STEAK AND MUSHROOM SHEET PAN FAJITAS
1 large hanger steak, thinly sliced
1 lime, juiced
2 Tbsp. Tequila
2 tsp. honey or agave
1 1/2 tsp. soy sauce
1 Tbsp. Mexican seasoning blend, divided
2 large portobello mushrooms, sliced
1 bell pepper, sliced
1 poblano pepper, sliced
1 small red onion, sliced
1 Tbsp. olive oil
Tortillas and choice of toppings, for serving
Preheat oven to 500F. In a bowl, add steak, lime, tequila, honey, soy sauce, and half of the seasoning blend; toss to combine and set aside.
On a large sheet pan lined with foil, add vegetables and toss with olive oil and remaining seasoning. Spread in an even layer then add steak to the sheet pan, pouring any excess marinade over the vegetables. Cook in preheated oven until slightly charred, about 10 minutes. Serve with warm tortillas and choice of toppings.

one pot chicken tortellini soup (instant mashed potatoes are a beautiful gift from above)
ONE-POT CHICKEN TORTELLINI SOUP
1 rotisserie chicken, shredded
9 oz. refrigerated tortellini
2 cups fresh spinach
1/2 pint cherry tomatoes, quartered
1 (4-oz.) package instant mashed potatoes
2 tsp. Italian seasoning
2 tsp. garlic powder
4 cups chicken broth
2 cups whole milk
1 cup water
Handful of torn basil (optional)
In a large pot, add all ingredients. Bring to a boil over high heat then reduce to medium-low heat and let simmer for 10 to 15 minutes, until thickened. Taste and season with salt and pepper as necessary.

extended evening hours at magic kingdom are absolutely worth it! epcot, not quite as much. you get access when you stay at a deluxe resort (or swan and dolphin which usually has lower rates)

Green Chile Chorizo Enchilada Casserole
1 lb. Mexican chorizo
1 onion, chopped
1 poblano pepper, chopped
1 (4-oz.) can diced green chiles
1 (16-oz.) jar salsa verde
2 Tbsp. chopped fresh cilantro, plus more for garnish
6 corn tortillas, torn into pieces
8 oz. pepper jack cheese, grated
Preheat oven to 450F. In a large oven-safe skillet over medium heat, add chorizo and cook until browned and crumbled, about 7 minutes. Add onion and poblano and cook for 2 mote minutes, then stin in green chiles, salsa verde, 1/3 cup water, cilantro and tortillas. Let simmer for about 3 minutes then remove from heat and cover with cheese. Bake in preheated oven until browned and bubbly, about 20-25 minutes. Garnish with more cilantro and serve.

avocado chicken salad sandwiches 🫶
Recipe:
2 avocados, pitted and peeled
1 lemon, zested and juiced
1 Tbsp. extra virgin olive oil
1 tsp. seasoned salt (or regular salt)
3/4 tsp. garlic powder
1/2 tsp. black pepper
1/2 small red onion, finely chopped
2 Tbsp. chopped fresh parsley
1 rotisserie chicken, diced
In a large bowl, add all ingredients except chicken. Whip using a hand mixer until very smooth then gently stir in the chicken until well combined. Store in refrigerator covered tightly with plastic wrap until chilled, up to overnight.

CHEESY CHIPOTLE CHICKEN SPAGHETTI
1 (12-oz.) can evaporated milk
2 chipotles in adobo sauce (more if you want it a little smokier and spicier)
3 garlic cloves
8 oz. Spaghetti
3 Tbsp. butter or oil
1 lb. boneless skinless chicken breasts, cut into bite-size pieces
2 tsp. Cajun seasoning (or your favorite seasoning blend, or just use salt and pepper)
1 bunch scallions, sliced (reserve green tops for garnish)
1 small bell pepper, chopped
1 1/2 Tbsp. all-purpose flour
1 (14.5-oz) can diced tomatoes with green chiles
8 oz. Cheddar cheese, shredded
In a small food processor or blender, pulse together evaporated milk, chipotles and garlic cloves until smooth; reserve for later. (You can also finely chop the chipotles and garlic and stir into the evaporated milk.)
Bring a large pot of salted water to a boil and add pasta. Cook until al dente, about 8-10 minutes; reserve 1 cup of pasta water before draining.
Meanwhile, in a large, straight-sided oven-safe skillet over medium heat, melt butter or add oil. Add chicken; season and cook for about 2 minutes. Add scallions and bell pepper and cook for another 5 minutes, stirring frequently. Add flour and stir for another minutes; then add the evaporated milk mixture, reserved pasta water and can of tomatoes. Bring to a boil then reduce to a simmer for 5 minutes while you preheat the broiler to high.
Turn the heat off the skillet and stir in half the cheese along with cooked spaghetti. Cover with remaining cheese and broil for 3-5 minutes, or until cheese is slightly browned. Garnish with remaining green onions.

BAKED BUFFALO RANCH CHICKEN BREASTS
4 oz. Parmesan cheese (about 1/3 cup grated)
5 oz. bag croutons
1 Tbsp. ranch seasoning
2 eggs
1 cup Buffalo hot sauce, divided
4 chicken breast cutlets
Cooking spray
Chopped fresh parsley, for garnish (optional)
Preheat oven to 425F. In a food processor, pulse together parmesan, croutons and ranch seasoning; transfer to bowl.
In a large bowl, whisk together eggs with 1/4 cup of the hot sauce. Add chicken to the bowl and drip off any excess egg before coating each in the breadcrumb mixture. For a sturdier breading, repeat again for a double coating.
Line a sheet tray with aluminum foil and spray with cooking spray. Place chicken on the tray and spray to top with cooking spray. Bake until golden brown, about 20 minutes. Brush with remaining buffalo sauce and bake for another 2-3 minutes. Garnish with parsley, if using.

25-CLOVE PASTA
1/3 cup extra virgin olive oil
25 garlic cloves, peeled
1/2 tsp. red pepper flakes
1 pint cherry tomatoes, halved
1/2 cup white wine
1/3 cup heavy cream
1 lb. fusilli or penne pasta
1/2 cup grated Pecorino Romano cheese
In a large pot over medium-low heat, add olive oil and garlic cloves. Let cook for about 5 minutes, until just lightly toasted. Add tomatoes and red pepper flakes; cook for another 2 minutes before pouring in the wine. Turn heat up slightly to medium and let simmer for about 20 minutes, or until tomatoes have broken down and garlic is slightly softened. Add heavy cream and blend until smooth; taste and season with salt and pepper as needed.
Meanwhile, cook your pasta in boiling salted water; reserving at least 3/4 cup of the pasta water before draining. Over low heat, add pasta to the pot with the sauce along with reserved pasta water. Stir in the cheese and serve immediately.
