Arroz Caldo || I think I’ve posted it before but this is my go-to meal when we’re sick. This time I used homemade chicken broth and rotisserie chicken. And I also got to use my egg cooker to make this perfect medium boiled egg.

I haven’t been this sick in a long time so I could barely taste the food when it was time to eat. 😅

This week sucked. There’s really no other way to describe it. 😂

I’m on my period which is usually a low time for me mentally, emotionally and physically. I’ve been in bed more times than I can count, I’ve lost my temper so many times, I’ve been feeling touched out almost every day and it’s been a struggle to keep up with the house work.

It’s easy for me to dwell in what I did wrong and internalize that. But I’m grateful that I have a husband who always has my back and is there to remind me to be gracious with myself.

Just a brief moment of transparency in how it’s like being a mom while on her period. 😂

Longganisa, eggs, rice and cucumbers drizzled with olive oil and balsamic vinegar || You CAN have a balanced high protein Filipino breakfast! Asians love rice, but Filipinos are notorious for the amount of rice they eat. We eat a TON. 😂

So when I’m trying to watch my blood sugar, I make sure to pair my rice with a ton of protein, veggies and fat! I also try to stick to 1/2 cup of rice as much as possible. Another thing I’ve been doing sometimes is mixing rice and quinoa together since quinoa has fiber and protein!

I was recently diagnosed with prediabetes and insulin resistance. No surprise there since diabetes runs in our family and during my second pregnancy, I was diagnosed with gestational diabetes.

My doctor recommended metformin, but I asked her if I could try and bring my blood sugars down through diet and exercise first and she agreed!

So I’ve been upping my protein intake, adding fiber to every meal, and trying to move my body more.

Note that I still have carbs and treat myself to an occasional boba or tea, but I’m trying to be more intentional with balancing them out with other things to prevent my blood sugar from spiking!

Let’s talk Kindle and the Libby app!

Threeish years ago, I decided to try the Kindle again. I was gifted one in college, but didn’t get to use it that much. But after a friend of mine bought a Kindle and told me about the Libby app, I was curious.

Since I wasn’t sure I was going to use it, I got the base model with ads - it was the most affordable out of all the Kindles. Then I downloaded the Libby app!

Libby is basically connected to your local library’s collection of ebooks (yes, you will need a library card). You can borrow books for free, put them on hold, and the app also automatically returns the book for you! (If you need more time and can’t extend the due date, DM me or comment and I have a Libby/Kindle tip for you!)

Aside from being able to read books for free, I can easily fit my Kindle in the diaper bag or my purse without it being bulky. I can also read even when the lights are out. And yes, it’s different from reading ebooks in your phone or iPad because the Kindle’s backlight is different and more gentle to the eyes.

Plus, if you ever want to upgrade your Kindle to a better version (like me), you can always trade your Kindle in and get a discount!

So yeah, hope that’s helpful to all my fellow book lovers who aren’t sure if the Kindle is worth it!

Happy Valentines Day!

I just finished Queen of Shadows last night and I’m loving this series! After reading Heir of Fire, I was beginning to get all the hype. It’s definitely very different from ACOTAR. But I love the world building and the characters!

Aaaannnddd now I’m in Empire of Shadows BUT!!! Apparently, because Empire of Shadows and Tower of Dawn happen at the same time but in different places, fans highly recommend reading them in tandem. So that’s what I’m doing and since I have a Kindle, it’s a little bit harder to flip through pages so I had to write them down on sticky notes. 😂

Kicked off the New Year with an Ali Hazelwood romance!

Okay just a tangent but do you ever read a book or a series but it’s dragging too long so you just skip on to the good parts to get the gist of the story? I did that with Jennifer Armentrout’s Flesh and Fire series because Sera’s inner monologue was just too much for me. So I finished the series in a few days but does that count towards my books for the year? LOL.

ANYWAYS, I loved Ali Hazelwood’s The Love Hypothesis and was surprised that I loved this one too! Gave me all the feels and I was also so happy to see a cameo from Olive and Adam.

It’s been awhile since I posted! Daniel’s been working overtime hours lately so we’ve all been tired and overwhelmed and struggling to catch up with house work.

This weekend we’ve all been feeling under the weather so today, we’re staying at home to rest and recuperate.

Bruschetta || Super simple appetizer that’s perfect for holiday parties! I spread pesto on slices of French Baguette, popped it in the oven. I then chopped some tomatoes and seasoned them with garlic powder, salt, pepper and olive oil. Added that on top of the bread slices after getting it from the oven and then balsamic glaze on top of everything!

Super delicious and refreshing! Even better if your pesto is homemade!

It’s 23 days until Christmas and I’m so excited! Christmas is our favorite holiday and it’s such a magical time of the year.

In the Philippines, we start celebrating the holiday season as soon as September hits. So Christmas is a big deal in my culture.

This year, we’ll be celebrating in our new home. And my family from the Philippines will be flying here to Alabama for the first time!

REREAD || I finished Iron Flame a few days ago and honestly, I haven’t fully recovered so I’m rereading my favorite parts of the first three ACOTAR books before I dive back in to my TBR list.

Also, 38 more days until Christmas!!! Who is excited???

I was supposed to make tacos dorados for dinner tonight, but didn’t feel like cooking and so today was basically “fend for yourself dinner”.

And then after eating, my husband made guacamole and I baked cookies while the kids sat on the counter and chilled while snacking on the goodies. ❤️

Happy Monday!

Last weekend we were just at home since I was feeling under the weather. But I am feeling much better today and all ready to tackle the week!

After doing our own thing for school the past few weeks, we’re jumping back into our Playing Preschool curriculum! And this week we’re going to learn about Construction!

I ordered a construction truck set for the kids that’s supposed to arrive tomorrow and I’m excited for them to use it for their sensory bin.

Other than that, today is laundry day. Boooooooo…

Summer is over but the kids are outside playing with an ice sensory bin since this is one of the last days it’ll be about 70 degrees.

Been feeling under the weather so I’m curled up in a cozy blanket while reading a book that’s giving me all the summer feels. ❤️

Me: When we move to our house, our rule is no toys in the living room. You can play in your bedroom, the homeschool room, the hallway, whatever. Just keep the living room clean.

Happy Monday! We had a restful weekend hanging out with family and so today, we’re trying to ease back into things.

For the past couple of weeks, clean laundry has just been piled on our bedroom floor unfolded so I’m determined to tidy that up today plus do more loads and put those away too (hence the step by step laundry to do list). LOL. We’ll see how it goes. 😉

School will be more game focused today to get the kids excited and then hopefully, they can play outside later.

Happy Monday!

We had a great and restful weekend and ready for the new week!

Today, we are easing into the school week with simple activities that encourage math skills.

R is doing her number puzzles that will help with counting and number recognition, while A is playing with his coin piggy bank that has English and Spanish counting songs and helps with fine motor skills too!

I am a big believer of learning through play and so I try to incorporate more hands on activities to help the kids with school.

Huaraches! || I rarely make this because it’s time consuming, but when I do it is BOMB. Made homemade carnitas (I’ll share my recipe someday) and homemade refried beans to top it with plus some lettuce, sour cream, shredded cheese, and salsa. To make it even better, use Mexican Crema and Queso Fresco instead. Next time we’ll also use homemade salsa. ☺️I wanted to show the whole process of making it plus adding the toppings but I lost the phone mount for my tripod and had to do everything with one hand while holding my phone with the other. Plus my son was having a meltdown so my husband and I were taking turns trying to calm him down. Probably my most favorite purchase for homeschooling is our IKEA FLISAT sensory table. It’s so popular that it’s always out of stock at IKEA. It literally took me months to get one. I was constantly checking for it online and had notifications set up. The struggle was real guys. 😂Anyway… I love it because it’s so versatile. The top of the FLISAT table has two lids which you can take off and replace with the TROFAST bins insteas. These bins can be used for storage, a water table, paint palette, sensory bin, playdoh bin, mud kitchen, you name it!I love that the kids can do sensory bin activities and the table makes it easier to hold everything in as opposed to putting the bin on top of a table. And I’ve also seen that so many people on Etsy make extra accessories for the FLISAT table like a lid with a race track on it, a lid with a play kitchen, a lid with holes for pompoms to help with fine motor skills, a light table etc. Literally so many uses!Do you have the FLISAT table?
