Ingredients:

1 lb white fish fillets (e.g., cod, tilapia, or haddock), cut into chunks

2 tbsp olive oil

1 medium onion, chopped

2 garlic cloves, minced

1 bell pepper, chopped

2 medium tomatoes, diced (or 1 can of diced tomatoes)

1 cup fish stock or vegetable broth

1 cup coconut milk (optional for creaminess)

1 tsp paprika

1 tsp dried thyme

1/2 tsp cayenne pepper (optional for heat)

Salt and pepper to taste

Fresh parsley or cilantro for garnish

Juice of 1 lemon

Instructions:

1. Prepare the base: Heat olive oil in a large pot over medium heat. Add the onion, bell pepper, and garlic, sautéing for 5-7 minutes until softened.

2. Add tomatoes and spices: Stir in the diced tomatoes, paprika, thyme, cayenne (if using), salt, and pepper. Cook for another 5 minutes, allowing the flavors to meld.

3. Simmer the broth: Pour in the fish stock or vegetable broth and bring to a simmer. Let it cook for about 10 minutes.

4. Add the fish: Gently add the fish chunks to the pot. Simmer for 7-10 minutes, until the fish is cooked through and flakes easily.

5. Finish the stew: Stir in the coconut milk (if using) and lemon juice. Let it heat through for another 2-3 minutes.

6. Serve: Ladle the stew into bowls and garnish with fresh parsley or cilantro. Serve with crusty bread or over rice.

Here's a simple beef stew recipe:

Ingredients:

2 lbs beef chuck, cut into 1-inch cubes

2 tablespoons olive oil

1 onion, chopped

3 cloves garlic, minced

3 large carrots, peeled and sliced

3 medium potatoes, peeled and diced

2 celery stalks, chopped

4 cups beef broth

1 cup red wine (optional)

2 tablespoons tomato paste

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 bay leaf

Salt and pepper to taste

2 tablespoons all-purpose flour (optional, for thickening)

Instructions:

1. Brown the Beef:

Heat olive oil in a large pot over medium-high heat. Add the beef cubes in batches and brown on all sides. Remove the beef and set aside.

2. Cook the Vegetables:

In the same pot, add onions and garlic, cooking until softened (about 3-4 minutes).

Add the carrots, potatoes, and celery, and cook for an additional 5 minutes.

3. Add Liquids and Seasonings:

Stir in the tomato paste and cook for 1 minute.

Pour in the beef broth and red wine (if using), scraping any browned bits off the bottom of the pot.

Add thyme, rosemary, bay leaf, salt, and pepper.

4. Simmer:
