We absolutely love hearing from our readers and especially seeing what you have created! This comes in from Farmer Jen Organics:

"Thank you for your inspiring article about setting a sustainable holiday table. It inspired me to use items I had at home and in my edible gardens to decorate my Thanksgiving table. Such wonderful ideas in your article!
We also had fun at the school where I teach - MUSE Global School CA - as my 7th graders made a "sustainable" table piece for our main school building. We gathered items from all around our campus food gardens to make it. Funniest part is that I notice people adding items to the centerpiece every week! Now it has dried corn husks and pine cones!"

Thank you so much for reading and sharing your inspiring tables!

Sick of turkey sandwiches and plain old leftovers? Turn your leftover turkey, gravy and side dishes into a beautiful pot pie!
Simply make (or purchase) a flaky pie crust, then in a large saucepan, heat chopped turkey, chopped green bean casserole, chopped potatoes and enough leftover gravy to coat it all until heated through. Throw it all in a glass or ceramic 9 x 13 inch dish and cover with the pie crust. Cut holes and bake at 350 degrees F for about 40 minutes or until crust is golden.

Find a simplified recipe for this and pie crusts at this link:

We are a society increasingly reliant on big business for convenience and ease of shopping. But did you know that if small businesses become extinct we all fail? According to the US Small Business Administration, 48% of Americans are employed by small businesses. Shopping locally helps our economy, our friends and families and keeps small businesses in business!
Where will you shop locally today?

RECIPE ALERT: Coconut Ginger Salmon with Curried Rice Noodles and Vegetables
“We must leave the environment in the same or better shape than when we began.” -Alf-Gøran Knutsen, CEO
While we are local by design, on occasion, when local isn’t available, we look outside of our 100-mile circle to find the best quality product from companies that share our philosophies.
In California, both recreational and commercial salmon fishing has been banned for the remainder of 2023 in order to allow the salmon population to recover. For those wanting to increase dietary protein with a rich source of Omega-3 fatty acids (great for heart health, muscle repair, brain health, etc.), it is time to find an alternate source of the high-quality fish.
Through our Edible Communities connection, we discovered Kvarøy Arctic, a third-generation family salmon farm in a clear, cool deep-fjord in the breathtaking Arctic Circle. The combination of location and a deep commitment to transparency and sustainability in all aspects of the business convinced us to give Kvarøy Arctic Salmon a try! (Check out their FAQ linked in our recipe).
In this recipe, we combined the fresh fish with a coconut ginger curry sauce that highlights the clean pristine flavor, and then added a sweet tamari sauce to balance the savory for a perfect bite.
Find this recipe and learn more about where you can purchase Kvarøy Arctic Salmon at the link in our bio.

Holy delicious summer dessert, Batman!
We stopped in at the to reload their magazine stock today and stopped by to chat with our friend Joni . She had us try a lime basil she had just harvested and we immediately bought the bunch! Oh my yum!
We bought ripe peaches and nectarines across the street and made this quick dessert after a light summer dinner.

Iđź‘ŹCAN'T đź‘ŹSTOPđź‘ŹEATINGđź‘ŹIT!!!

So here you go, so you can become addicted with me:

Serves 1 (maybe double it)

1 ripe freestone peach or nectarine
1 tablespoon of LIME basil, slivered
1 lemon wedge
A pinch of granulated sugar (optional)

Cut the fruit into bite sized pieces. Add to a bowl with basil, then squeeze the lemon wedge over the fruit. Add a tiny pinch of granulated sugar and toss.
Go ahead, see if you don't want to make another bowl!
