My roasted potatoes are so full of flavor, they can be your favorite side dish, or the star of the show ✨✨ Ingredients: 1/4 cup Olive Oil Juice from 1 Lemon 2 Fresh Rosemary Sprigs, leaves removed 4 Cloves garlic, minced Salt to taste, Pepper to taste Garlic Salt to taste 4 TBS Butter Optional: 1/4 cup Chicken Stock, or any animal fat like bacon fat Directions: 1. Preheat oven to 400º 2. Cut potatoes into cubes and spread out in a baking dish. 3. Cover (fully) with olive oil and lemon juice, you may need to eyeball amounts. You want all of the potatoes to have an oily/lemon glaze. Optional: add chicken broth or animal fat here. Toss so all the potatoes are covered 4. Put garlic through mincer and distribute throughout the baking dish. 5. Sprinkle with salt, pepper, garlic salt, and rosemary leaves. Distribute evenly over the potatoes. Toss and Sprinkle again. 6. Thinly cut butter and distribute through each 1/4 of the dish. Each section should have a tab or two of butter. 7. Pop into the oven for 45 minutes, or until they pierce easily with a fork, and are golden brown.
