One April day on a sunny little corner in Wilmington, on fourth street to be exact, we enjoyed one of the top ten pizzas we have all experienced. As I stood in the kitchen and watched them prepare the dough, stretching and pulling it to shape, the owner Alex answered some of my questions. “Did you get this recipe when you bought Pizzeria Don Luca?” “No.” But he then went on to elaborate. The dough has taken many many trial and errors. Reading chats, forums, asking questions, studying what makes a good dough, and thus coming up with this dough. A dough that perfectly holds its toppings and has a nice crunch on the outside yet softness on the in. The kind you can’t help but eat all of. We tried the two top pizzas currently at his shop: The Hot Honey Pepperoni and The PBR (Pickle, Bacon, Ranch) let me tell you. The videos I’ll share don’t do it justice. We all raved about the pizza… and then we had his wings. And MAN, the wings. They are amazing. Double baked for just the right texture. And you have to try the Housemade ranch and Yoda sauce on the side. Trust me on this, what we got was the perfect order.
