I could’ve made this same video about the age gap between first two (almost 6 years) too 🥺🤍 Family planning has been an area I had absolutely no control over... I’ve always wanted to have a 2 year age gap between my first two and then have my third at some point and be done with the baby-making phase of my life by 35. But I ended up having a bigger age gap between my first two due to secondary infertility and then a smaller age gap of 18 months with our third being a total surprise. I can’t even tell you how many nights I lost sleep over the growing age gap between Maddie and Avery and how many tears were shed over having another baby so soon and being overwhelmed with guilt. I had my last baby at 37 with age gaps the younger me never dreamed of having, but I can now honestly say that every age gap ends up being the perfect age gap for your family. With so much love and beauty to be found in each. So to the mamas feeling anxious and guilty about the age gap of your kids, here’s a little reminder for you that your feelings are absolutely valid and that you’ll find your story to be one of a kind beautiful, too. 🤍

Wow the last time I shared our nighttime routine was when Kara was a month old… when when our friends would ask how we were doing and our answer was, “We feel like we’re on a sinking ship.” And we meant every word.🫠 Here we are 4 months later. Although this shift will stay chaotic and loud for some time, we’ve made so much progress as a family… with this time of the day beginning to feel more routinized and manageable. Thankful for all the small and big progress we’ve made together as a family of 5 🥹🙏🏻 it wasn’t easy, and it’s still not easy, but we’re doing it. And for whoever needs this reminder today, you and your family are doing it too!!! What feels impossible right now won’t feel that way forever 🫂🫶🏻

Our 4th meal using the Costco shrimp tempura (the bag was massive!)

Sushi restaurant carrot ginger salad dressing recipe - turned out so yummy but I guess we’ll be eating this dressing for weeks now 😆

1 cup of carrots, peeled and chopped (orig recipe called for 1 but I added 2 cups and doubled the sugar amount to 2 tbsp)
1/2 cup of onion, peeled and finely chopped
2 tablespoons of ginger, peeled and finely chopped
1 tablespoon of sugar / sweetener (I added 2 tbsp)
1/4 cup of soy sauce
1/2 cup of rice vinegar
1/2 teaspoon of salt
3/4 cup of vegetable oil (I used avocado oil)

Bulgogi hot dog - this recipe is from the best - and WOW. Just make sure to add some kimchi on top if you have in the fridge because that took these hot dogs to a whole another level. This would be such a great easy summer recipe for the whole fam to enjoy!

** this makes roughly 8-10 bulgogi hot dogs 👇🏻
Bulgogi marinade:
Shabu shabu / bulgogi meat 2 lbs
1 onion, thinly sliced
Green onion 1 cup
Brown sugar 6 tbsp
Mirin 3 tbsp
Minced garlic 3 tbsp
Soy sauce 12 tbsp
Sesame oil 8 tbsp

Mayo sauce:
Mayonnaise 1 cup
Pickled radish, 1/4 of a whole radish, chopped
2 jalapeno peppers, chopped
Hotdog buns
Ketchup
Mozzarella cheese

Directions:

1. Mix the beef chuck, onion, green onion, brown sugar, mirin, soy sauce, sesame oil and minced garlic in a large bowl.
2. Let the beef marinate for at least an hour. I marinated mine overnight in the fridge.
3. Make the mayo sauce by finely chopping the jalapeno peppers and pickled radish.
4. Mix the chopped peppers, pickled radish, and mayonnaise in a bowl. (I added the chopped jalapeno peppers in only the adults’.)
5. Cook the bulgogi over medium heat until all the liquid has evaporated.
6. Spread the mayo sauce on the bun.
7. Add cheese and bulgogi in the bun. Top the hot dog with ketchup.

We paired the hot dogs with sweet potato fries and the combo was 😘🤌🏻

furikake salmon recipe from .it.relle

1 ½ – 2 pounds fresh salmon fillet, sliced into 4 portions
¼ cup Kewpie mayonnaise
1 teaspoon soy sauce
optional: 1 teaspoon prepared wasabi paste
¼ cup furikake (see Recipe Notes)
kosher salt & ground black pepper, to season
Directions:

Preheat the oven to 400F.
To a small bowl, add mayonnaise, soy sauce, and wasabi. Mix until well combined.
Pat salmon dry. Season with salt and pepper.
Spread mayonnaise mixture over the top of the salmon creating an even layer.
Sprinkle furikake over the top of the mayonnaise mixture.
Place in the oven. Bake for 12-15 minutes or until desired doneness. ENJOY!

Korean cucumber salad
1 large cucumber, sliced
1/2 onion, thinly sliced
2 cloves of garlic, minced
white part of the scallions, chopped
3 tbsp sugar
2 tbsp rice vinegar
1 tbsp salt
* add Korean red pepper flakes + sesame seeds accordingly
* I usually let the cucumber salad sit for at least 30 minutes to let all the flavor soak into the cucumber slices! And keeping it in the fridge will make it even more refreshing 😁

Another thing I have learned from my seasons of not having a village is that a lot of times, a village isn’t just handed to us but we have go look for it. I feel like over the years, I have become bolder and more intentional in putting myself out there to build new friendships. It takes a little bit more time and commitment now with 3 kids, but I’m happy to report that I’m slowly finding my village here. And I am so grateful for these new friendships.

I don’t know where you are, but if any of this resonates with you, I hope you know you’re not alone. And in the meantime, I hope this blog can bring you some sense of belonging and comfort- because that’s really why I do what I do.

This song… IYKYK 🤪😍 anyway, this is our favorite way to eat Costco shabu meat - no need to marinate ahead of time, just grill with sesame oil (bc the meat is super lean) and then dip it in sesame oil + salt + pepper dip when eating!

Sesame oil dip:
2 tbsp of sesame oil
1/2 tsp of salt
1/2 tsp of ground black pepper

Korean soybean paste stew:

6 cups of dashi stock (I made my own using 6 cups of water + 3 seafood stock coins)
1/2 zucchini, cubed
1/2 onion, cubed
1/2 block of tofu, cubed
1 tbsp garlic
3 tbsp soybean paste (I use the one from O’Food)
5-6 white mushrooms, sliced
2 tbsp of Gochugaru (optional)

1. Bring your dashi stock to a boil over medium heat. Add soybean paste + all ingredients and boil everything together for 10 minutes.
2. Add Gochugaru (Korean pepper flakes) and minced garlic and boil for 2 minutes until fragrant. Serve and enjoy!

etting realistic goals for the new year... enters keeping a moderately clean kitchen. My mom and I ordered all different size and shaped storage bins and containers for the kitchen from and tackled my “Don’t open” cabinets the other day. They had a wide selection of kitchen storage products and my mom was so happy to have found this Lock & Lock container that fits up to 50 cups, with a big opening — and so we made that into our rice container! I am so happy with how much more organized my cabinets look every time I open them and I’ll be back to show you if I’ve been able to maintain them or not in a few weeks. And be sure to check out JCPenney if one of your goals also includes cleaning and organizing your “don’t look” cabinets!

This is my no recipe 💯 winging it dinner - just grill some Costco shabu shabu meat, make sesame oil-salt-pepper dip for the meat and enjoy it as a Ssam (Korean lettuce wrap) with some lettuce + grilled garlic + seasoned soybean paste! It’s sooooo good. And easy. 😘

The easiest Tanindon (beef and egg rice bowl) recipe from !! It was so quick and easy, I made dinner, cleaned the kitchen and finished bathing the girls all before 7pm! 😮 I served the girls’ bowls with udon noodles and Jeff’s and mine over rice. The below measurements were adjusted to feed my whole fam but make sure to check the original recipe that makes 2 servings!

My mom has 3 must-do’s on her list every single time she comes to visit us: 1. Clean and organize my entire house, 2. Make bags and bags of frozen minced garlic cubes, 3. Stock my fridge and freezer with Korean food to last us MONTHS. I wonder if I’ll be the same kinda Korean mom to my girls one day… 🥹❤️

chicken cilantro wontons (these taste just like the Bibigo ones from Costco!)
mac n cheese bites
turkey corn dogs
spinach & ricotta ravioli (they didn’t have this yesterday)
spaghetti carbonara
reduced fat mac n cheese (they also didn’t have this yesterday)
frozen edamame (which I forgot 🫠)
and lots and lots of snacks ofc

Ok but more importantly, here’s my Korean cucumber salad recipe - just remember 3:2:1. For 6 mini cucumbers or 1 large cucumber, you are going to add 3 tbsp of sugar, 2 tbsp of vinegar, 1 tbsp of salt and add gochugaru (Korean pepper flakes,) minced garlic, scallions and sesame seeds to your liking. I add about 3 tbsp of gochugaru, 3 tbsp of minced garlic, 2 tbsp of scallions, and 1 tbsp of sesame seeds. And make sure to store it in the fridge for 2-3 hours for the flavors to soak in before enjoying! 😊

Asian Chicken recipe from (tastes like a hybrid of chicken teriyaki and dak bulgogi - Korean soy marinated chicken bbq - yum!) I have a really fun recipe using the leftover grilled chicken from today the girls are going to love - and can’t wait to share that soon!! Think mall meals. 😏

Ingredients:
1 - 1.5 lb / 500 - 750g chicken thigh fillets , skinless boneless

Chicken marinade:
3 cloves garlic , minced
2 tsp ginger , freshly grated
2 tbsp soy sauce
2 tbsp tomato ketchup
2 tbsp Oyster sauce
1 1/2 tbsp Chinese cooking wine OR Mirin
1 - 3 tbsp Sriracha (I only added 1 tbsp)
2 tbsp brown sugar
1 tsp sesame oil
** I also added a pinch of black pepper

Instructions:
1. Mix Marinade ingredients together. Add chicken and mix to coat. Marinade in the fridge for a minimum of 1 hour or up to overnight. (I marinated for 6 hours)
2. Heat oil in a large non stick skillet or BBQ over medium high heat. (See notes for other cooking methods) Add chicken and cook until each side is dark golden brown and chicken is cooked through (about 3 minutes each side). Transfer to plate, cover loosely with foil and rest for 3 minutes.
3. Garnish with chillies, shallots and sesame seeds if desired. Serve with white rice and slices of cucumber.

1 1/2 onions, thinly sliced
1 green onion, chopped
3 large eggs, whisked
1 1/2 lbs thinly sliced beef (chuck or ribeye) - I used Costso Shabu Shabu meat

Seasoning:
1 1/2 cup dashi
9 tbsp soy sauce
6 tbsp sake (I skipped this)
6 tbsp mirin
3 tbsp sugar

Directions:
1. In a large pan, add your seasoning.
2. Add the onion slices and spread them throughout the pan.
3. Add the meat on top of the onions.
4. Cover the lid and cook over medium heat.
5. When the meat is cooked, skim off the scum and fat from the broth with a fine-mesh skimmer. Turn down the heat to simmer and continue cooking, covered, for 3–4 min
6. Slowly drizzle a thin stream of the beaten eggs over the simmering beef, placing your cooking chopsticks at the edge of the bowl with the eggs to control the flow. Do not mix the egg with the beef. Sprinkle the green onions on top and cook covered on medium-low heat until the egg is done to your liking (but don‘t overcook it). Usually, rice bowls with eggs in Japan are served while the egg is almost set but still runny. Remove from the heat.
7. Prep your rice bowls (I made udon bowls for the kids) and add the beef and egg mixture on top. If you’d like, drizzle any remaining pan sauce on top. Top with pickled red ginger (beni shoga or kizami beni shoga) and shichimi togarashi (Japanese seven spice) (optional). Enjoy!

1. Yes you heard me right… I hate butter 😬 just something about the smell and taste… idk
2. I can only choose travel destinations based on the availability of Korean food there bc the longest I can go without Korean food is 3 days
3. I can’t wait for the girls to grow up a bit and to travel + see the world together 🥹 maybe next year?! I just need Kara to outgrow her crazy walker stage she’s in right now lol
