Sweet Chili Coconut-Lime Grilled Chicken with Coconut-Lime Cauliflower Rice

Ingredients:
• 3/4 cup unsweetened light coconut milk, divided (3 healthy fats)
• 2 tsp Frank’s Red Hot sweet chili sauce (4 condiments)
• 2 Tbs lime juice, divided (6 condiments)
• ¼ tsp salt (1 condiment)
• ½ tsp pepper (1 condiment)
• 36.4 oz chicken breasts~Yields 28 oz cooked (4 leaners)
• 6 cups (21.12 oz) riced cauliflower (12 greens)
• 1 teaspoon canola oil (1 healthy fat)
• 1/4 cup fresh cilantro, chopped

Directions:

1. Combine 1/2 cup coconut milk, sweet chili sauce and 1 1/2 tbsp lime juice in a large Ziplock bag. Add salt and pepper then squish to combine. Add chicken breasts then marinate for 30 minutes - 1 hour in the refrigerator.

2. Preheat grill to medium-high, making sure grates are well greased. Grill chicken breasts for 4-5 minutes on the first side, then 3-4 minutes on the second side, depending on how big they are and how well done you like them. Remove to a plate to rest for 5 minutes.

3. Meanwhile, heat coconut oil in a very large skillet over medium/medium-high heat (6 out of 10.) Add cauliflower, season liberally with salt and pepper, and then saute until tender, 5-7 minutes. Add remaining lime juice (1/2 tbs) then add 3-4 Tablespoons coconut milk, depending on how coconut you want it. Add cilantro then stir to combine. Scoop onto plates then top with chicken.

Ingredients:
½ tbsp. minced red onion (1/2 condiment)
1 tsp lime juice (1/2 condiment)
1/8 tsp kosher salt (1/2 condiment)
¼ tsp freshly ground black pepper (1/2 condiment)
1 tsp olive oil (1 healthy fat)
7 oz can chunk white albacore tuna drained of water (1 leanest)
1/4 cup (1.59 oz) red ripe tomato, finely diced (1/2 green)
2 tbsp. chopped cilantro
1/4 cup (.88 oz) jalapeño, minced (keep seeds for spicy) or you can use pickled (1/2 green)
3 drops Tabasco sauce (optional)

Crock Pot Chili
Ingredients:
25 oz cooked 93% lean ground beef (5 Leans)
2 cans (14.5 oz each) Great Value Italian diced tomatoes (7 Greens)
1/2 cup Great Value natural tomato sauce (2 Greens)
1/2 cup water
1/2 cup green peppers, diced (1 Green)
1/2 tsp garlic powder (1 Condiment)
1 1/2 tbsp. chili powder (8 Condiments)
1 tsp cumin (2 Condiments)
1/2 tsp black pepper (1 Condiment)
3/4 tsp salt (3 Condiments)
1 packet splenda or stevia - optional (1 Condiment)
Directions:
Combine all ingredients in a crock pot.
Cook on LOW for 8 hours.

National Pistachio Day

Pistachios arrived in the United States sometime in the 1880s, but they have been cultivated in the Middle East since Biblical times.

The pistachio tree grows to about 20 feet tall needing little or no rain and must have high heat. Amazingly, in Iran, they claim to have 700-year-old pistachio trees! A new tree takes between 7 and 10 years to mature and bear fruit.

Pistachio Facts:

All pistachio shells are naturally beige in color. Some companies dye nuts red or green if nuts are inferior or for consumer demand.

California produces about 300 million pounds of pistachios each year, accounting for 98 percent of America’s production.

Pistachio shells typically split naturally when ripe.
The kernels are often eaten whole, either fresh or roasted, and either salted or unsalted.

In the Middle East, people call the pistachio the smiling nut.

In China, people call the pistachio the happy nut.

Cauliflower Nachos

Makes 4 servings
Per serving
Makes ¼ protein serving
2 vegetables
3 condiments
2 fats

4 cups cauliflower, chopped
2 tbsp. plus 2 teaspoons extra-virgin olive oil
1 tsp. kosher salt
1/2 tsp. cumin
1/2 tsp. paprika
1/4 tsp. chili powder
1/4 tsp. garlic powder
4 oz 2% Colby-Jack, shredded
4 Tbs Salsa, for serving
2 Tbs Pickled Jalapeños, for serving

Directions
Preheat oven to 425 degrees F.
To a large baking sheet, add cauliflower. Drizzle with olive oil. Sprinkle all over with salt, cumin, paprika, and chili powder. Toss to coat. Roast for 35-40 minutes until golden and crispy.
Top with Colby-Jack cheese and return to oven until melted, 5 minutes more.
Garnish with your salsa, guacamole, and pickled jalapeños.

Buffalo Cauliflower with Blue Cheese Dip

Ingredients:

For the buffalo cauliflower:
* 3 1/2 cups (12.32 oz) cauliflower florets (7 greens)
* 4 tsp olive oil (4 healthy fats)
* 1/4 teaspoon kosher salt (1 condiments)

For the buffalo sauce:
* 1 garlic clove (1 condiment)
* ¼ cup Frank’s hot sauce (4 condiments)

For the blue cheese sauce:
* 12 oz non-fat greek yogurt (1 leanest)
* 4 tbsp blue cheese crumbles (4 condiments)
* 1/4 teaspoon kosher salt (1 condiment)
* 1/4 teaspoon garlic powder (1/2 condiment)
* 1/4 teaspoon ground pepper (1/2 condiment)
* 1/2 cup (1.78 oz) Celery (1 green)

Directions:
Preheat the oven to 450°F.
Clean and chop the cauliflower into large florets (for easy dipping). In a bowl, combine the cauliflower with the olive oil and kosher salt. Spread the cauliflower on a baking sheet and bake for 30 to 35 minutes or until browned, turning once, until slightly blackened.
When the cauliflower is almost done, make the buffalo sauce: Finely mince the garlic. In a small saucepan, Add the garlic, then stir in the hot sauce and stir until combined, about 1 minute.
If using, make the blue cheese dip: In a small bowl, combine the yogurt, blue cheese crumbles, garlic powder, kosher salt (or to taste), and fresh ground pepper.
When the cauliflower is done, remove from the oven and mix with the desired amount of buffalo sauce (to taste). Serve with blue cheese dip and celery sticks.
