2 tsp ground cinnamon (5g)
1 tsp ground ginger (2g)
1/2 tsp ground nutmeg (1g)
1/2 tsp ground cloves (1g)
1 1/2 tsp baking powder (6g)
1/4 tsp salt (optional, 1g)
1/4 cup ground flaxseeds (30g)
1/2 cup walnuts or pecans (optional, chopped, 60g)
Instructions:
1- Preheat oven to 350°F (175°C) and prepare a muffin tin.
2- Mix all dry ingredients in a large bowl.
3- Whisk wet ingredients in another bowl until smooth.

1/2 banana 🍌
1/2 cup unsweetened plant-based milk (I love almond, soy or oat milk!) 🥛
1 tbsp chia seeds (for omega-3s & fiber) ✨
1/2 tsp vanilla extract 🍦
1/2 tsp ground cinnamon 🌿
1/2 cup ice cubes (optional) 🧊
Steps:
1- Core and chop the pear, and peel the banana. 🍐🍌
2- Add all ingredients to a blender: pear, tofu, banana, plant-based milk, chia seeds, vanilla, cinnamon, and ice (if using). 🌀
3- Blend on high speed until smooth and creamy. 🥤✨
4- Taste, adjust sweetness if needed, and pour into a glass. Enjoy immediately! 🤩

1 Tbsp baking powder
1/4 tsp salt (optional)
1 Tbsp ground flaxseed (make a flax egg)
1 cup plant-based buttermilk (1 cup of unsweetened plant-based milk with 1 tbsp apple cider vinegar or lemon juice)
1/2 cup applesauce (unsweetened)
1/4 cup maple syrup 🍯
Steps:
1- Preheat oven to 350°F (175°C). Line an 8×8" baking dish.
2- Flax Egg: Mix 1 Tbsp flaxseed + 3 Tbsp water, set aside.
3- Mix Dry: Combine cornmeal, flour, starch, baking powder, salt.
4- Mix Wet: Combine buttermilk, applesauce, maple syrup, flax egg.
5- Combine wet + dry ingredients. Don’t overmix.
6- Bake: Pour batter in dish. Bake 25-30 min. Cool 10 min, slice, and enjoy!
