The best spiced cranberry chutney recipe!
Make this for Thanksgiving - you will have no regrets!
Ingredients:
12 ounce bag of fresh cranberries
1 cup Water
2 cups sugar
1 Tablespoon minced Ginger
1/2 teaspoon of each:
* ��ground Cloves
* ��ground cardamom
* ��cinnamon powder
* ��cayenne chili powder
Directions:
Chop the cranberries roughly (I used a blender). Cook cranberries in the water until the berries are soft. Add the sugar and spices and cook for about 15 minutes, or until it has a jam-like consistency. It will gel and thicken as it cools. It keeps in the fridge for weeks and is excellent on leftover thanksgiving turkey sandwiches!

This is an easy recipe for An Indian sweet - perfect to share with friends and family anytime but especially during the festive season! Simple recipe below - in the video I added some silver leaf - it ads a nice touch but is optional and a little tricky to work with
Ingredients:
1 cup of cashews, blended to a fine powder
1/4 cup water
1/2 cup sugar
1 tsp ghee
Directions:
Add water and sugar to pan, bring to a boil while stirring for about a minute
Add cashew powder, stir and cook until mixture holds together - undercook and it will be too thin and it won’t set.
Slightly cool and spread on a greased parchment paper.
Roll or spread to desired thickness.
Allow to cool, slice in a diamond pattern and enjoy!
*you can also add cardamom or rose water for flavor variations.

Indian Hard Boiled Egg Curry Recipe with Coconut Milk
12 eggs, hard boiled, peeled, & cut in half
3 medium sized potatoes, peeled & diced into 1/2” chunks
3 Tbsp coconut oil
1 onion, cut into thin slices
2 tsp salt (or to taste)
1 Tbsp, ginger-garlic paste
1-2 Tbsp Dried curry leaves (or fresh if you have on hand)
2 tsp coriander powder
1/2 tsp red chili powder (or to taste)
1 tsp fennel seeds
1/2 tsp turmeric powder
2 tsp ground garam masala
3 cups of coconut milk (about 25 ounces)
1-2 cups of water (add to desired consistency)
1. Heat the oil over medium heat.
2. Add onion, uncooked potatoes and salt. Sauté until unions are translucent.
3. Add curry leaves, fennel seeds and ginger garlic paste. Sauté for just a few seconds.
4. Add all of the spice powder, reduce heat to low.
5. Add water and bring to a boil, until potatoes are cooked.
6. Add coconut milk, but reduce heat, just to a simmer.
7. Add in boiled eggs gently and stir once to coat with sauce. Remove from heat.
Serve with Indian bread of choice!
