Stuffed Bell Pepper Casserole (my way) ~ Ground meat (your choice; your combination)Bell peppers LOTS OF THEM!!!Tomatoes (canned and fresh)OnionCarrotsBeansRice (I used Royal Blend from Rice Select)Cheddar cheese Mushrooms Olive OilZucchini Instructions: (1) Brown meat and onion (Meat was previously seasoned overnight)(2) Drain excess oil, if necessary (using lime, does not produce much oil to drain)(3) Add all the veggies, beans, rice, chicken stock and some cheese. Leave some cheese to top.(4) Place in oven for about 20 minutes or long enough to ensure that the rice is cooked. Serve and enjoy #lowcarb #foodlover #healthychoices #goodmoodfood #healthylifestyle

Seafood ~ shrimp, lobster, salmon, scallops: season to tasteSauté in olive oilRice ~ basmati: salt, sweet peppers, vegetable stockFried rice ~ use same pot used for frying. All the goodness from the seas good is already in there…use it!Add fresh garlic and diced onions: sauté then add mixed vegetables and allow to cook for about 2 minutes. Add rice. Mix. Add 1 tsp if soy sauce. Mix well the add shrimp, lobster and scallops. Mix and plate then add the salmon on top. Voila!Note: do not add the salmon in the pot with everything else because it will fall apart and crumble.
