such that they ensure to utilize every single part of the fish. Here,crispy fried fish head is cooked with rice and potatoes.
This Bengali curry recipe is easy to prepare with readily available ingredients.All you need is a fresh fish head (you can use any
large freshwater carp)along with Gobindobhog rice.Since the key ingredients of this preparation are fish and rice , so the quality is vital here.If you cannot grab Gobindobhog rice easily , you can always choose good quality Basmati Rice.Due to its rich flavor and simplicity,this curry always find its place in wedding lunches,annaprashan(first rice ceremonies) or simply on sunday feasts.This is commonly servedwith hot steamed plain rice or can be consumed as one pot dish too.Though it does not matter what else you have in your plate,until you enjoy your spicy rich muri ghonto ! Lyangcha or Langcha or Lemcha - is basically a fried sweet of fresh Channa as a major ingredient.The making process of these cylindrical delight had come across a wide change as time flows. Due to time constraint and unavailability of enough resources have been a major reason so far. So, in this video , we tried to recreate the traditional way of preparing Lyangchas keeping in mind the possible limitations as well. These Lyangchas have a considerable thicker crust while frying.Kept for few minutes untouched, these hard pieces become soft and juicy as the syrup percolates, ready to be served on the plates.

Alu'r Chop - https://youtu.be/V4FiW3HzQFc , a timeless snack and most popular under the category of telebhaja.Even within India there are lots of variations of potato fritters.The basic set of ingredients remains same for all with slight deviations.
In this video , this bengali version of Alur Chop basically deals with mashed boiled potatoes-spiced up with kalo-jeera(nigella)and seasoning.Then it is simply dipped in besan(gram flour)batter and deep fried.Adding rice flour with besan also helps in crispy chops! So, when the clouds gather enough moisture and sets to pour in , make some Alur Chop!
