side. Try this next time! 😜

We’re still festive here, Christmas is not over until February! 🔥 Puerto Rico has the longest holiday season in the world. The holidays start mostly with the Thanksgiving gatherings and ends with día de la Candelaria where everyone gathers with their dry trees and burn them.

That means I’m still celebrating and seeing Christmas colors everywhere, even in my cutting board! 😂

I would say this is Puerto Rican pimento cheese. 😂

Before you come at me with what kind of chef uses canned products, the answer is simple: one born and raised in a Caribbean island that gets hit by hurricanes and storms every year so canned foods become a staple in every household or else you’ll starve. Islanders all over the world know the struggle of island life and that includes food supply. Let’s respect everyone’s journey as not all are the same. Just wanted to clarify once again since the comments about this won’t stop. Yes, we know is not the healthiest or highest quality and that being a chef is prepping from scratch but also means using products most people around have in their hands and making something tasty out of it.

Because it’s made with products that already have preservatives it holds at room temp for some time without it posing a risk while maintaining taste and consistency, it boils down to availability and convenience. Some are grossed by the products but have tried it without knowing what’s in it and loved it. That cleared, this is what you will find at any party or gathering in Puerto Rico, it’s not a party without some sandwichitos de mezcla and they’ll be gone in a second! Today is New Year’s Eve so I’m doing what we all do this day, making my sandwichitos. 😜

If you ask me, this makes a better snack than chips since we’ve got cheese, protein and veggies, but that’s MY take! 😬😂

💥Quickies! 🍓Strawberry smoothie: 12 strawberries frozen -fresh can work but it’ll be thinner. 3/4 cup of beber strawberry almond milk or more if you don’t like it thick. This week I found a good deal on fresh yellow corn ears 🌽 it is also a busy week so I may not use it all at once or fast enough. No problem. Boil them for 5-8 minutes in lightly salted water, slice off the corn, let cool completely and store it in a bag or airtight container. Freeze for later. No waste or overspending on groceries!
