LUMPIA TOGUE w/ MANONG SUKA RECIPE
LUMPIANG TOGUE WITH HOMEMADE MANONG SUKA
Lumpiang Togue is another variation of spring roll. One that is healthier since this is an all-veggie recipe (mostly beansprout). Who says going vegan is expensive? This is absolutely one of my favorite meryendas growing up. Also, my go-to snack during college, remember the “Jolli jeeps” in Makati? I also tried to replicate manong’ suka. Enjoy!
Ingredients:
Lumpiang Togue or Lumpiang Gulay
1 whole garlic (minced)
1 onion (chopped)
300g togue
1 medium carrot
10 pcs Baguio beans
1/2 or 250g cabbage
3 pcs tofu, cubed
salt and pepper to taste
2 Tbsp. fish sauce (patis)
1 Tbsp. sugar
Oil
Manong Suka
1 cup white vinegar
1/3 cup water
1 onion
3 green long pepper
2 red chili pepper
1/2 tsp. salt
1/2 tsp. black ground pepper
3 tbsp. sugar
Tip:
1. Use a bigger pan so you won’t overcrowd the veggies (just like what I did lol)
2. Pwedeng half cook lang yung vegestable since idedeep fry pa naman natin sya.
3. Let the veggies cool down before you wrap them. You can also put it in the fridge and then wrap it the next day.
4. Use water or cornstarch with water pang sara sa lumpia.
5. When deep-frying, make sure to heat the oil first before putting our lumpia. It will only take seconds before it starts to get golden brown.

Kimchi Cheese Rice Balls - just an afternoon snack I made today :)
Ingredients:
1 cup kimchi, finely chopped
1 tsp sesame oil
1 tsp gochujang
2 tsp honey
1 tsp soy sauce
2 cups cooked short-grain rice
½ cup shredded mozzarella

EASY VEGAN JAPCHAE
VEGAN JAPCHAE (SWEET POTATO STARCH NOODLES W/ VEGETABLE)
Serves 4 people
INGREDIENTS:
200g glass noodles
1 cup blanched or fresh spinach
1 cup carrot, julienned
1 cup onion, julienned
4 small bell peppers, julienned (preferably in different colors!)
15g shiitake mushrooms
1 tbsp sesame seeds
2 tbsp neutral oil
Sauce
¼ cup light soy sauce
2 1/2 tbsp sugar
1 tbsp balsamic vinegar (opt)
2 tbsp sesame oil

EASY Korean Pancake (Green Onion/Scallion)
KOREAN PANCAKE - Madali lang pala gawin. Lahat ng ingredients mabibili mo sa local supermarket or palengke. For the past few months, eto lagi kong go to breakfast or lunch dahil sobrang dali lang nya gawin at healthy pa.
Pajeon Pancake or Green onion/scallion pancake
Ingredients:
Dry Ingredients
1 cup all-purpose flour
1/2 tbsp baking powder
3 tbsp cornstarch or potato starch
1 tsp salt
1 tsp ground pepper
1-2 tbsp sugar
1/4 tsp turmeric powder optional for color
Wet Ingredients
1 cup room temperature water
Vegetables
1 small white onion sliced
1 small carrot peeled and thinly julienned
1 bunch of scallions or green onions ends removed and sliced
1 cup of cabbage
1 red bell pepper, thinly julienned
Neutral oil for cooking
Dipping Sauce
1 tbsp soy sauce
1 tbsp water
1 tbsp rice vinegar
1 tsp sugar
1 tsp sesame oil
1/2 tsp sesame seeds
INSTRUCTIONS
1. Prep all the vegetables.
2. Let’s prepare our batter. In a large mixing bowl, add in all the dry ingredients. Mix well.
3. Slowly pour in the water while mixing. Mix until you’ve reached a batter consistency.
4. Mix the veggies into the batter.
5. Heat a medium/large non-stick pan over medium-high heat. (Use a nonstick pan)
6. Preheat the pan, make sure it is hot before adding the oil. Once hot, Scoop around half of the batter into the pan and carefully spread to cover the vegetables.
7. Lower the heat to medium. You can cover the pan if you like. Cook for 4-5 minutes until golden brown and crisp over medium heat.
8. Then serve it with your dipping sauce.

My new favorite dish! I added a little bit of chili powder just to make it spicy.
Ingredients:
1 can of corn, drained
2 tbsp mayo (Japanese mayo preferred but any mayo is fine)
½ tbsp sugar (optional)
Pinch of salt
Black pepper
100g or ½ cup shredded mozzarella cheese
Cilantro, for garnish
Chili Powder spice (Tajin if you want a little acidity, chili powder if you want a little spice)

Oatmeal Banana Bread & Starting Over
Ingredients:
1 ½ cup rolled oats
1 cup almond flour
1 tsp baking soda
1 tsp baking powder
½ tsp ground cinnamon
¼ tsp salt
4 medium ripe bananas
½ cup honey
4 tbsp unsalted butter
¼ cup milk (fat-free)
2 large eggs
1 tsp vanilla extract
2 tbsp coconut oil
1-2 tbsp of dark chocolate
Toppings: (optional)
1 tbsp rolled oats
Dark chocolate/nuts
Recipe:
1. Preheat the oven to 180C and toast the rolled oats for 8-10 min.
2. In a large bowl, mash the bananas then add the wet ingredients: milk, melted milk, honey, oil, and vanilla extract.
3. Add eggs (one at a time) while whisking.
4. Mix the dry ingredients: almond flour, baking soda, baking powder, cinnamon, salt, and oats.
5. Combine the wet and dry ingredients. You can also add nuts or chocolate in.
6. Transfer to a baking pan. Make sure to grease or add wax paper/parchment paper onto the pan.
7. Bake for 55 to 65 minutes at 180C, or until a toothpick or wooden skewer inserted into the center comes out clean.
8. Remove from the oven and let cool in the pan for a few minutes. Then remove the banana bread from the pan and let cool completely before serving. Slice and serve.
