🍰Mango Peach Smoothie
Ingredients:
* 1 ripe mango, peeled and cut into chunks
* 1 ripe peach, pitted and cut into chunks
* 1/2 cup plain yogurt
* 1/4 cup orange juice
* 1/4 cup ice cubes
* 1 tablespoon honey (optional, for sweetness)
* Fresh mint leaves for garnish
Equipment:
* Blender
* Cutting board
* Knife
Instructions:
* Prep the fruits: Peel and cut the mango into chunks. Pit and cut the peach into chunks.
* Blend: Add the mango, peach, yogurt, orange juice, ice cubes, and honey (if using) to a blender. Blend until smooth and creamy.
* Serve: Pour the smoothie into glasses and garnish with fresh mint leaves.
Tips:
* For a thicker smoothie, use less liquid.

PEANUT BUTTER STUFFED DATES COVERED IN CHOCOLATE! 😛🤩
1. Slice open 12 medjool dates.
2. Fill with nut butter or whole nuts. Refrigerate.
3. Meanwhile, melt 80g dark chocolate with 1 tbsp of coconut oil and 2 tps of maple syrup over a bain Marie.
4. Let chocolate sauce cool off in Refrigerator until its thick, but not hard.
Dip your cold dates in the sauce, place on greaseproof paper. Pour over the rest of your chocolate once you have dipped all your dates. Don't worry if it pools around the edges.
5. Keep Refrigerated for up to 10 days (they won't last that long 😉)' YOUR WELCOME 🌻🌻

Vegan Coconut Truffles
Ingredients:
3 cups Dessicated Coconut (240g)
3/4 cup Vegan Condensed Milk (180ml)
1 1/2 cups Chopped Vegan Chocolate or Chocolate Chips (262g)
1 tsp Coconut Oil
Instructions:
In a mixing bowl, combine the vegan condensed milk and 1 cup of the dessicated coconut. Gradually add the remaining coconut, mixing until a thick dough forms.
Roll the dough into balls and place them evenly on a parchment-lined baking tray. Transfer the tray to the freezer for approximately 15 minutes to allow the balls to harden.
In a microwave-safe bowl, combine the chopped vegan chocolate and coconut oil. Microwave in 30-second intervals, stirring each time, until the chocolate is completely melted.
Dip each coconut ball into the melted chocolate, using two teaspoons to coat them evenly. Place the coated balls back onto the parchment-lined tray.
Once all the balls are coated in chocolate, sprinkle additional dessicated coconut on top. Return the tray to the freezer to allow the chocolate to set.
Once the chocolate has set, your Vegan Coconut Truffles are ready to enjoy! Store any leftovers in the fridge and serve cold directly from the fridge to prevent the chocolate from melting.🌻🌻🌻 YOUR WELCOME 🌻🌻

Vegan Sweet Potato Brownies.

Ingredients:

• 1 large sweet potato

• 1/2 cup almond flour

• 1/2 cup cocoa powder

• 1/2 cup maple syrup

• 1/4 cup melted coconut oil

• 1 tsp vanilla extract

• 1 tsp baking powder

• 1/4 tsp salt

• Optional: vegan chocolate chips, chopped nuts

Instructions:

1. Preheat your oven to 350°F (180°C) and line a baking dish with parchment paper.

2. Peel and chop the sweet potato into small pieces, then steam or boil until soft.

3. Mash the sweet potato in a bowl until smooth.

4. Add the almond flour, cocoa powder, maple syrup, melted coconut oil, vanilla extract, baking powder, and salt to the bowl with the sweet potato. Mix well until smooth.

5. Fold in the chocolate chips or chopped nuts, if using.

6. Pour the mixture into the prepared baking dish and smooth out the top with a spatula.

7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

8. Allow the brownies to cool in the pan for at least 10 minutes before cutting and serving.
