Peach Cobbler Cookies 🍪🍑😋
Recipe:

Ingredients:

1 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 cup diced fresh peaches (or canned peaches, drained and diced)
1/2 cup white chocolate chips (optional)
Sugar for sprinkling

For the Glaze:

1 cup powdered sugar
2-3 tablespoons milk
1/2 teaspoon vanilla extract

Instructions:

Preheat the Oven:

Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.

Cream the Butter and Sugars:

In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

Add Eggs and Vanilla:

Beat in the eggs one at a time, then add the vanilla extract.

Mix Dry Ingredients:

In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.

Combine Wet and Dry Ingredients:

Gradually add the dry ingredients to the wet mixture, mixing until just combined.

Fold in Peaches:

Gently fold in the diced peaches and white chocolate chips (if using).

Scoop and Sprinkle:

Using a cookie scoop or spoon, drop dough onto the prepared baking sheets, spacing them about 2 inches apart. Sprinkle the tops with a little granulated sugar.

Bake:

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers will still look a bit soft but will set as they cool.

Prepare the Glaze:

While the cookies are baking, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency by adding more milk if necessary.

Glaze the Cookies:

Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack. Once completely cooled, drizzle the glaze over the cookies.

Blue Cheese, Walnut and Thyme Pull Apart Puff Pastry Twirl 🌰🥞😋 Recipe:

Ingredients:

2 sheets of puff pastry (square shaped sheets)
2 tablespoons of honey
100 grams of blue cheese, crumbled
100 grams of grated Parmesan cheese
50 grams of walnuts, chopped
6-8 sprigs of fresh thyme leaves
1 tablespoon of milk
Sea salt and cracked pepper

Directions:

1. Pre-heat oven to 180C (350F). Note, we use a gas oven that runs quite hot – you can increase to 200C (390F) in an electric non fan forced oven.
2. Drizzle 1 tablespoon of honey on each sheet of puff pastry.
3. Divide walnuts, blue cheese and Parmesan cheese and scatter over each sheet of puff pastry. Top with fresh thyme leaves and season with sea salt and cracked pepper
4. Roll up each sheet of pastry and cut in half lengthways (you may need to tuck the pastry in after cutting to keep filling in).
5. On a sheet of baking paper carefully twist each length of pastry and make a round coil shape. Brush with milk and bake in oven for about 25-30 mins until pastry is puffed and golden and cooked through.
6. Remove from oven, scatter extra thyme leaves on top and serve warm.

Ravioli with Tomatoes, Asparagus, Garlic, and Herbs 🥘🥘🤩 Recipe:

Ingredients:

1 tablespoon olive oil
1 pound asparagus, ends trimmed, cut into 2-inch pieces
2 cups cherry tomatoes, halved
3 cloves garlic, minced
Salt and pepper to taste
1/4 cup chicken broth
1 tablespoon lemon juice
1/4 cup fresh basil, chopped
1/4 cup fresh parsley, chopped
1/4 cup grated Parmesan cheese, plus more for serving
1 package (20 ounces) refrigerated cheese ravioli

Directions:

Cook the ravioli according to the package instructions. Drain and set aside.
In a large skillet, heat the olive oil over medium-high heat. Add the asparagus and cook for 4-5 minutes until tender-crisp.

Add the cherry tomatoes and garlic to the skillet. Season with salt and pepper. Cook for another 2-3 minutes until the tomatoes begin to soften.

Pour in the chicken broth and lemon juice. Bring to a simmer and cook for 2 minutes.
Add the cooked ravioli to the skillet and gently toss to combine with the vegetables and sauce.

Stir in the fresh basil, parsley, and grated Parmesan cheese. Cook for another 1-2 minutes until everything is heated through.

Serve the ravioli hot, topped with additional Parmesan cheese if desired.

Elegant Black Forest Roll Cake 🎂🍒🍫🤩
Recipe:

Ingredients:

For the Chocolate Sponge Cake:

4 large eggs, at room temperature
3/4 cup granulated sugar
1 teaspoon vanilla extract
1/4 cup unsweetened cocoa powder
1/4 cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
For the Cherry Filling:

2 cups pitted cherries, fresh or frozen
1/4 cup granulated sugar
1 tablespoon cornstarch
1 tablespoon water
For the Whipped Cream Filling:

1 1/2 cups heavy cream, chilled
1/4 cup powdered sugar
1 teaspoon vanilla extract
For Garnish:

Additional cherries, for decoration
Chocolate shavings or cocoa powder, for dusting

Instructions:

Preheat your oven to 350°F (175°C). Grease and line a 10x15-inch jelly roll pan with parchment paper.

Make the Chocolate Sponge Cake:

In a large mixing bowl, beat the eggs, granulated sugar, and vanilla extract until thick and pale, about 5 minutes.
In a separate bowl, sift together the cocoa powder, flour, baking powder, and salt. Gradually fold the dry ingredients into the egg mixture until just combined.
Pour the batter into the prepared jelly roll pan and spread it out evenly with a spatula.

1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/2 cup sour cream
1/2 cup whole milk
1/2 cup cocoa powder
1 cup fresh blueberries
1 tablespoon dried culinary lavender
1/2 cup blueberry jam
2 cups cream cheese frosting
Fresh blueberries and lavender sprigs for garnish
Chocolate ganache (optional, for drizzling)

Directions:

Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
Mix dry ingredients: Whisk together the flour, baking powder, baking soda, salt, and cocoa powder. Set aside.
Cream butter and sugar: Beat the butter and sugar until light and fluffy. Add eggs one at a time, followed by the vanilla extract.
Combine mixtures: Gradually add the dry ingredients to the wet mixture, alternating with sour cream and milk, starting and ending with the dry ingredients.

No-Bake Peanut Butter Cheesecake 🧀🍰🥜
Recipe:

Ingredients:

For the crust:
2 cups graham cracker crumbs
1/2 cup melted butter
1/4 cup granulated sugar
For the filling:
2 cups heavy cream
16 oz cream cheese, softened
1 cup creamy peanut butter
1 cup powdered sugar
1 tsp vanilla extract
1 cup mini chocolate chips
1 cup Reese's Pieces candy
For the topping:
1 cup heavy cream, whipped
1/4 cup powdered sugar
1/2 cup mini chocolate chips
1/2 cup Reese's Pieces candy
1/2 cup assorted mini chocolate candies
Chocolate syrup for drizzling

Instructions:

Prepare the Crust:
In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
Press the mixture firmly into the bottom of a 9-inch springform pan.
Place the crust in the refrigerator to chill while you prepare the filling.
Prepare the Filling:
In a large mixing bowl, whip the heavy cream until stiff peaks form. Set aside.
In another large bowl, beat the cream cheese, peanut butter, powdered sugar, and vanilla extract until smooth and creamy.
Gently fold the whipped cream into the peanut butter mixture until well combined.
Fold in the mini chocolate chips and Reese's Pieces candy.
Pour the filling over the chilled crust and spread evenly.
Add the Topping:
In a medium bowl, whip the heavy cream with the powdered sugar until stiff peaks form.
Spread or pipe the whipped cream over the top of the cheesecake filling.
Sprinkle the mini chocolate chips, Reese's Pieces candy, and assorted mini chocolate candies on top.
Drizzle with chocolate syrup.
Chill and Serve:
Place the cheesecake in the refrigerator for at least 4 hours or overnight to set.
Before serving, remove the sides of the springform pan.
Slice and enjoy!

Hawaiian Chicken Bacon Pineapple Kebabs 🍗🍍
Recipe:

Ingredients:

- SAUCE:
- 1/2 cup barbecue sauce
- 1/2 cup soy sauce
- 1/4 cup pineapple juice
- 1 tablespoon brown sugar
- 1 tablespoon rice wine vinegar
- 1 1/2 tablespoons minced garlic
- 1 tablespoon olive oil
- 1 teaspoon sesame oil
- SKEWERS:
- 1 pound (500 g) chicken breasts cut into 1-inch cubes
- 16 bacon rashers trimmed of excess fat and halved lengthways (2 1/2 inch x 1-inch)
- 3 cups fresh cubed pineapple
- 1 large red pepper (capsicum) diced into 1-inch pieces
- 1 large green pepper (capsicum) diced into 1-inch pieces
- 1 large red onion diced into 1-inch pieces
- Salt and cracked pepper to taste

Instructions:

1. Mix the bbq sauce, soy sauce, pineapple juice, rice vinegar, garlic, and sesame oil in a large jug or bowl.
2. Preheat a grill pan (or grill plates on the bbq) over medium-high heat.
3. Thread the red onion, red pepper, pineapple, green pepper, bacon, and chicken onto skewers, wrapping the bacon around the chicken.
4. Coat skewers evenly with HALF of the marinade (reserve other HALF for basting).
5. Brush grill pan or grates with olive oil. Grill the skewers for 5 minutes; brush over 1/4 cup of reserved marinade.
6. Turn skewers over and coat with remaining 1/4 cup of marinade. Grill for a further 4 minutes, or until the chicken is cooked through. Serve immediately.

Hot Honey Fried Shrimp 🍤🍲🍤
Recipe:

Ingredients:

1 lb large shrimp, peeled and deveined, tails on
1 cup all-purpose flour
2 teaspoons garlic powder
1 teaspoon paprika
1/2 teaspoon cayenne pepper
Salt and pepper to taste
2 eggs, beaten
1 cup buttermilk
Vegetable oil for frying
For the Hot Honey Sauce:
1/2 cup honey
1 tablespoon hot sauce (adjust based on spice preference)
1 teaspoon apple cider vinegar

Directions:

Prepare the shrimp:
In a bowl, combine flour, garlic powder, paprika, cayenne pepper, salt, and pepper.
In another bowl, whisk together the beaten eggs and buttermilk.
Dip each shrimp into the flour mixture, then into the egg and buttermilk mixture, and back into the flour mixture to coat thoroughly.
Fry the shrimp:
Heat oil in a deep fryer or large skillet to 375°F (190°C).
Fry the shrimp in batches until golden brown and crispy, about 2-3 minutes. Do not overcrowd the pan. Remove and drain on paper towels.
Make the hot honey sauce:
In a small saucepan, combine honey, hot sauce, and apple cider vinegar. Heat over low heat until the mixture is well combined and slightly thinned.
Serve:
Drizzle the hot honey sauce over the fried shrimp or serve it on the side for dipping.
Garnish with chopped fresh parsley or green onions if desired.
