Here’s an oddly satisfying video of me working the dough for my homemade sourdough loaf.
This is my version of the “stretch and fold” technique which is used to build the gluten and strengthen the dough.
Before this, the ingredients rested “autolysed” for 30 minutes together.
After this, the dough proofed for 12 hours before the final step of baking.
What’s so special about this, is that with the Roul’pat, I didn’t have to add flour to my work surface which would end up in the dough, changing the ratio of ingredients and resulting in a denser than desirable loaf. The Roul’pat is a phenomenal prep and work surface made from silicone and woven glass. It’s wipes clean after any use and makes tasks like this less mess stress and more enjoyable.
