4 Traveling Tips When Plant-Based
It’s easy to use traveling as an excuse to stop nourishing your body. Wellness is a lifestyle so traveling or not I like to keep commitments to myself. I just feel better about myself when I do so.

My top 4 traveling tips when plant-based!
🌱Download the Happy Cow app. This app will be the best $4 you ever spent! It will tell you where the nearest plant based restaurants, juice bars, clean eating, etc. is nearest you anywhere in the world!! Wow have I eaten at some amazing places all around the world using this app! This app also finds vegan friendly spots to accommodate all diet lifestyles if your not traveling alone.
🌱Look up local farmers markets. I’ve attended amazing markets in Central America, Seattle, Canada, California, etc.! Just google local farmers markets or ask the locals. I like to keep fresh fruit on deck to snack on in my room!
🌱As soon as you get settled find the local health food stores or Co Op’s. This is one of the first things I do! I load up on spring water for my hotel/air b n b room. Plus if I forget toothpaste or body care essentials I can still purchase clean body products and not sacrifice quality.
🌱Bring your herbal teas, Yesssss! This has saved my digestive health when traveling, saved me countless times when I or a loved one got sick or caught a bug while traveling, and also helped me relax from traveling stress.

Strawberries
Blackberries
Wakame (or sea vegetable)🌱

Amaranth grain (cooked)🌱
Chia seeds
Ginger root
Pitted Dates (or honey/agave)

Place ingredients in vitamix blend then serve!

My Signature nut paté recipe!
Dense nutrition & quick energy! This recipe is simple, extremely versatile, and delicious! I call it the busy persons recipe!
Make enough to last for several days and store it in an air tight container in the refrigerator. Then you can easily put together a meal the next day or take it to work with you for lunch.
Key ingredients
🌱Nuts
🌱Herbs
🌱Spices
🌱Fresh vegetables
Ways to eat nut paté
✅Stuff an avocado or bell pepper
✅Spread it on crackers or veggies
✅Fill collard wrap or lettuce cup
Recipe:
2.5 cups almonds (soaked for 6-8 hours. Nuts should be completely dry before start)
1 tsp juice from lime
4 cups of fresh greens of your choice(sunflower sprouts, basil, romaine, spinach, dill, cilantro)
1/2 cup pitted Kalamata olives
1 bell pepper
1/4 cup fresh leeks chopped
1/2 poblano pepper
1/4 yellow onion
3/4 garlic bulb
1/4 Jalapeño (to taste)
Dry seasonings:
Smoked paprika
Pink Himalayan salt
Black pepper
1. Run soaked and dried nuts through Omega juicer/ food processor
2. Put nuts through Omega again alternating other ingredients
3. Put full mix through Omega one more time
4. Hand stir in seasonings to taste
5. Stuff, fill, or spread the nut paté on your desired food item
6. Refrigerate leftovers. Can last up to 4 days in sealed glass container.

Recipe
Ingredients:
1 cup amaranth grain
3 cups cups filtered water
2-3 tsp Agave ( honey optional)
2 tsp Nutmeg OR vanilla
1 tsp Cinnamon
Pinch of pink Himalayan salt (optional)
Toppings:
1/2 cup blueberries (or sliced apples)
1 ripe banana sliced
1/3 cup walnuts
Sprinkle of raw coconut (optional)
Method:
Bring to a boil 3 cups filtered water. Add in 1 cup amaranth grain. Reduce heat to low and simmer for 15-20 minutes (stir occasionally). Remove from heat and let sit 5 minutes.
After 5 minutes add the rest of the above ingredients then add toppings and serve. Enjoy!

My Signature Creamy Tomato Soup!
You will love how the flavors combine for a wonderfully rich taste and texture. Full of flavor and veggie-packed goodness! Rich, creamy, wholesome, filling, simple! Enjoy!
2 large red bell peppers
2 pints cherry or plum tomatoes
1.5- 2 cups walnuts (soaked for 6 hours then drained)
1 carrot
1 small tomatillo
2 tsp olive oil
1.5 tsp juice from lime
3 cups filtered water (add more for thinner consistency)
1 whole garlic
1/2 sweet onion
1/2 bundle green onion
Seasonings to desired taste:
Dried Italian herb mix (oregano, garlic, basil, sage, etc.)
Pink Himalayan salt, cayenne pepper, black pepper, turmeric
Place fresh whole ingredients in Vitamix power blender and blend until creamy consistency.
Next place mix stove top in a large pot on medium heat. Add dried seasoning to taste and stir. Cook on medium heat for 10 minutes then serve!
Garnish soup with fresh chopped cilantro!
