INGREDIENTS

For the first MARINADE;

3 tbsp baking soda
750g chicken breast (sliced into slivers)

Baking soda makes the chicken meat tender and moist
even when cooked

Make sure to rinse off the baking soda after marinating
for 20mins and drain all the water (almost dry)before
adding the second marinade

For the second MARINADE;

1 tbsp cooking wine
1 tbsp dark soy sauce
1 tbsp oyster sauce
1 tsp cornstarch

Leave the marinade for at least 20mins
before cooking to absorb all the flavors

For STIR-FRYING;

1 tbsp garlic, minced
2 tbsp spring onions/green onions
1 tbsp dark soy sauce
1 tbsp oyster sauce
1 tsp Chinese Five Spice
1 tsp green chili
1 tsp red chili
