LAMB SHANKS IN A RED WINE AND CITRUS GRAVY.
All on a bed of creamy mash. These tender boys will fall apart and slide straight off the bone.
INGREDIENTS
1 onion
2 carrots
2 celery sticks
8 cloves garlic
2 lamb shanks
2 tbsp tomato paste
180ml red wine
1 lemon
1 orange
500ml chicken stock
4 sprigs thyme
2 sprigs rosemary
2 bay leaves
Potatoes
100g butter
Milk
Salt
Pepper
1/2 tsp nutmeg
METHOD
Prep first. Dice and onion, 2 carrots, 2 celery sticks and mince 8 cloves of garlic.
Season the lamb all over with salt and pepper and sear over a high heat until nicely browned. Take them out before adding your veg.
After 15 minutes, add your garlic, stir and wait 3 minutes before adding 2 tablespoons of tomato paste for 2 minutes. Then 180ml red wine.
Simmer that for 5 minutes before squeezing in the juice of a lemon and an orange for those natural sugars that elevate this dish beautifully.
Stir before adding 500ml of chicken stock.
Make sure you deglaze the pan and get all the brown bits. Then add some thyme, rosemary and a couple of bay leaves.
Make sure they’re submerged then add your lamb back before covering and putting in the oven for 2 hours at 200 degrees.
After an hour, flip the lamb and stick it back in.
Onto the mash. Boil your potatoes in salty water, drain, cover and melt some butter.
Pour the butter into the spuds and start stirring.
Add warm milk as you go until you get a gorgeous creamy texture.
Season with salt, pepper and a pinch of nutmeg. Another big stir then it’s ready.
Take your lamb out to rest and sieve the juices into a saucepan. Make sure you get all of that amazing flavour in there.
Simmer over a low heat with a tablespoon of butter then you are done.
Pour that liquid gold all over your lamb and mash and enjoy what is potentially the most comforting dish I’ve made all year.

Velouté Sauce, an absolute classic and fundamental of sauce making done my way. Basically I just like the amp up the stock flavouring to give it an extra boost.
2 shallots sliced
1 carrot sliced
4-5 mushrooms sliced
4 garlic cloves sliced
1 bay leaf
Handful of fresh thyme
Few parsley stalks
1 tsp black peppercorns
150ml white wine
800ml chicken, fish or vegetable stock
40g butter
30g flour
80ml double cream
Handful finely shredded flat parsley
Sherry vinegar to taste
1. soften the shallots, carrots, garlic and mushrooms in a pan with a pinch of salt.
2. Add the bay, thyme, parsley stalks and peppercorn
3. Deglaze with the wine and reduce by half
4. Add the stock and simmer for 30 mins then strain and keep warm
5. Melt the butter in a new pan I like to brown it slightly then add the flour and cook this out for 4-5 mins
6. Add the warm stock in stages continuously stirring and beating to ensure no lumps
7. Finish with the cream, parsley, sherry vinegar and black pepper

JAMAICAN JERK CHICKEN 🍗
If you want to seriously impress your family or friends next time they’re round, then you need this recipe in your locker. None of this store bought jerk sh*te. This is the real deal from an old Caribbean lady who has been cooking this since before you were born.
INGREDIENTS
1 red onion.
4 spring onions.
6 cloves of garlic.
4 scotch bonnet chillis, deseeded. You can reduce or increase the amount depending on how big or small your bollocks are.
1 tablespoon of grated ginger.
1 teaspoon of ground cinnamon
1 teaspoon of all spice powder
1 tablespoon of fresh or dry thyme
2 tablespoons of olive oil
60ml of cider vinegar or white vinegar
60ml of soy sauce
The juice of a whole orange
The juice of a whole lime
2 tablespoons of brown sugar
I put in 1 tablespoon of all purpose seasoning but you don’t need that if you can’t find it.
1 teaspoon of pepper
And a generous pinch of salt.
METHOD
Get it all in a blender then pour it over your chicken and make sure it’s covered.
Leave it for at least 3 hours or ideally overnight.
Then cook it on a BBQ or an oven. On a BBQ cook it over direct heat, skin down to get a gorgeous char, then move over to indirect heat and cook at around 220 for another 30 minutes until the chicken is cooked though.
In an oven, cook it skin side up at 200 degrees for 15 mins until you get a nice dark brown colour on the top, then flip them over and cook for another 10 minutes or until the chicken is cooked.
Serve it with rice and peas, or whatever you fancy really.

Marinading your steak takes the flavour and tenderness to another planet and is guaranteed to get you paid. I’m gonna teach you how to make the best marinade that doubles up as a stunning steak sauce. Perfect for date night.
INGREDIENTS
60ml Soy sauce
60ml Balsamic vinegar
60ml Worcestershire sauce
60ml Olive oil
3 cloves garlic
Steak
1 tsp cornflour mixed with 1 tsp water to thicken the sauce.
METHOD
Combine the marinade ingredients then submerge your steak.
Stick it in the fridge for between 2 and 8 hours then take it out an hour before cooking to bring it up to room temperature.
Cook to your desired doneness. Get a meat thermometer so you never have to worry about overcooking or undercooking again. For medium rare take it off at 45 degrees to rest for the same amount of time you cooked it.
For the sauce, boil the leftover marinade for 5 minutes, adding a teaspoon of cornflour slurry (1sp cornflour, 1 tsp water) and stir to thicken it up.
Serve it with rice and broccoli or whatever you want.

I love sandwiches as much as I love pizza. We don't make enough in here for my liking, so here's a very special for today.
'Madame Seoul': a croque madame with a little Korean twist... we've made a gochujang bechamel laced with local cheeses, including the amazing Ballinvarrig...this has been warmed up and spooned on to some of Pete Hannan's sugarpit bacon, which I've toasted up in the pan. The final flourish is a baked egg - that PizzaMaster oven can do anything - and the lid of the 'Scallywag' scallion, shaved onion, confit garlic - focaccia goes on.
We only have a few today, but if they go, we'll make it again.
Fair warning, I had to eat my taster bit over the sink. It will ruin whatever you're wearing today. Might need to get the afternoon off, if you cop one for lunch.

🍜 RAMEN WITH TERIYAKI SPAM®️ AND SOY EGGS 🍜
Liven up those bland packet noodles and Keep It Real in the kitchen. I’ve teamed up with @OfficialSPAMUK to show you how you can turn your noodles into a treat for your tongue as part of the official UK SPAM®️ Appreciation Week.
Ingredients
1 tin SPAM®️
2 eggs�120ml water (soy eggs)�6 tbsp soy sauce (soy eggs)�2 tbsp dark soy (soy eggs) �4 tbsp Mirin (soy eggs)�Sealed bag (soy eggs)�1 Star anise (soy eggs)�Ramen packet (seasonings discarded)�500ml bone broth (I used chicken but beef will also work)�2 Spring onions (whites for broth, greens for topping)�1 Red Chilli (sliced for topping)�Crispy onions (for topping)�Drizzle Sesame oil (for topping) �Drizzle Chilli oil (for topping) �2 tbsp Soy sauce
1 Star anise�1 tsp white sugar�2 tbsp teriyaki sauce
Method
- Boil the eggs to your preference. Peel and place in a sealable back. To the bag add the water, soy sauce, dark soy, mirin and star anise. Place in the fridge for at least 1 hour. These will get better over time and are best after a few days!
- Pour the bone broth into a pan. Add the star anise, spring onion whites, soy sauce and sugar. Turn up the heat until it begins to boil then turn to medium and simmer.
- Open up the tin of SPAM®️ and slice to around 1cm thickness.
- Heat some oil in a frying pan over a medium heat then add the SPAM®️. Tour over some teriyaki sauce and brush to coat.
- Whilst the SPAM®️ is cooking, open up your ramen, discard the seasoning and add the noodles to your broth.
- Once the SPAM®️ is cooked on both sides and has a sticky glaze, it’s time to assemble your bowl.
- Pour out the noodles with the broth, cut the eggs in half, add the teriyaki SPAM®️, garnish with spring onion and chillis, add some crunch with fried onions then drizzle with sesame oil and chilli oil.
