TOM BROWN
RECIPE INFORMATION

DESCRIPTIONS
* Tom Brown is a nutritious locally made meal for babies and adults in Nigeria, rich in fiber, it consists of protein, iron, magnesium, potassium, carbohydrate, vitamin B6 and Vitamin B12 among others.
Main ingredients for small size.
* 2 cup Corn/maize
* 1 cup Guinea corn
* 1 cup Soya beans
* 1 cup Groundnut
* 1 cut millet
Main ingredients for big size.
* 1/2 paint rubber Millet
* 1/2 paint rubber Guinea corn
* 1/2 paint rubber Yellow corn
* 1/4 paint rubber Soybeans
* 3 cup Groundnut
* 1 cup debino (dates)
* 1 cup crawfish
* 1 tablespoon powdered ginger
* 2 cups dried sweet potato powder
OPTIONAL INGREDIENTS
*Dried unripe plantain
*Cashew nuts
*Dates
*Crayfish
*Prawns/shrimps
*Almond nuts
*Powdered ginger
*Potato powder
*Rice powder
*Tiger nuts
The optional Ingredients are not compulsory, but can be used to make the tom brown richer.
TOOLS NEEDED
* Tray
* Sieve
* Bowls
* Spoon
* Frying pan
* Grinding machine
* Airtight container or mason jar
What makes up Tom brown mix is a mixture of cereals (yellow corn, guinea corn and millet) and legumes (soybeans and groundnuts) As well as possibly other optional ingredients. The cereals and legumes add a variety of nutrients beneficial to baby's good health to the meal.
PROCEDURE
1. Buy dried Yello corn from the market, Wash and properly dry your Ingredients in the sun.then roast it on fire on low heat until its turn brown and just before it starts popping like popcorn, remove it, leave to cool ( You can fry the two different types of corn together if using 2 types).
2. Fry your groundnut and Guinea corn separately. Fry your Groundnut normal on low heat and peel the skins off.
3. Fry the millet and the soya bean. You have to fry everything separately
4. After frying the soya beans, pound softly with mortal and pestle to remove the shaft, blow the shaft away with your mouth. You can equally wash soyabean in boiling water and raise in cool water. Dry in sun or oven before roasting by dry frying it on dry frying pan.
5. Leave everything to cool
6. Combine all the ingredients together, if you have a high powered blender you can blend the mixture with your blender but if not, take it to the local mill to blend. The mixture should be blended dry (Do not add water!)
7. When you are done grinding the tom brown, sieve it by using a fine strainer.
Note: This step is done to avoid lumps and large particles
8. Your Tom Brown mixture is ready! Store the tom brown in an airtight dry container or mason jar for preservation for later/daily use.
Preparation:
You can then make the tom brown just like the way of making pap/akamu or custard, with hot water, before adding your milk and sugar.
*NOTE
1. The soya beans is the stress of this recipe. Some persons just grind it like that with other ingredients, but it is not good. Wash it, boil it for like 30 minutes, wash the skins off, dry it in the sun, pan toast it and then grind it with other ingredients. Or Roast/frying the soya beans, pound softly with mortal and pestle to remove the shaft, blow the shaft away with your mouth and tray pan. Then pan toast or Roast again before grinding with other ingredients.
2. Fresh corn should not be used to make tom brown.
