Vietnamese Egg Rolls
Makes 20-25
Recipe: Vietnamese Egg Rolls
Makes 20-25

1 lb ground pork or turkey
2 tbsp fish sauce
2 tsp chicken bouillon
1 tsp black pepper
1 cup bean thread noodles/ vermicelli, rough chop
1 cup wood ear mushrooms, thinly sliced
1 cup green onions, thinly sliced
1/2 cup carrots, shredded
5-6 garlic, finely minced
1 egg

Rice paper
Frying oil, I use peanut oil

1. Rehydrate dried wood ear mushrooms with boiling water for 15 mins. Drain. Thinly slice.
2. Peel and shred carrots.
3. In a mixing bowl, combine all the ingredients and seasonings. Mix with hands for best consistency.
4. Dip rice paper in cold/room temp water for 2-3 seconds, rotating until the rice paper is covered with water.
5. Lay rice paper on flat surface. Spoon 2-3 tbsp of filling at the bottom closest to you leaving 1 inch of space from the edge.
6. Grab 1in part of rice paper fold over filling and tuck and roll the filling tightly. Fold in left and right side overlapping each other. Place rolled pieces on a platter and ensure they don’t touch each other. It will stick to each other. Make sure the sides folded it aligns straight with the filling. Roll as many as you will eat.
7. Heat frying oil to 300F. Gently place each egg roll into the oil. Do not let the egg rolls touch each other. Gently flip egg rolls to fry to crispy perfection. Fry for 9-11 mins.
8. Once cooked through, strain and cool down for 10-15 mins before eating. Enjoy!

SAVE this recipe to make the real deal at home!

➡️ Recipe: Salt & Pepper Chicken Wings

* 2 lbs of chicken wingette’s and drumette’s
* Peanut oil or any frying oil you prefer

Batter/marinade—
* 1 tsp baking powder
* 1 tsp garlic powder
* 1/2 tsp ground white pepper
* 1/2 tsp onion powder
* 1/2 tsp kosher salt
* 2 tbsp shaoxing cooking wine
* 1/2 cup water
* 1 cup all-purpose flour
* 1/2 cup cornstarch

Salt & pepper Seasoning—
1 part kosher salt to 2 parts granulated sugar
And 1/2 part coarse ground black pepper

Make as much as you need for the seasoning!
OR
* 1 tsp salt
* 1/2 tsp ground black pepper
* 2 tsp sugar
* Jalapeños, sliced (Optional)
* Onions, cut into bite sized pieces

1. Combine all the batter ingredients together with the chicken wings and mix well until it forms a thick paste. Marinate for at least 4 hours or overnight, if possible.
2. Heat up oil in large pot to 350F. Fry wings for 11-14 mins depending on size of your wings.
3. Drain the wings in a paper towel lined colander.
4. Immediately heat large pan on high heat. If adding in jalapeños (and onions) use a little bit of oil to stir fry jalapeños. Toss in fried wings and add as much salt and pepper seasoning mix into pan as you need and toss until wings are even coated.
5. Serve and enjoy!

Serves 3-4

- [ ] 1 lb beef flank, sliced into 2 inch pieces
- [ ] 1 large onion, 1/4 inch slices
- [ ] 4-5 green onion stalks, 2-3 inch pieces
- [ ] 4-5 cloves garlic, finely minced
- [ ] 1 tsp ginger, grated
- [ ] Optional: 4-7 Dried chilies for spice

Marinade-
- [ ] 3 tbsp cornstarch
- [ ] 1/4 tsp baking soda
- [ ] 1 tbsp shao xing wine (dry sherry or dry white wine is fine)
- [ ] 1/2 tbsp soy sauce
- [ ] 1/2 tbsp dark soy sauce
- [ ] 1/4 tsp ground white pepper

Sauce-
- [ ] 1 tbsp oyster sauce
- [ ] 1/2 tbsp dark soy sauce
- [ ] 1/2 tbsp soy sauce
- [ ] 2 tsp sugar
- [ ] 1 tsp chicken bouillon
- [ ] 1 tsp Sesame oil, or to taste
- [ ] 1/2 tsp white or black pepper
- [ ] 1/3 cup Cooking oil, for shallow fry

- [ ] Steamed rice, to serve

1. Marinate sliced beef with cornstarch, baking soda, shao xing wine, soy sauce, dark soy sauce, and white pepper. Mix well and marinade for 15 mins.
2. To make the sauce, combine oyster sauce, dark soy sauce, sugar, chicken bouillon, white pepper, and sesame oil. Set aside
3. Heat a wok with 1/3 cup of oil (use more or less if you want). Ensure oil is hot, then add in marinated beef. Spread out evenly and leave it to cook for 2-3 mins on each side for a nice crust.
4. Once beef is 90% cooked through, strain the beef from oil and set it aside.
5. Leave 2-3 tablespoons of oil in wok and add ginger, garlic and dried chillies. Cook until fragrant.
6. Add in onions and cook for 2-3 mins or until barely translucent.
7. Add in beef along with the sauce and toss evenly. (2 mins)
8. Top with green onions and toss one last time.
9. Serve with steamed rice or by itself. Enjoy!
