Making your feed a little cheesier this week. These Parmesan shortbreads are all you need to get through this week. Why? Cause they pair perfectly with a big glass of wine. 😏

The answer for our last week’s ingredients reel is *drum rolls* Romesco sauce!
Use it has a dip, with poached eggs or with your mains. I offcourse used it with all the above. 😝
It’s super easy to make and has a very distinctive taste. Just blend all the ingredients together, pour some extra virgin olive oil on top and finish off with a sprinkle of paprika.
To make Romesco you will need:

2 Roasted bell peppers
2 roasted tomatoes
1/2 cup soaked Sundried tomatoes
1/4 Cup soaked & peeled Almonds
5 cloves Garlic
1/2 lemon juice
Parsley
1/2 tsp Smoked paprika
Salt for taste
3 tbsp EVOO
I made an extra batch and stored it in the fridge since it’s so versatile for all meals.

This double decker supremely cheesy burger screams it’s the weekend!!
Made these burgers using my favourite recipe. I’ve been using this recipe for quite some time now and it’s a no brainier. I’ve slightly tweaked the recipe over the years as per my liking and this is by far our favourite. I’ve used chicken mince for the patty but you can swap it with mince soybean or minced tofu as well.
To make the burger patty you’ll need:
-250gms chicken mince
-caramelised onions 1tbsp
-1 tsp yogurt/ Dahi
-1 1/2 tsp soy sauce
-2 tsp Worcestershire sauce
-1/2 tsp smoked paprika
-1/2 tsp garlic powder
-1/2 tsp black pepper powder
-Salt
Mix all the ingredients together. Heat a nonstick pan with vegetable oil. Portion the mixture as per your preference and place it on the pan. Cool for about 2 mins and flip. Add a cheese slice on top so it gets all gooey and melty. I’ve used cheddar slices. Cook for about another 2 minutes.
To caramelise onion cook them until they are rich and brown. I use a mixture of oil & butter to cook them. After they turn golden brown I add a pinch of salt & some sugar to it. Continue to cook until they’re brown. Keep stirring occasionally.
I toasted the buns on one side on a pan. Added some lettuce on the bottom. 2 patties followed by a generous amount of caramelised onions.
You can add some extra cheese sauce if you like. 😉

Lazy Oats pancakes!
This has been my go-to breakfast for quite some time now. It’s super easy and quick to make. A good substitute for my sugar cravings.
To make the pancake you’ll need:
-1/2 cup oats
-1 Overripe Banana
-1 Egg
-1/2 Cup Milk ( any kind that you prefer)
That’s all really. I personally don’t find a need to add sugar or sugar substitute to this but if you want yours to be sweeter feel free to add some.
Blend oats till they form a powder. Should take just a few seconds. Beat the egg in a bowl, Add Mashed Banana and blended Oats. Pour in the milk and whisk. You can adjust the milk quantity according to the kind of pancakes you desire. If you want thick and fluffy pancakes add a little less milk. If you want thinner & crisp pancakes, add more milk.
After you add the milk let the mixture rest for about 30 seconds. This allows the oats to absorb the milk and fluff up.
Heat butter/ olive oil in a pan. Pour in the mixture and cover the pan with a lid for a few seconds. I’ve observed the pancakes fluff up more when I put the lid on as opposed to without it. Flip and cook the other side.
Serve them with literally whatever you like. I generally add some pure maple syrup and fruits.
Felt a bit adventurous today and added some chocolate chunks too. 😝😅
I recently came across .elements and I genuinely liked their stuff. Absolutely love what they stand for and the products are super amazing and affordable. I made these pancakes with their rolled oats. Their baked granola is just as mind-blowing!

Happy Diwali lovelies!
It’s been quite eventful at home with all the Diwali prep. Hope this Diwali brings lots of Happiness and prosperity to you all! 🌟
Here’s the recipe for Ruby Chocolate and pistachio shortbreads!
To make this you’ll need:
-All purpose flour (Maida) - 1 cup
-1 large egg yolk
-Butter - 100 grams
-Refined sugar - 1/2 Cup
-Pistachio crumbs - 1/2 Cup
-Ruby Chocolate for dipping
Cream the sugar & butter together until pale. Once done beat in the egg yolk to the mixture. Add rest of the ingredients to the mixture. Combine to form a firm dough. Divide the dough into two and roll it into 2 cylinders. You can even make one big cylinder depending on the desired width of the shortbread. Wrap it in a cling film and store it in the fridge for about 45 minutes.
Preheat the oven to 180°C. Cut the dough into slices and arrange on a parchment paper. Bake for about 15-20 minutes. Allow to cool and then dip them generously in melted ruby chocolate. Drizzle some remainder pistachio crumbs.
Allow to cool down completely till the chocolate becomes firm.

Ruby Chocolate Mousse!
Rich, Creamy and soo indulgent. Super easy to make with just 2 ingredients.
Simply whip cream till it becomes super fluffy. To check if it’s done, take some in a spoon and flip the spoon. If the cream stays put, you’re good to go!
Melt ruby chocolate and gradually fold in it in the whipped cream.
Finish it off with your favorite toppings. I’ve added some super juicy cherries and some holy Basil to it. 🌿
