The mushrooms don't stop!

With so many myths regarding mushrooms. It's easy to feel nervous about picking and eating a wild one.

*Make sure you carry a mesh bag, so the spores can travel as you harvest* MYTH

Mycelium is under us everywhere and is the most prolific lifeform on the planet. It doesn't need your help in that way. So pick away. I commonly stash them in a backpack or small sack while on the trails.

*Make sure you cut the mushroom at the base to ensure you aren't hurting them and they will grow back* MYTH

The Mycelium network under the soil is what the fruiting bodies[mushrooms] sprout from. Ripping the entire mushroom up isn't killing the network under the soil. So harvest away as best you can.

Mushrooms are super unique, in the fact that they breathe oxygen, and exhale carbon dioxide. They are very much alive, and should be ingested by everyone for the nutrient density and medicinal properties alike. We are fortunate to have a plethora of wild natives that seasonally flavor your food as well as sustain a healthy body and mind.

Fresh foraged Elderberries made into a simple syrup. Get all of the antioxidants in any method of consumption. From tea to fruit and especially cocktails, elderberry syrup is extremely beneficial medicinally, as well as being a choice native edible.

Native Pawpaws are out in full swing and
Same with Native Elderberries!
Search by rivers and streams for the easily recognizable large oval leaf of the pawpaw. You'll see the green clusters of fruit ripening from now until September. Beat the deer and harvest some for yourself! Wash in warm water for 20 minutes to get rid of the common fungus that rots pawpaws quickly. You can refrigerate for weeks. Or mash the ripe pulp and freeze for later use. Tastes of sweet custard.
The Elderberries are commonly confused with Missouri Native Poke, which is NOT EDIBLE UNLESS PREPARED CORRECTLY. Both plants elderberry and poke are very easy to distinguish once you see them. ID safely and get to hunting!

Duck broth for another snowy day!
This week we will be recording another podcast and I will talk about how to maximize your grocery potential in these days of inflation and low inventory. After having seared duck breasts for dinner, various remnants were simmered along with Missouri foraged Oysters, and chicken of the woods mushrooms. Salt, pepper, and wild allspice berries also foraged from local conservation areas, lay a natural seasoning that will be an excellent base for soups, sauces, and stews.

Get creative with minimal ingredients!
Bread flour
Brown sugar
1 packet yeast
Water
Pinch salt
Spices[cinnamon, clove, allspice, nutmeg, ginger, turmeric]
Little olive oil

Preheat oven with cast iron inside, to 450'
After 20 min, slide in fermented dough, slightly floured into pan and cover and bake for 30 min.
Uncover, bast if desired, and continue to cook uncovered for 10-15 min.
Pull to desired color/crispness and let rest with towel on top on cooling rack.
Wait at least 10 min to slice
