Two weeks ago I posted about the professor who ordered food for her students because they were having a faculty brunch. I gave it my best you remember the pictures. It took me days of planning to achieve a perfect taste for all the dishes made. ❤️✅🙏
This opened a window for another order. This time, a group of students want me to both cook and teach them on how to make the Nigerian jollof rice. She was like; they really loved the one I made.
Every detail is on the message she sent.

Today, ✅as you design outfits for your clients, ✅as you write that pitch, ✅as you care for those patients, ✅as you teach those students, ✅as you take that exams and in all you do; give it your best shot. Be consistent with quality and the very people who will be able to afford, pay you and patronize you will come your way because a good product, sells itself with little effort. ✅✅💯

When it comes to my cooking, 🧑‍🍳, I’m usually excited because I will be doing all the things I love: dancing to music while I cook, keeping healthy and promoting our Nigerian foods. This lady from Hobart smith college texted me as seen 👇🏽. She wanted me to cater for 30 people at the faculty where she is a professor.

After the call; she told me all she wanted.

2 large pans of jollof rice
10 fingers cut fried plantains
Some veggie fritters
Air fried chicken ( grilled some)
Collard greens veggies

I got to work few days ahead. Did my shopping, got the plantains to ripen by putting in warm area. Got the peppers, onion and tomatoes blended, fried and refrigerated.

The fritters are made with pototoes, carrots, green veggies, chickpea flour, grated, mixed and fried lightly brown in olive oil. As seen below the collard greens are chopped, cooked with broth of choice, onion, cinnamon, salt and pepper to taste.

My grill and air fryer did the Lord’s work.

She was super excited to meet a Nigerian who speaks Igbo because she said she had Nigerian students and friends that were of Igbo descent. We had a great time.

The feedback was instant and 3 contacts were added to the people who want Nigerian food as they were pleased with the aroma, color and taste of our food. My week was made with bank transfers. I’m super excited for the new week and ready for what February has in stock. January was more than fulfilling. Thank you for your support 🙏🥰✅

Long busy week: had an order to make jollof rice for a fellow staff. Her second daughter is married to a Nigerian man. So she adores Nigerian foods. I have been postponing making the food because of my time schedule. So this week; I decided to buy the things needed.
✅marinated my beef, chicken and all poultry product and put in the freezer
✅fried all tomatoes and peppers yesterday morning and kept.

Got a new microwave that comes with an Airfryer. Best decision I made this January. Practically cooks and browns my chicken just the way I like it 🥰🥰😍.

Then proceeded to make her food while making the one for hubby’s birthday too. The rice came out banging and very colourful. I like my rice very red biko. The chicken wings taste is better experienced than explained. She could not wait to get home; she started eating with take away spoon inside her car because you know that “party jollof rice aroma of bay leaf and thyme; it scattered her car”. In her American accent “ yoh, this has to be the most dramatic aroma my nose ever perceived; I g*t eat this right here”. We laughed so hard.

And then; Nelly has to go prepare for her night shift. ✌️🙌🏻

This is one of the healthiest ways to eat rice. Lots and lots of veggies. Here I used:
✅shredded, marinated & cooked chicken
✅green & red bell peppers
✅fresh, marinated and cooked shrimps
✅fresh sliced cabbage
✅onion, green peas, sweet corn, pepper
✅very little canola oil, salt to taste & little seasoning(soy ssuce).
✅spices: thyme, curry, pasley, oregano, ginger & garlic. I’m a slice person.

It banged. This is how I also make my kids eat veggies since they won’t eat it raw. And food for the week. I’m there always. Happy business Monday.

I am supposed to be resting today. But I just finished a phone call from one of our Igbo brothers that moved into USA as a medical doctor. I have known him for 8-9 years. He just needed encouragement; yet to get his campus job, yet to get TP figured out, yet to understand a lot of how things go, yet to meet friends, lonely and confused. Has school fees to pay with no help. Has his family back home who he won’t like to fail. 🌷

I told him; “ nnaa, hang on. The job will come. Money will come. You will make friends in church and other places. Just breathe in and breathe out. Eat. Sleep. Read. Meditate. Apply more and more. Talk to your colleagues in class. Smile. I later gave him 5 other examples of people who were in his shoes. He is single too. 🌹 We spoke for over 2hours. He just went off the phone telling me “ Nne, you don’t know how I feel after talking to you, so you mean I can make it? You mean I won’t be de.pressed or fail”?

I told him yes to making it and never he can’t fail. I’m so happy for you Nna, if you reading this. Just know me and my hubby, we dey for you. 🙏👍We will never allow you face the cold alone.

Today; I speak to anyone who feels stuck, lonely and confused. All those who are planning to or just arrived Canada, U.S.A. or UK. I want you to know; It is not always going to be like that. It is a phase. It will pass. Cry if you want. Talk to trusted, matured people if you like. But don’t give up. It is the best part of your story. You will tell it to the next generation. Who will use your story/ history to reconstruct their own reality. That’s how it goes. 👍✅

This year; if your husband does something that shows he has improved alot from few years back. Little things like:

1. Dressing up the kids properly for school

2. Making meals too and helping when you can’t meet up.

3. Setting up the tv, seats, organizing and cleaning out home appliances and supplies.

4. Making sure your own family as his wife are okay?

5. Budgeting, financing and making sure he corrects any mistake you complained about. Please; don’t forget to compliment him. Thank him. Ask questions like “ babe, do you need a hand, I see you working hard?”✅🌹💐

“ thank you love; I’m happy you put our family first and doing your best. I see it. I love you”. 🌷

“ My love; me and the kids are proud of you. Your dressing today is gorgeous. I pray you succeed at work and bring your glory to everyone you come in contact with”. 🌹🙏

Let him go out feeling loved, appreciated and happy. He will glow effortlessly. To achieve peace and growth in a family involve two loving individuals who invest in each other daily. The result is happy kids, happy home, healthy family. ✅🙏🥰
