Directions:

Ranch-Parmesan Chicken
Ingredients
• 6 boneless chicken breast
• 1 cup dry bread crumbs, (even better, use panko breadcrumbs)
• 1/4 cup (up to 1/3) parmesan cheese
• 1 tsp seasoning salt
• 1/2 tsp (up to 1) black pepper, ground
• 1/2 tsp (up to 1) garlic powder
• 1 cup prepared ranch salad dressing, (use bottled salad dressing, you might need a bit more dressing)
• 1/4 cup butter, melted (no substitutes)
Directions
1. Set oven to 400° degrees (set oven rack to lowest position).
2. Lightly grease a 13 x 9-inch baking dish.
3. In a shallow bowl mix together the dry breadcrumbs with Parmesan cheese, seasoned salt, black pepper and garlic powder.
4. Dip the chicken into the ranch dressing to coat both sides (allow any excess to drip off).
5. Coat in the breadcrumb mixture.
6. Place in a single layer onto a greased baking sheet or line with non-stick foil (do NOT bake in a smaller baking dish or the bottom of the chicken will be soggy).
7. Lightly drizzle the melted butter over each breast (for low-fat option omit the butter or use a diet alternative).

• 1Tbsp.Cornstarch

• Squeeze fresh lemon juice
• 1Large egg beaten
• 2 Tbsp.Butter melted
• ½ C.Brown sugar
• 1 Tbsp+ 1 tsp. Cinnamon divided
Directions
• Preheat the oven to 400 degrees.
• Dice the peaches and add them to a skillet over medium high heat on the stove.
• Mix the cornstarch with the water and add to the skillet along with the sugar. Stir until the sugar is melted, and the mixture thickens.
• Stir in the vanilla, 1 tsp cinnamon and a squeeze of fresh lemon juice.

How to make it :

Instructions:

Hawaiian pineapple cake -Don’ Lose This Recipe 😋
Ingredients
• 18.25 ounce package yellow cake mix
• 40 ounces crushed pineapple drained with juice reserved-- 2, 20 ounce cans
• 3.4 ounce package instant vanilla pudding mix
• 2 cups cold milk 2% fat or higher
• 8 ounce package cream cheese
• 2 cups whipping cream
• 3 tablespoons sugar
• 1 cup flaked coconut toasted
Instructions
1. Drain pineapple, and reserve the juice. Set aside.
2. Prepare the cake according to the packaged directions, using pineapple juice instead of water. Bake in a 9x13” pan. Let cool completely.
3. Once cool, use a wooden skewer to poke holes all over the entire cake.
4. Spread the drained pineapple over the top of the cake and set aside.
5. In an electric mixer, beat whipping cream and sugar until medium-stiff peaks form and transfer into a large bowl.
6. In an electric mixer, beat softened cream cheese until smooth. Slowly add the milk a little at a time, beating until smooth between each addition. Scrape the sides of the bowl frequently.
7. When all the milk has been added, mix in the pudding mix and beat for 2 minutes. Gently fold the pudding mixture into the whipped cream, mixing until combined.
8. Spread mixture evenly over the top of the pineapple. Top the cake with toasted coconut, chill, and serve!

2 large chicken breasts
Breading:
• 4 tbsp Gluten-Free Bake Mix 2, OR almond flour (60 mL)
• 2 tbsp Parmesan cheese, kind in a canister (30 mL)
• 1/2 tsp salt (2 mL)
• 1/4 tsp black pepper (1 mL)
• Garlic Butter Parmesan Sauce:
• 2 tbsp butter (30 mL)
• 3 tbsp crushed garlic (45 mL)
• 11/4 cups chicken stock (300 mL)
• 1 cup whipping cream (250 mL)
• 1/4 cup grated Mozzarella cheese (60 mL)
• 2 tbsp Parmesan cheese (30 mL)
• 1/2 tsp dried cilantro, OR dried parsley (2 mL)
• 2 tsp chopped fresh cilantro, OR parsley (10 mL)
1. Slice chicken breasts in half longitudinally. In small bowl, combine Gluten-Free Bake Mix 2, OR almond flour, Parmesan cheese, salt and black pepper. Using a spoon, spoon mix on both sides of chicken cutlets.
2. In hot olive oil, in large frying pan, place all chicken cutlets and cook on both sides, turning frequently until golden brown and almost cooked throughout.
3. Garlic Butter Parmesan Sauce: In another frying pan, in butter, and over medium low heat stir fry garlic until turning golden. Add chicken stock, whipping cream, Mozzarella cheese and Parmesan cheese along with dried cilantro, OR dried parsley. Cook until cheeses are mixed in well and melted. Add chicken and cook in the sauce 1 to 2 minutes, until the chicken is tender and white throughout when cutting into a piece. Make sure not to overcook the chicken. Check it! Sprinkle with chopped fresh cilantro, OR parsley and serve.

ROASTED SWEET POTATOES
Ingredients:
• 2 tsp olive oil
• 1 tbsp butter
• 3 Sweet potatoes, peeled and cut into bite size cubes
• 1 tbsp of brown sugar (more if you want it sweeter)
• Pinch of ground ginger
• 1 tsp of ground cinnamon
• 1/4 tsp of ground nutmeg
• Sea salt, to taste
Directions:
1. Preheat the oven to 350 degrees.
2. Coat a small baking dish with cooking spray.
3. Peel and dice the sweet potatoes into bite size cubes and place in the baking dish.
4. Melt butter in the microwave and pour over the potatoes along with the olive oil, brown sugar, cinnamon, nutmeg, ginger and salt.
5. Add more sugar or cinnamon if desired. Toss to coat evenly.
6. Bake in the oven for 60 minutes.
7. Stir the sweet potatoes once or twice during roasting.

• 2 eggs
• 1 tsp vanilla
• 3 Tbsp cocoa powder
• 1 tsp salt
• 1/2 c all purpose flour
Instructions
Preheat oven to 350. Cream together butter and sugar with electric mixer until fluffy, about 3 minutes. Add eggs and vanilla and mix well by hand. Add cocoa powder, salt and flour and stir by hand until well combined. Hand mix to make it gooey, because if you use a mixer, it will have more of a brownie or cake texture, rather than """"gooey"""". Recipe
• Peach upside down cake
• 1 (20 ounce) can Slices peaches in heavy syrup(drained)reserve a cup of juice for cake.
• 1 stick 0f butter, melted
• 1/2 cup packed brown sugar
• 1 (9 ounce) package yellow cake mix
add melted butter to pan and brown sugar in 9x13 cake pan or a large cast iron skillet 2 inches deep Place peach slices in sugar mixture.
Prepare cake mix according to the package directions.
Except I use cup of peach juice instead of water.
Pour cake batter evenly over peaches.
Step 4
Bake at 350 degrees F, 35 minutes or until toothpick inserted in center comes out clean.

Old Fashioned Custard Pie
Ingredients
• 1 unbaked pie shell (I use Marie Callendar’s deep dish)
• 3 large eggs
• ½ cup of sugar
• ½ teaspoon of salt
• ½ teaspoon of nutmeg
• 2-2/3 cups of milk
• 1 teaspoon pure vanilla extract
How to prepare :
1. Pre-heat the oven to 350 degrees. Beat your eggs slightly, then add sugar, salt, nutmeg, and milk. Beat well and poor into the unbaked pie shell.
2. Bake for 35 to 40 minutes. Remove from oven and cool. Sprinkle the top of pie with fresh ground nutmeg and serve.

INGREDIENTS
• 2 cups flour
• 2 cups sugar
• 2 large eggs, beaten
• 1 ½ cup peanut butter, divided
• 1 ½ cups (3 sticks) unsalted butter, softened
• ½ cup milk + 2 tablespoons, divided
• 1 teaspoon baking soda
• 1 teaspoon vanilla extract
• 1 teaspoon salt
• 4 cups powdered sugar
PREPARATION
1. Preheat oven to 400°F. Grease a large cookie sheet or line with parchment paper.
2. Mix together dry ingredients: flour, sugar, baking soda, and salt. Set aside.
3. Whisk together ½ cup milk, vanilla extract, eggs. Set aside.
4. In a saucepan, melt 1 cup (2 sticks) of butter and 1 cup peanut butter, bring to a boil. Remove from heat and slowly add flour mixture, followed by milk and egg mixture. Mix until well combined.
5. Pour batter onto cookie sheet, spreading batter evenly to edges. Bake for 20 minutes or until toothpick inserted in center comes out clean. Cool completely before frosting.

Hearty Crescent Roll-Ups with Sausage, Egg, and Cheese
Ingredients:
• 5 eggs
• 1 can (8 oz) Pillsbury™ refrigerated crescent dinner rolls
• 8 sausage links
• 4 slices Cheddar cheese
• Salt and pepper to taste
Directions:
1. Preheat the oven to 350°F.
2. In a small bowl, beat the eggs, reserving 2 tablespoons for brushing on the crescent rolls later.
3. Scramble the remaining eggs.
4. Unroll the dough on a work surface and separate into 8 triangles.
5. Cut each cheese slice in half and place one half on each triangle.
6. Top each with a spoonful of scrambled eggs and one sausage link.

Ingredients
• 1/2 cup butter, softened
• 1/2 cup shortening
• 2 cups sugar
• 5 eggs, separated
• 1 teaspoon vanilla extract
• 2 cups all-purpose flour
• 1 teaspoon baking soda
• 1 cup buttermilk
• 1-1/2 cups flaked coconut
• 1 cup chopped pecans
CREAM CHEESE FROSTING:
• 2 packages (one 8 ounces, one 3 ounces) cream cheese, softened
• 3/4 cup butter, softened
• 6 cups confectioners' sugar
• 1-1/2 teaspoons vanilla extract
• 3/4 cup chopped pecans
Directions
1. In a large bowl, cream the butter, shortening and sugar until light and fluffy. Beat in egg yolks and vanilla. Combine flour and baking soda; add to creamed mixture alternately with buttermilk. Beat just until combined. Stir in coconut and pecans.
2. In a small bowl, beat egg whites until stiff peaks form. Fold a fourth of the egg whites into batter, then fold in remaining whites. Pour into three greased and floured 9-in. round baking pans.

Ingredients:
• 1 pound (500 g) green beans, ends trimmed
• 1/4 cup olive oil
• 2 tablespoons fresh parmesan cheese shredded
• 1 tablespoon minced garlic (or 4 cloves garlic, minced)
• 3/4 teaspoon Kosher salt
• 1/4 teaspoon fresh cracked black pepper
• 1 1/4 cup mozzarella cheese shredded
Instructions:
1. Preheat oven to 425°F (220°C). Lightly grease a baking sheet with nonstick cooking oil spray.

Lemonade Puppy Chow
Ingredients:
• 9 cups Chex cereal (rice or corn variety works best)
• 1 1/4 cups white chocolate chips
• 1/4 cup unsalted butter
• 4 tablespoons lemon juice (freshly squeezed preferred)
• 2 teaspoons lemon zest
• 1/2 teaspoon vanilla extract
• 2 cups powdered sugar
• 1/4 cup lemonade powder (for an extra lemony kick)
Directions:
1. Place the Chex cereal in a large bowl and set aside.
2. In a microwave-safe bowl, combine white chocolate chips, butter, lemon juice, lemon zest, and vanilla extract. Microwave in 30-second intervals, stirring in between, until the mixture is smooth and fully melted.
3. Pour the melted white chocolate mixture over the Chex cereal. Gently stir until the cereal is evenly coated.
