Cheesy Baked Rigatoni

INGREDIENTS
16 oz rigatoni pasta
1 lb ground beef
1 chopped onion
1/2 tsp each salt and pepper
1 tsp each garlic powder, paprika, Italian seasoning
1/4 tsp red pepper flakes
1 tbsp minced garlic
2 (24 oz) jars marinara
1/2 cup heavy cream
1 1/2 cups ricotta cheese
8 oz shredded mozzarella cheese
Dried parsley
Parmesan cheese

INSTRUCTIONS
Preheat the oven to 375 degrees F.

Heat a pot of water over high heat and boil 16 oz of pasta following the directions on the package. I used 16 oz of Rigatoni, but penne or ziti would also work for this recipe.

Heat a large skillet over medium-high heat. Add 1 lb of ground beef and a chopped onion. Season with salt, pepper, garlic powder, paprika, Italian seasoning, and red pepper flakes.

Once the ground beef is fully cooked, drain any extra grease and add 1 tbsp of minced garlic. Stir well. Add 2 jars of marinara sauce and 1/2 cup of heavy cream. Stir the sauce together and turn the heat off.

Pour half of the cooked pasta in a greased 9x13 baking dish. Add half of the meat/sauce mixture to the baking dish and stir the pasta around just to get them all covered in sauce.

Next, use a large spoon to drop about 1 1/2 cups of ricotta cheese all over the first layer of the pasta.

Top the ricotta cheese with half of the shredded mozzarella. Add the rest of the pasta, meat/sauce mixture, and the rest of the shredded mozzarella cheese.

Bake in the oven at 375 degrees F for about 25 minutes uncovered. Once the cheese is golden brown and bubbling, it’s time to eat! Top with dried parsley and some Parmesan cheese. Enjoy!

Milky Braided Bread Recipe 🍞

This recipe is perfect for those who want to make a soft and delicious milky braided bread! Thanks to the tangzhong (roux), it stays fresh for a long time. Here’s how to make it:

Ingredients:

Tangzhong (Roux):
β€’ 30 g flour (3 heaping tablespoons)
β€’ 200 ml milk (1 cup)

For the Dough:
β€’ 650 g flour (5 heaping cups + 5 tablespoons)
β€’ 200 ml milk (1 cup)
β€’ 8 g dry yeast (5 teaspoons)
β€’ 40 g sugar (2 tablespoons)
β€’ 2 eggs
β€’ 40 g butter (room temperature)
β€’ 15 g salt (1.5 teaspoons, use 20 g for a saltier taste)

Filling:
β€’ 300 g strained cheese (like Greek yogurt cheese or ricotta)
β€’ Fresh parsley (optional)
β€’ 30 ml milk (3 tablespoons)

Preparation:

1. Make the Tangzhong:
β€’ For the tangzhong, combine 30 g flour and 200 ml milk in a pot. Stir constantly and cook until it thickens to a pudding-like consistency. Remove from heat and let it cool.

2. Prepare the Dough:
β€’ In a large mixing bowl, add the flour and make a well in the center.
β€’ Add the yeast, sugar, and warm milk to the well and let the yeast activate for about 5 minutes.
β€’ Add the tangzhong and the rest of the dough ingredients (except the butter). Mix and knead the dough until it becomes smooth.
β€’ Finally, add the butter and knead until the dough is soft and elastic. If the dough is too soft, add a little more flour to adjust. The dough should be slightly firm, but still soft.
β€’ Let the dough rise in a warm place until doubled in size. Once risen, punch down the dough and transfer it to a lightly floured surface.

3. Shaping:
β€’ Divide the dough into 10 equal pieces. Roll each piece into a 20x20 cm rectangle. Lightly flour the surface to prevent sticking.
β€’ Shape the dough pieces into a braid (or any desired shape). Let the shaped dough rest for 20-25 minutes to rise again.

4. Baking:
β€’ Brush the top of the dough with milk and bake in a preheated fan-assisted oven at 180Β°C (350Β°F) until golden brown.
β€’ Once out of the oven, brush the warm bread with melted butter.
