RECIPE INFORMATION
* Recipe cuisine: Nigerian recipe
* Recipe course: Cereal recipe
* Served as: Breakfast, side dish, baby food etc
* Preparing method: Drying, toasting and grinding
* Main ingredients: Corn, guinea corn, millet, soya beans and groundnut

DESCRIPTIONS
* Tom Brown is a nutritious locally made meal for babies and adults in Nigeria, rich in fiber, it consists of protein, iron, magnesium, potassium, carbohydrate, vitamin B6 and Vitamin B12 among others.

Main ingredients for small size.
* 2 cup Corn/maize
* 1 cup Guinea corn
* 1 cup Soya beans
* 1 cup Groundnut
* 1 cut millet

Main ingredients for big size.
* 1/2 paint rubber Millet
* 1/2 paint rubber Guinea corn
* 1/2 paint rubber Yellow corn
* 1/4 paint rubber Soybeans
* 3 cup Groundnut
* 1 cup debino (dates)
* 1 cup crawfish
* 1 tablespoon powdered ginger
* 2 cups dried sweet potato powder

OPTIONAL INGREDIENTS
*Dried unripe plantain
*Cashew nuts
*Dates
*Crayfish
*Prawns/shrimps
*Almond nuts
*Powdered ginger
*Potato powder
*Rice powder
*Tiger nuts

The optional Ingredients are not compulsory, but can be used to make the tom brown richer.

TOOLS NEEDED
* Tray
* Sieve
* Bowls
* Spoon
* Frying pan
* Grinding machine
* Airtight container or mason jar

What makes up Tom brown mix is a mixture of cereals (yellow corn, guinea corn and millet) and legumes (soybeans and groundnuts) As well as possibly other optional ingredients. The cereals and legumes add a variety of nutrients beneficial to baby's good health to the meal.

PROCEDURE
1. Buy dried Yello corn from the market, Wash and properly dry your Ingredients in the sun.then roast it on fire on low heat until its turn brown and just before it starts popping like popcorn, remove it, leave to cool ( You can fry the two different types of corn together if using 2 types).

2. Fry your groundnut and Guinea corn separately. Fry your Groundnut normal on low heat and peel the skins off.

3. Fry the millet and the soya bean. You have to fry everything separately

4. After frying the soya beans, pound softly with mortal and pestle to remove the shaft, blow the shaft away with your mouth. You can equally wash soyabean in boiling water and raise in cool water. Dry in sun or oven before roasting by dry frying it on dry frying pan.

5. Leave everything to cool

6. Combine all the ingredients together, if you have a high powered blender you can blend the mixture with your blender but if not, take it to the local mill to blend. The mixture should be blended dry (Do not add water!)

7. When you are done grinding the tom brown, sieve it by using a fine strainer.
Note: This step is done to avoid lumps and large particles

8. Your Tom Brown mixture is ready! Store the tom brown in an airtight dry container or mason jar for preservation for later/daily use.

Preparation:
You can then make the tom brown just like the way of making pap/akamu or custard, with hot water, before adding your milk and sugar.

*NOTE
1. The soya beans is the stress of this recipe. Some persons just grind it like that with other ingredients, but it is not good. Wash it, boil it for like 30 minutes, wash the skins off, dry it in the sun, pan toast it and then grind it with other ingredients. Or Roast/frying the soya beans, pound softly with mortal and pestle to remove the shaft, blow the shaft away with your mouth and tray pan. Then pan toast or Roast again before grinding with other ingredients.

2. Fresh corn should not be used to make tom brown.

HAPPY ASH WEDNESDAY/VALENTINE'S DAY

Sometimes it’s easier to invite God into the bad moments than the good ones. I’ve noticed I tend to my friendship with God more intently—this friendship I may have neglected for a time—when stuff has completely fallen apart.

It made me wonder, however, how my friend feels about the fact that I need literally to be knocked off my feet to spend a little quality time catching up. It made me wonder how my friend feels knowing that I often make time for our relationship when I’m at my lowest points and yet forget to do so when I’m in the midst of my most joyful ones.

This year, Ash Wednesday and Valentine’s Day coincide: a day about joy, love, and celebration alongside a day about sacrifice, remembering our mortality, and recalling our utter dependence on God. At first glance, this seems paradoxical. However, I think the combination of these two days just might be the perfect way for me to start practicing inviting God into all of my experiences. It may just be the perfect way for me to enter Lent, remembering God is the one love that was here at the beginning of my life and will be here long after its inevitable end.

Let’s remember to invite God in for the joys as well as the sorrows, the excitements as well as the frustrations, and the healthy moments as well as the sick ones. Will you join me this Valentine’s Day and enter Lent trying to do just that as we honor the one who gave us the ultimate gift of love?

It might just be the change our friendship with God needs most.

Let's go north today!

Masa/ waina
Recipe

4 cups of white long-grained rice.
1 - 1 1/2 cps cooked rice
1/3 cup yoghurt
1/2 tbsp yeast
1 tbsp sugar

1) Wash and soak the rice for hours or overnight. ( I usually soak it in the morning and grind it at night. Sometimes for a day or 2 in the fridge).
2) Grind it together with the cooked rice a little at a time using a little water. ( you don't want it too watery or thick)
3) Mix in the yeast, yogurt, sugar( to help the yeast rise) and some diced onions.
4) Cover and let it rise overnight. ( some people say that they only let it rise for a few hours. But for me, I let it rise overnight)
5) When it is ready, mix in the salt and a little sugar. Mix very well and start frying.
6) You can fry it with kaskon masa or with a small frying pan.
7) Heat some oil in the pan or Kasko and pour the batter. Add a little oil on the edge of the pan or kasko to prevent it from sticking.
8) You will see some bubbles starting to appear or the side is cooked, use a fork to flip it. Add some oil again to the edges to avoid sticking.
9) When it is done, put it in an airtight container and cover it. ( the steam will make it soft)

*** You can serve it with egusi soup, stew, sugar, honey, pepper, or kuli kuli *** YOUR CHOICE!

HOME MADE CONDENSED MILK RECIPE

INGREDIENTS
3 3/4 cups powdered milk
1 1/2 cup granulated sugar
1 1/2 Tbs salt
2 1/3 cups water

PROCEDURES
Pour water in saucepan. Add the powderd milk and sugar into the saucepan or pot
Heat it on a low heat until the sugar has dissolved
Once all of the sugar has dissolved bring the mix to a simmer over low/medium heat.
Do not stir once the mix starts to simmer otherwise it can crack and crystalize
Gently simmer for roughly 35-40 minutes, or until the milk has darkened to an almost grey color and has reduced by half and thickened

After about 15 minutes, you’ll notice that the milk will start to turn dark and thicken – that’s ok and is exactly what’s supposed to happen)
You may notice some foam forming on top. Gently scoop it off with a spoon.

When ready, remove from the heat and pour into a jar to cool (if there are sugary bits hanging around the rim of your pot don’t stir them into your condensed milk, this can also crackl your mix)

Let the condensed milk cool completely before putting on the airtight lid.
Store in a jar in the fridge and it will last for months.

TIPS ON SPICES

It can be difficult to decide what spice to pair with what food, so I have decided to create a list of what spices should go best with different types of meat.

Food Type Seasoning

1. Beef - Basil, Bay Leaf, Black Pepper, Cayenne, Cumin, Curry Powder, Dry Mustard Powder, Garlic, Green Pepper, Onion, Oregano, Rosemary, Sage, Thyme.

2. Fish - Bay Leaf, Cayenne, Curry Powder, Celery Seed, Chives, Dill, Fennel, Lemon Zest, Marjoram, Mint, Dry Mustard Powder, Onion, Paprika, Parsley, Red Pepper, Saffron, Sage, Sesame Seed, Tarragon, Thyme, Turmeric.

3. Lamb - Basil, Cinnamon, Cumin, Curry Powder, Garlic, Marjoram, Mint, Onion, Oregano, Rosemary, Sage, Savory, Sesame Seed, Thyme.

4. Poultry - Basil, Bay Leaf, Cilantro, Cinnamon, Curry Powder, Garlic, Mace, Marjoram, Mint, Onion, Paprika, Parsley, Rosemary, Sage, Saffron, Savory, Tarragon, Thyme.

5. Pork - Allspice, Caraway, Celery Seed, Cloves, Coriander, Fennel, Ginger, Juniper Berries, Dry Mustard Powder, Paprika, Sage, Savory.

6. Veal - Bay Leaf, Black Pepper, Curry Powder, Dill, Ginger, Lemon, Marjoram, Mint, Oregano, Paprika, Parsley, Saffron, Sage, Tarragon.

I want you to buy this, it's sesame oil,i will list what you can use it for.

1.When your chicken is almost done, sprinkle a little of it inside and allow to cook until done,your chicken will go from 1-100.

2. That party jollof you want to cook, please add this,when your rice is completely cooked and you add your butter and onions , sprinkle little of this too and proceed to allow your rice burn for that smokey taste.

3. For those who wants to make small chops at home,use this to saute your spring roll veggies and come back to thank me later.

4. If you want to make fried rice,use a reasonable but moderate portion mixed with your vegetable oil to fry your vegetables.

5. It will also come very handy for your curry sauce.

This Christmas meal has to bang than previous years,you know😋😋.

COMPLIMENT OF THE SEASON TO ALL MY FACEBOOK FAMILY.🎄⛄♥️

IT'S CHRISTMAS TIME AGAIN, LET'S MAKE IT COLOURFUL WITH DIFFERENT CHINCHIN FLAVOURS.👇😍

HOW TO MAKE CHIN CHIN (FOUR DIFFERENT FLAVOURS)

1. VANILLA CHINCHIN

4 cups or 500g all purpose flour
1/2 cup or 100g sugar
1/2 teaspoon baking powder
1 large egg
180ml or 3/4 cup fresh milk (you can also evaporated milk or powdered milk)
8 tablespoons or 1/2 cup melted butter or margarine
1 teaspoon vanilla extract
1/2 teaspoon nutmeg or cinnamon
Pinch of salt
Vegetable oil for frying

Sift the flour, baking powder, nutmeg or cinnamon, sugar and salt into a bowl.

Add the butter or margarine to the dry ingredients and mix until properly combined

Add the vanilla extract to the the milk and mix well, then add the mixture to flour mixture

Also add the egg to the flour mixture and mix everything together until you form a dough

Knead the dough for about 3 minutes till smooth and not sticky

With a rolling pin, roll into a thin sheet on a floured surface and cut to your desired shape and size

Fry in vegetable oil until golden brown.

Drain excess oil with a kitchen towel

Let cool and enjoy

2. CHOCO CHINCHIN

Same as above but add 100g of Milo or ovaltine to the dry ingredients before, adding the wet ingredients.
NOTE
-If the dough is too strong, add a bit of
water.
-You may or may not omit the vanilla
essence and the nutmeg/cinnamon.
-You can also use cocoa powder but
you have to increase the amount of
sugar used in the vanilla recipe.

3. COCONUT CHINCHIN

Same as vanilla chinchin, but with the coconut chinchin, you would need a medium sized coconut.
-Break the coconut and pry out the
flesh.
-Blend the coconut flesh with about
150ml of water.
-Sieve out the milk and use in place of
the 180ml of milk used in the vanilla
chinchin recipe.


4. BEETROOT CHINCHIN

Same as the vanilla chinchin, but for
this, you would need a medium sized
beetroot.
-Cook the beetroot, blend with as little
water as possible and sieve out the
juice or alternatively use a juicer and
then add the juice gradually to the dry
ingredients.
-With the beetroot chinchin, it is
advisable to use powdered milk,
instead of fresh/evaporated milk, so
that the dough does not become too
watery.

Avoid processed food as possible as you can!

You think, I'm doing this for myself.

Imagine that the original is bad for you, come to think of fake.🥲

SIMPLE WAY TO MAKE BAMA MAYONNAISE AT HOME.
This taste way better than the store bought mayonnaise.

INGREDIENTS NEEDED:

* 3 eggs
* 1Lemon
* Table spoon of sugar
* Pinch of salt
* Vegetable oil

PROCEDURE:

Break the raw eggs in a bowl and remove the yoke. Put the white part in a blender. Cut your lemon into halves, then press out the juice and remove the seeds. Pour the juice into the blender, add a pinch of salt and sugar, then blend together. Little by little add your Vegetable oil while blending till it becomes thick.
Your Homemade Bama Mayonnaise is ready, can be used for making salads,, shawarma, eating bread and lots more. 😋♥️

SIMPLE SPONGE CAKE RECIPE.

♥️INGREDIENTS:

- 4 eggs
- 1 cup (200g) caster sugar(better than granulated sugar)
- 120g self raising flour
- 1 tablespoon vanilla extract
- 200 g butter (extra for coating the cake tins)

♥️INSTRUCTIONS:

1. Preheat your oven to 350°F (175°C). Grease and line the bottom of a round cake pan with butter.
2. In a large mixing bowl, crack the eggs and add the sugar.
3. Using an electric mixer, beat the eggs and sugar together on medium-high speed for about 8-10 minutes until the mixture is thick, pale, and has tripled in volume.
4. Sift the flour into the egg mixture in small batches. Gently fold the flour into the batter using a spatula, making sure not to overmix. Be careful to fold in the flour thoroughly but gently to maintain the airiness of the batter.
5. Once the flour is fully incorporated, pour the batter into the prepared cake pan.
6. Bake in the preheated oven for approximately 25-30 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
7. Remove the cake from the oven and let it cool in the pan for 5 minutes. Then transfer it to a wire rack to cool completely.
8. Once cooled, you can serve the sponge cake as is or frost it with whipped cream, fresh fruit, or your favorite frosting.

Enjoy your homemade simple-ingredient sponge cake! It's a simple and versatile dessert that can be enjoyed on its own or with various toppings. Best eaten in the afternoon.

Congratulations to Bobrisky

A colleague of mine ran to me with her phone yesterday to show me bobrisky's introduction photos, i smiled and said congratulations. She was like nawa o, this life is not fair 😒, how i asked?
She said, i can't believe I'm ending the year 2023 single. No man, no relationship and bobrisky as confused and risky as he or her is has officially gotten a man. I smiled and said to her we are created differently, so is our timing in life different. Don't worry, yours might be tomorrow. She laughed and was like which tomorrow? I told her tomorrow can be anytime, you just have to have a little FAITH!

More congratulations are on the way. Many will get married, buy cars, houses, appointment, visa and lots more.

Most people believes that marriage cures it all.

Red scotch bonnet populary known as red pepper is hotter, but green is actually sweeter and more aromatic.

Sometimes when I want a change of taste, I specifically request to buy the green ones. I just love it's scent ehn.

What is sad about most families is that they grew up like this, sleeping together, eating together, visiting each other but today most of these people:

1. Don't talk to each other.

2. Don't visit each other.

3. Have become enemies even though they are a family.

4. Accuse each other of witchcraft and jealous.

5. The new generation born out of these families don't know each other because their parents, who are siblings, are no longer on talking terms, and the tragedy is these kids end up dating each other because they don't know their family tree and roots.

6. Only meet during funerals.

The most sad part is the grandmothers or grandparents who were the glue holding families together are long gone.

This Christmas, make means to mend fences with your relatives. Be the bigger and mature person, you lose nothing by extending a hand to your brother, sister, cousin or a long lost relative.
