Ohhh the struggle. That struggle was real this morning. You know when you’re asleep and your natural body clock knows when that alarm is about to go off but you try so hard to just squeeze in some more sleep knowing very well the alarm is about to go off at any second. That was me today. Alarm went off at 4:45am, I said I’ll catch the next one. Here comes 5am and without fail the alarm goes off. I turned it off and thought to myself…get up! Then I thought oh it’s the weekend, I’ll leave at 5:30am so now I have 30 minutes. I fell asleep then jumped up. It was 5:27am. I thought okay I have 3 minutes all while saying to myself, get up! It’s what we do in the morning. We walk/run. I dozed off AGAIN and finally wake up at 6:20am. All I could think of at this point was how far I could have been had I just left at 5am. That thought alone made me move even slower because I just wanted to sleep. I didn’t leave until 6:38am and still thinking to myself “I could have been on my way back by now” but step by step I walked away mapping my route out in my mind and thinking “oh my God! that’s far and I have to go and come back!”

Life will hijack your mind if you let it. A lot of us are going through depression because we’re not doing anything with ourselves, but we need to challenge ourselves to find inspiration and your passion. Find something that you love, make that your challenge and go for it. Find yourself in the grip of life because you cannot find yourself by doing nothing. Change your mindset, and you can attack anything ~ David Goggins

Lasagna ~ grass fed beef, organic pasta, olive oil, Rao’s homemade pasta sauce, spinach, mozzarella(smoked), Parmesan, provolone, asiago cheese.

Season beef to taste and brown, add veggies (optional), add sauce. Cook pasta Al dente (optional) sometimes I use pasta as is. It will cook in the oven regardless. Once meat is ready and pasta is ready, layer until out of meat and pasta. I usually do 2 layers and always finish off with pasta topped with cheese. In oven for about 20-25 minutes. Enjoy!

Rice Krispy Treats…my way 😉

To a pot, on low heat add 1 stick of butter. Allow to melt then add 1/2 tsp of vanilla extract for tons of flavor. A dash of salt is optional. Add 1 small bag of marshmallows, allow to melt. Remove from heat. Add 10 cups of rice krispy cereal and mix thoroughly then add another 1/2 bag or a little more of fruity fun marshmallows (this adds tons of flavor ~ strawberry, orange, lemon, lime) and mix. Transfer to baking dish and allow to cool for about 1 hour if you can resist. If not, enjoy warm. ENJOY!!!

Note: (1) adding vanilla extract and using fruity marshmallows add flavor (2) the size of marshmallows will not matter because they’re going to melt (3) the more marshmallows, the stickier it will be and the more of a pull you will have

Homemade Peach & Strawberry Ice-Cream

Ingredients: peaches, strawberries, sweetened condensed milk, heavy whipping cream

Instructions: whip heavy cream until thick and fluffy. Add condensed milk (sweeten to your liking) and fold. Blend/purée fruit, add and fold in. Churn for 20 minutes if you own an ice-cream maker then freeze for 3-4 hours. If no ice-cream maker, just freeze for 3-4 hours. Serve and enjoy

My version of spatchcock chicken with Veggies

Pre heat oven to 400 degrees

Ingredients: 1 whole chicken ~ season lightly with salt & black pepper

Butter ~ season with seasonings of your choice including whole garlic cloves & the juice of 1 fresh lemon

Prepare chicken for seasoned butter ~ cut chicken down the center with the breast facing you. Break the bone at the neck so the chicken can lay flat, butterfly style. Raise the chicken skin as much as you can. Do not remove the skin. Generously rub chicken with seasoned butter all over including under the skin and on the flip side

Veggies of your choice seasoned to your liking

Place chicken & veggies in pre heated oven and allow to roast. The length of time will depend on your oven. Not all ovens are equal.

Torched 700+ calories this morning with a little over 14,000 steps I had a good walk it’s been a good day. I sort of, kind of planned in my head what I was going to have for breakfast while I was walking but when I got home I decided I didn’t want to prepare anything. I just wanted to put something together so I had a yogurt parfait with Greek yogurt some granola, strawberries, bananas and just a hint of honey. Had a really, really, really good day. For lunch, I had some salmon with some roasted sweet potatoes and cauliflower (not pictured) then hubby decided to take me on a date to Menards. Menards is a hardware store. We ended up going to Costco, Menards, Walmart, Panera, etc Got some cookies from Crumbl Cookie for the girls, came home and took a short scroll around the neighborhood
