Roasted Red Pepper, Spinach, and Mozzarella Stuffed Chicken

_____Ingredients:_____

- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1/2 cup roasted red peppers, thinly sliced
- 1 cup fresh spinach leaves
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- Fresh parsley, chopped, for garnish (optional)

_____Directions:_____

1. Preheat oven to 375°F (190°C). Grease a baking dish large enough to hold the chicken breasts in a single layer.
2. Using a sharp knife, make a horizontal slit along the side of each chicken breast to create a pocket for stuffing. Be careful not to cut all the way through.
3. Season the inside and outside of each chicken breast with salt and pepper to taste.
4. Stuff each chicken breast with roasted red pepper slices, fresh spinach leaves, and shredded mozzarella cheese. Press the edges of the chicken breast together to seal the stuffing inside.
5. In a small bowl, combine olive oil, minced garlic, dried basil, dried oregano, and paprika.
6. Brush the seasoned olive oil mixture over the stuffed chicken breasts, coating them evenly.
7. Place the stuffed chicken breasts in the prepared baking dish.
8. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and juices run clear.
9. Remove from the oven and let the chicken rest for 5 minutes before serving.
10. Garnish with chopped fresh parsley, if desired, before serving.

Chicken Bacon Ranch Layer Salad

** Great Summer Salad**

Ingredients
9 cups roughly chopped green leaf or romaine lettuce divided
1 large red bell pepper seeded and diced
1 large poblano or green bell pepper seeded and diced
1 12 oz frozen corn steamed and cooled
6 medium tomatoes 5 chopped and 1 sliced into wedges for garnish
1 medium red onion thinly sliced
3 green onion thinly sliced
2 1/2 cup shredded sharp cheddar cheese
4 cups roasted chicken roughly chopped
1 lb bacon cooked and crumbled
2 large hard boiled eggs cut into wedges

Big Mac Wraps
Ingredients:
1 pound lean ground beef
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon Worcestershire sauce
1/2 cup mayo
2 tablespoons grated onion
2 tablespoons ketchup
1 tablespoon pickle relish
2 teaspoons yellow mustard
1 teaspoon white vinegar
1/4 teaspoon paprika
4 (6-inch) flour tortillas
2 cups shredded lettuce
1/2 cup shredded cheddar cheese
1/4 cup sliced onions
1/4 cup chopped pickles
1/4 cup diced tomatoes
Directions:
Whisk together mayo, grated onion, ketchup, relish, mustard, vinegar, and paprika for the sauce. Store in the fridge.
Brown the lean ground beef in a skillet, drain excess grease.
Season beef with salt, pepper, garlic powder, and Worcestershire sauce.
Assemble wraps with lettuce, cheese, onions, pickles, tomatoes, seasoned beef, and Big Mac sauce on tortillas.
Fold wraps and secure with a toothpick. Serve immediately.

Chicken Bacon Pepper Taquitos

Mozzarella cheese slices
1 cup cooked chicken (shredded)
1/2 cup cooked bacon, crumbles
Sliced red bell pepper, pan fried for 2 mins
1/2 cup Ranch dressing
1 tsp Italian Seasoning
1/2 tsp cayenne (optional if you like it hot)

Instructions
Preheat your oven to 350 degrees.
Place the mozzarella slices on the silicone baking sheet (You can use parchment, drizzle in some avocado oil). Bake 5-7 minutes.
Combine the chicken, bacon, red bell pepper, ranch, Italian seasoning, cayenne (optional)

Remove from oven when edges are golden brown, let it cool for a minute
Tip: dont let it sit to long as they will become hard and not easy to handle, make sure its just cool and pliable enough for you to roll
Place the chicken bacon pepper ranch mixture on the edge of one slice and tightly roll them up

Ingredients:
10 sweet peppers (such as mini bell peppers)
8 oz cream cheese, softened
1 cup shredded cheddar cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
Salt and pepper to taste
Optional: Bacon slices (for wrapping)
Instructions:
Preheat the oven: Preheat your oven to 375°F (190°C).

Prepare the sweet peppers: Cut the sweet peppers in half lengthwise and remove the seeds and membranes. If you're using mini bell peppers, you can leave them whole or cut them in half, depending on your preference.

🌟Ham and Cheese Keto Stromboli🌟

Ingredients:

For the Dough:

2 cups mozzarella cheese, shredded
3/4 cup almond flour
2 tablespoons cream cheese
1 large egg
1 teaspoon baking powder
1/2 teaspoon garlic powder (optional)

For the Filling:

1/2 pound thinly sliced ham
1 1/2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 cup chopped fresh spinach (optional)
1/4 cup chopped black olives (optional)
1/4 cup chopped sun-dried tomatoes (optional)

For the Egg Wash:
1 large egg, beaten

Instructions:

Prepare the Dough:

Preheat your oven to 400°F (200°C).
In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Heat in the microwave in 30-second intervals, stirring in between, until the cheeses are melted and well combined.
In a separate bowl, mix the almond flour, baking powder, and optional garlic powder.
Add the melted cheese mixture and the egg to the dry ingredients. Mix until a dough forms.
Place the dough on a parchment paper-lined surface and shape it into a rectangle using your hands or a rolling pin.

⭐️Keto BBQ Chicken Casserole ⭐️

Ingredients:
2 c cooked rotisserie chicken
1/2 c sugar free bbq sauce ( I used sweet n spicy G Hughes)
5 slices of cooked bacon
1 1/2 C sharp cheddar shredded cheese
1 tsp parsley (optional)
1 Tbsp sour cream (optional)

Directions :
1. Spray 9x9 baking dish and pre heat oven to 350°
2. Shred up 2 c rotisserie chicken and place in bottom of dish.
3. Drizzle bbq sauce over chicken.
4. Crumble bacon over chicken and bbq sauce.
5. Sprinkle shredded cheese over other ingredients.
6. Sprinkle parsley over top.
7. Cook until cheese is melted 15-20 min. Serve with sour cream on top if desired.

⭐️Keto Cheesy Beef & Broccoli Casserole⭐️

Ingredients:
• 1/2 lb ground beef
• 1/2 lb sausage
• 11 oz of cooked broccoli (roasted or steamed) • 1 tsp garlic paste
• 2-3 cups mozzarella cheese
• 3 oz cream cheese
• 1/2 cup heavy cream
Directions:
1) Preheat oven to 400 degrees
2) Brown sausage and beef together
3) Drain fat
4) In a mixing bowl add meat, garlic paste, and cream cheese and mix until well combined
5) In a 9x13 oven safe dish, lay broccoli on the bottom and top with the meat mixture.
6) Pour the heavy cream over top.
7) Spread the mozzarella over top and place in the oven for 12-15 minutes or until top is slightly browned.

⭐️Keto Bacon Chicken Cheese Bake

1 pound bacon
8 ounce package cream cheese
½ cup grated Parmesan cheese
1 ½ cups sharp cheddar cheese, shredded
1/3 cup avocado mayonnaise
1 cup heavy cream
½ teaspoon hot sauce
1 teaspoon dry mustard
½ teaspoon white pepper
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon paprika
1 store bought cooked rotisserie chicken, shredded
1 ½ cups onion, diced
8 ounces baby bella mushrooms, sliced
1 tablespoon fresh garlic, minced
8 ounces baby spinach
2 cups mozzarella cheese, shredded

INSTRUCTIONS
Preheat oven to 375 degrees F.
In a large skillet, cook bacon to crisp, remove to paper towels, crumble
In a sauce pan, mix cream cheese, Parmesan , cheddar, mayonnaise, heavy cream, hot sauce, mustard, pepper, garlic powder, onion powder and paprika.
Cook over medium heat and stir until creamy.
Add bacon to the cream mixture.
In a separate pan, saute onions over medium high heat for three minutes, then add the mushrooms and saute for five minutes. Add garlic and spinach. Cook until spinach is wilted, about 2 mins
Add the cream mixture and cooked chicken and heat then pour into a separate casserole dish.
Top with mozzarella cheese and bake for 20 minutes.
