Chicken Bacon Pepper Taquitos

Mozzarella cheese slices
1 cup cooked chicken (shredded)
1/2 cup cooked bacon, crumbles
Sliced red bell pepper, pan fried for 2 mins
1/2 cup Ranch dressing
1 tsp Italian Seasoning
1/2 tsp cayenne (optional if you like it hot)

Instructions
Preheat your oven to 350 degrees.
Place the mozzarella slices on the silicone baking sheet (You can use parchment, drizzle in some avocado oil). Bake 5-7 minutes.
Combine the chicken, bacon, red bell pepper, ranch, Italian seasoning, cayenne (optional)

Remove from oven when edges are golden brown, let it cool for a minute
Tip: dont let it sit to long as they will become hard and not easy to handle, make sure its just cool and pliable enough for you to roll
Place the chicken bacon pepper ranch mixture on the edge of one slice and tightly roll them up

🌟Keto Sweet Pepper Poppers🌟

Ingredients:
10 sweet peppers (such as mini bell peppers)
8 oz cream cheese, softened
1 cup shredded cheddar cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon smoked paprika
Salt and pepper to taste
Optional: Bacon slices (for wrapping)
Instructions:
Preheat the oven: Preheat your oven to 375°F (190°C).

Prepare the sweet peppers: Cut the sweet peppers in half lengthwise and remove the seeds and membranes. If you're using mini bell peppers, you can leave them whole or cut them in half, depending on your preference.

Prepare the filling: In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until well combined.

Fill the peppers: Using a spoon or a piping bag, fill each sweet pepper half with the cream cheese mixture.

Optional: Wrap with bacon - If you like, you can wrap each filled pepper with a slice of bacon. This adds extra flavor and a crispy texture.

Bake: Place the filled sweet peppers on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes or until the peppers are tender, and the filling is hot and bubbly.

🌟Ham and Cheese Keto Stromboli🌟

Ingredients:

For the Dough:

2 cups mozzarella cheese, shredded
3/4 cup almond flour
2 tablespoons cream cheese
1 large egg
1 teaspoon baking powder
1/2 teaspoon garlic powder (optional)

For the Filling:

1/2 pound thinly sliced ham
1 1/2 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 cup chopped fresh spinach (optional)
1/4 cup chopped black olives (optional)
1/4 cup chopped sun-dried tomatoes (optional)

For the Egg Wash:
1 large egg, beaten

Instructions:

Prepare the Dough:

Preheat your oven to 400°F (200°C).
In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Heat in the microwave in 30-second intervals, stirring in between, until the cheeses are melted and well combined.
In a separate bowl, mix the almond flour, baking powder, and optional garlic powder.
Add the melted cheese mixture and the egg to the dry ingredients. Mix until a dough forms.
Place the dough on a parchment paper-lined surface and shape it into a rectangle using your hands or a rolling pin.

Add the Filling:
Layer the ham over the dough, leaving a border around the edges.
Sprinkle the shredded mozzarella and grated Parmesan over the ham.
If using, add the chopped spinach, olives, and sun-dried tomatoes.

Roll and Seal:
Carefully roll the dough from one of the longer sides, creating a log shape.
Seal the edges by pinching the dough together. Place the stromboli seam side down.

Brush with Egg Wash:
Beat one egg and brush it over the top of the stromboli. This will give it a golden brown color when baked.

Bake:
Transfer the stromboli on the parchment paper to a baking sheet.
Bake in the preheated oven for about 20-25 minutes or until the crust is golden brown.

Cool and Slice:
Allow the stromboli to cool for a few minutes before slicing it into individual portions.

⭐️Keto BBQ Chicken Casserole ⭐️

Ingredients:
2 c cooked rotisserie chicken
1/2 c sugar free bbq sauce ( I used sweet n spicy G Hughes)
5 slices of cooked bacon
1 1/2 C sharp cheddar shredded cheese
1 tsp parsley (optional)
1 Tbsp sour cream (optional)

Directions :
1. Spray 9x9 baking dish and pre heat oven to 350°
2. Shred up 2 c rotisserie chicken and place in bottom of dish.
3. Drizzle bbq sauce over chicken.
4. Crumble bacon over chicken and bbq sauce.
5. Sprinkle shredded cheese over other ingredients.
6. Sprinkle parsley over top.
7. Cook until cheese is melted 15-20 min. Serve with sour cream on top if desired.

⭐️Keto Cheesy Beef & Broccoli Casserole⭐️

Ingredients:
• 1/2 lb ground beef
• 1/2 lb sausage
• 11 oz of cooked broccoli (roasted or steamed) • 1 tsp garlic paste
• 2-3 cups mozzarella cheese
• 3 oz cream cheese
• 1/2 cup heavy cream
Directions:
1) Preheat oven to 400 degrees
2) Brown sausage and beef together
3) Drain fat
4) In a mixing bowl add meat, garlic paste, and cream cheese and mix until well combined
5) In a 9x13 oven safe dish, lay broccoli on the bottom and top with the meat mixture.
6) Pour the heavy cream over top.
7) Spread the mozzarella over top and place in the oven for 12-15 minutes or until top is slightly browned.

⭐️Keto Bacon Chicken Cheese Bake

1 pound bacon
8 ounce package cream cheese
½ cup grated Parmesan cheese
1 ½ cups sharp cheddar cheese, shredded
1/3 cup avocado mayonnaise
1 cup heavy cream
½ teaspoon hot sauce
1 teaspoon dry mustard
½ teaspoon white pepper
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon paprika
1 store bought cooked rotisserie chicken, shredded
1 ½ cups onion, diced
8 ounces baby bella mushrooms, sliced
1 tablespoon fresh garlic, minced
8 ounces baby spinach
2 cups mozzarella cheese, shredded

INSTRUCTIONS
Preheat oven to 375 degrees F.
In a large skillet, cook bacon to crisp, remove to paper towels, crumble
In a sauce pan, mix cream cheese, Parmesan , cheddar, mayonnaise, heavy cream, hot sauce, mustard, pepper, garlic powder, onion powder and paprika.
Cook over medium heat and stir until creamy.
Add bacon to the cream mixture.
In a separate pan, saute onions over medium high heat for three minutes, then add the mushrooms and saute for five minutes. Add garlic and spinach. Cook until spinach is wilted, about 2 mins
Add the cream mixture and cooked chicken and heat then pour into a separate casserole dish.
Top with mozzarella cheese and bake for 20 minutes.

UNSTUFFED-Peppers! 🌶

* Olive Oil extra virgin 2 tbsp. split into two portions
* 2 lbs Ground Beef or sausage
* 1 large Red Pepper chopped pieces
* 1 large Green Pepper chopped pieces
* 1 bag Riced Cauliflower frozen 10 oz
* 2 cups Mozzarella Cheese grated
* Garlic Cloves 2 cloves minced or garlic salt
* 1/2 Red Onion chopped
* Rao’s low carb sauce 24 oz.
* 1 tbsp Italian Seasoning
* 1 tsp fresh Pepper
* 1 tsp Salt

1. Heat a cast iron skillet (or any other type of skillet) on medium high heat. While the skillet is getting hot, microwave the frozen riced cauliflower per the directions on the bag, and once finished, set aside.
2. In the hot skillet, add olive oil and ground beef and mix.
3. Cook the beef until it’s brown stirring frequently. 5-7 min.
4. Remove the browned beef from heat, drain the grease and set the beef aside to be added later.
5. Return the skillet to the range, and resume heating it at medium high heat.
6. Add the second portion of olive oil to the skillet and add the peppers, onion and garlic. Sauté the mix until it becomes translucent or soft.
7. Now add the marinara, cauliflower, ground beef, pepper, salt, and Italian seasoning. Stir well.
8. Reduce heat to medium low and simmer uncovered for 12 minutes allowing the mixture to reduce.
9. Now adjust the heat to low and top with mozzarella cheese. Cover the skillet until the cheese is melted.
10. FINALE: Garnish with red pepper flakes, chopped green onion and peppers!
11. Pop in a casserole dish and bake with more cheese on top if desired!

🎃 Pumpkin Pie Fluff 🎃

INGREDIENTS
1 (16 ounce frozen) whipped topping, thawed or 6 cups fresh whipped cream

1 (5 ounce package) instant vanilla pudding mix

1 (15 ounce can) solid pack pumpkin

1 1/4 teaspoon pumpkin pie spice, and nutmeg…adjust this to how "pumpkiny" you want it.

INSTRUCTIONS
In a large bowl, mix together instant vanilla pudding mix, pumpkin and pumpkin pie spice. Fold in the thawed frozen whipped topping or fresh whipped cream. Chill in the refrigerator until serving. Serve with apples, ginger snaps, Nilla wafers (mini or regular), or cinnamon graham cracker sticks.
