Cozy vibes and delicious eats – embrace the hygge life without leaving the comfort of your home! ✨🍲 Dine by candlelight in your comfiest PJs with a steaming bowl of homemade beet chili. Here’s a simple recipe to bring warmth to your winter nights: Ingredients - 2 onions - 7 small cloves of garlic - 1 jalapeno pepper - 1 serrano pepper - 1 fresno pepper - 1 habanero pepper (seeds out for less spice) - 1 32-ounce can vegetable stock - 1 tablespoon of chili powder - 1 tablespoon of cumin - 1 28-ounce can of crushed tomatoes - 2 tablespoons of tomato paste - 1 15-ounce can garbanzo beans - 1 15-ounce can black beans - 1 15-ounce can kidney beans Directions 1. Cut onions small and fry for 5 minutes until caramelized, adding salt to taste. 2. Add garlic and fry for another 2 minutes. 3. Pour in the vegetable stock, letting it simmer for a few minutes. 4. Add spices and crushed tomatoes. Simmer for 1 hour. 5. Peel 3 beets, coat with olive oil, and roast in the oven for 30 minutes. 6. Add roasted beets to the pot. 7. Stir in tomato paste and let simmer for 30 minutes with the pot covered. 8. Add beans and simmer for an additional 30 minutes with the lid off. Voila!
