Resident Chippy F. shares with us the good time had by all at the Village 10 Spring Soup Luncheon!

"Village 10 had another successful event on Sunday, March 26th. We ushered in what we thought was SPRING, but Mother Nature decided differently. The weather did not stop the enthusiasm of the Village 10 residents. We had a super great crowd of hungry participants. Our wonderful Villagers provided fabulous appetizers, homemade bread, and "springy" salads. Our Team Members (Barb B., Diane C., Kathy D., Vicki G., Janna L., and Chippy F.) provided six different soups and yummy desserts. It would not be a Village Event if we did not have RAFFLE PRIZES. Seven lucky Villagers went home with a special bag. Once again it was a wonderful way to spend a Sunday afternoon."

Only those seeking fun need apply!

"Are you looking for a new sport that's non-competitive, friendly, and fun? Perhaps you should dive into women's water volleyball! The women's water volleyball group would like to invite all interested women to join the fun. This free class is offered on Mondays at 4 and players need to sign up on the Zen planner as the session is limited to 10 players."

We just love how the Sierra Canyon community is always up for a good time!

Say hello to Peter, Caroline, and Coco Chanel!

"When not working with the local robotics community or RC flying groups, we enjoy trips to see our children, hiking with Coco, sharing food and wine with friends, and road trips. Megan is now a helicopter pilot for the US Navy, stationed in San Diego, CA. Her husband Vince is a marine officer at Camp Pendleton. Nathan moved back to Colorado with his fiancee and now lives outside of Boulder. We finally got a chance to travel to the Cotswolds and Oxford, a trip we planned in Spring 2020, but we were happy to get home to Reno. Every time we go on the road, we come back to Sierra Canyon and realize this is a great place to live."

Italian. Sausage. Stuffed. Mushrooms!!!

This month's Resident Recipe is provided by Julie M., and this is definitely one worth trying!

"I found this recipe for stuffed mushrooms years ago and started making it when I needed an easy dish to bring as an appetizer. The mushrooms, with the addition of sausage, are a very satisfying appetizer and really require no extra seasoning. However, feel free to add additional seasonings like fresh basil, fennel, or garlic. I think any of those would be delicious. The original recipe tells you to discard the mushroom stems, but I love adding them to the stuffing. If you do this, you will get about 30 stuffed mushrooms instead of 24.

Serves 12

24 large whole fresh mushrooms (I use portabella, but white would work as well)
1 pound sweet Italian sausage
2 bunches of scallions, chopped, green parts reserved
1/2 cup grated Parmesan, plus more for topping
1/4 cup breadcrumbs (I typically use panko, but you could easily use Italian breadcrumbs)
1/2 teaspoon kosher salt
1/4 teaspoon freshly cracked black pepper

Preheat the oven to 350 degrees F. Grease a sheet tray or line with parchment paper.

Clean the mushroom caps with a damp paper towel. Carefully break off the stems and, using the tip of a small spoon, hollow out the center of the mushrooms. Cut up the stems to use in the stuffing.

Heat a large skillet over medium-high heat. Brown the sausage, breaking it up. Transfer the cooked sausage to a paper towel-lined plate to drain and cool.

Add the white chopped scallions and chopped mushroom stems to the skillet with the oil left from the Italian sausage. Cook for 2-5 minutes til onion is soft. Add this mixture to the sausage and cool.

When the sausage and scallion mixture is no longer hot, stir in the Parmesan, breadcrumbs, salt, pepper, and softened cream cheese. The mixture should be very thick. Using a small spoon, fill each mushroom cap with a generous amount of the stuffing. Top with additional Parmesan. Arrange the mushroom caps evenly on the prepared sheet tray.

Place in the oven and bake until the mushrooms are hot and liquid starts to form under the caps, 20-30 minutes. I like to make sure the mushrooms are actually cooked through rather than just heated through.

Garnish with the reserved chopped green scallions."

A 10 day trip in Costa Rica on a marvelous tour with friends and neighbors left one traveler saying, "Thank you so much for coordinating the most wonderful vacation of my life.โ€

Resident Lisa R. shares her experience with Reno Direct and how helpful it has been!

"Here at Sierra Canyon, our streets are maintained by The
City of Reno. I live on a cul-de-sac and my street was not
being plowed during snowstorms. On January 3rd, after
waking up to about a foot of snow, it was time to act. I
went to Reno Direct's website and filled out an online
service request. Within an hour, a snowplow magically
showed up and cleared my street. From that day onward,
every time it snowed enough to warrant plowing, a
snowplow or two showed up on my cul-de-sac. A squeaky
wheel gets the grease!

Reno Direct is a non-emergency service center and
assists with City government service requests
and general information. Whether you're reporting an
abandoned vehicle or graffiti, or looking for the City of Reno
information, contacting Reno Direct will ensure that your
request, suggestion, or issue is addressed by the
appropriate department.

You can submit an online request as I did at
renonv2016.qscend.com or call 775-334-4636 on
weekdays from 9 a.m. - 4 p.m. to report an issue.
When I lived in a different neighborhood of Reno, near
Mae Anne and Robb Drive, someone dumped a mattress
in the open space. That time I called Reno Direct and the
mattress was removed that day!

Another time I reported some sidewalks that were lifting
and dangerous. City workers came out and spray-painted
the lifted sidewalks and fixed them within a few months.

There are over 100 reportable issues on Reno Direct's
website and it's good to know that help is just a click or
phone call away!"

"On a lovely sunny day, on the last day of April, Village 3 sponsored a Sip and Paint party. Twenty-four women, and one brave man, attended this fun get-together. People from other villages also joined in the fun of painting a tranquil Lake Tahoe scene using acrylics. Two representatives from Picasso and Wine helped us with our creations by telling us what paint colors to mix together and showing us how to paint the different features. We had a lot of laughs and enjoyed the tasty appetizers the participants brought. Some people also brought wine. Not everyone can be an artist, and our efforts varied, but all in all, everyone created a good reproduction. One group jokingly said they were planning to sell their paintings at the upcoming community garage sale. Everyone had a good time and as a result, Village 3 is considering hosting this event again next year. Maybe youโ€™ll join us."

Stuffed Spaghetti Squash With Spinach and Parmesan Cream Sauce...need we say more?!

Resident Julie M. provides this delectable recipe for a healthy dinner!

I really enjoy spaghetti squash and was looking for a recipe that would be a meal. I found this online and decided to try it. Not only was it easy, but it was delicious! I made a few adjustments to the recipe. I added more spinach and I finished the squash off with breadcrumbs that I had toasted in butter to give the dish a little texture.

Preheat oven to 400ยบF.
One medium spaghetti squash, cut in half lengthwise
Lightly oil the cut side of the spaghetti squash with avocado or olive oil and place face down on a baking sheet. Roast until easily pierced with a fork, about 40 minutes. Cooking time will vary a bit depending on the size of your squash. Let cool until you can easily handle it. Using a fork, fluff up the strands of squash so it looks like spaghetti, but leave it in the skin.

While the squash roasts, start on the sauce.
Olive oil
2 1 / 2 tablespoons minced garlic (I used less garlicโ€”add as much as you like)
5 ounces chopped spinach (I used almost double that amount)
1 / 2 cup heavy cream
1 / 2 cup freshly grated Parmesan cheese, plus more for the top
1 tablespoon cream cheese
Salt and Black pepper
Grated Mozzarella cheeseโ€”about one cup

Heat a drizzle of oil in a medium skillet or pot on medium-high. Sautรฉ garlic until fragrant, about 2 minutes. Add the spinach and stir until wilted. Mix in cream, Parmesan, and cream cheese. Stir well. Season with salt and pepper and remove from heat.
Pour sauce over each squash half, stir to mix, and top with some shredded mozzarella cheese and additional Parmesan cheese.
Bake the squash halves on a baking sheet at 350 degrees for 20 minutes, until hot and bubbly. At this point, I added toasted breadcrumbs and put the dish under the broiler until the top was lightly browned.

Feel free to add chicken or pork if you'd prefer a meat dish. Stir it in the sauce or serve it on the side.
