Cheesy Baked Rigatoni

INGREDIENTS
16 oz rigatoni pasta
1 lb ground beef
1 chopped onion
1/2 tsp each salt and pepper
1 tsp each garlic powder, paprika, Italian seasoning
1/4 tsp red pepper flakes
1 tbsp minced garlic
2 (24 oz) jars marinara
1/2 cup heavy cream
1 1/2 cups ricotta cheese
8 oz shredded mozzarella cheese
Dried parsley
Parmesan cheese
INSTRUCTIONS
Preheat the oven to 375 degrees F.
Heat a pot of water over high heat and boil 16 oz of pasta following the directions on the package. I used 16 oz of Rigatoni, but penne or ziti would also work for this recipe.
Heat a large skillet over medium-high heat. Add 1 lb of ground beef and a chopped onion. Season with salt, pepper, garlic powder, paprika, Italian seasoning, and red pepper flakes.
Once the ground beef is fully cooked, drain any extra grease and add 1 tbsp of minced garlic. Stir well. Add 2 jars of marinara sauce and 1/2 cup of heavy cream. Stir the sauce together and turn the heat off.
Pour half of the cooked pasta in a greased 9x13 baking dish. Add half of the meat/sauce mixture to the baking dish and stir the pasta around just to get them all covered in sauce.
Next, use a large spoon to drop about 1 1/2 cups of ricotta cheese all over the first layer of the pasta.
Top the ricotta cheese with half of the shredded mozzarella. Add the rest of the pasta, meat/sauce mixture, and the rest of the shredded mozzarella cheese.
Bake in the oven at 375 degrees F for about 25 minutes uncovered. Once the cheese is golden brown and bubbling, itβs time to eat! Top with dried parsley and some Parmesan cheese. Enjoy!

This recipe is perfect for those who want to make a soft and delicious milky braided bread! Thanks to the tangzhong (roux), it stays fresh for a long time. Hereβs how to make it:
Ingredients:
Tangzhong (Roux):
β’ 30 g flour (3 heaping tablespoons)
β’ 200 ml milk (1 cup)
For the Dough:
β’ 650 g flour (5 heaping cups + 5 tablespoons)
β’ 200 ml milk (1 cup)
β’ 8 g dry yeast (5 teaspoons)
β’ 40 g sugar (2 tablespoons)
β’ 2 eggs
β’ 40 g butter (room temperature)
β’ 15 g salt (1.5 teaspoons, use 20 g for a saltier taste)
Filling:
β’ 300 g strained cheese (like Greek yogurt cheese or ricotta)
β’ Fresh parsley (optional)
β’ 30 ml milk (3 tablespoons)
Preparation:
1. Make the Tangzhong:
β’ For the tangzhong, combine 30 g flour and 200 ml milk in a pot. Stir constantly and cook until it thickens to a pudding-like consistency. Remove from heat and let it cool.
2. Prepare the Dough:
β’ In a large mixing bowl, add the flour and make a well in the center.
β’ Add the yeast, sugar, and warm milk to the well and let the yeast activate for about 5 minutes.
β’ Add the tangzhong and the rest of the dough ingredients (except the butter). Mix and knead the dough until it becomes smooth.
β’ Finally, add the butter and knead until the dough is soft and elastic. If the dough is too soft, add a little more flour to adjust. The dough should be slightly firm, but still soft.
β’ Let the dough rise in a warm place until doubled in size. Once risen, punch down the dough and transfer it to a lightly floured surface.
3. Shaping:
β’ Divide the dough into 10 equal pieces. Roll each piece into a 20x20 cm rectangle. Lightly flour the surface to prevent sticking.
β’ Shape the dough pieces into a braid (or any desired shape). Let the shaped dough rest for 20-25 minutes to rise again.
4. Baking:
β’ Brush the top of the dough with milk and bake in a preheated fan-assisted oven at 180Β°C (350Β°F) until golden brown.
