Boudin originated from the Acadians (Cajuns) who settled in Louisiana and was a way to stretch the use of pork by adding rice, the Cajun Trinity, and spices.
What most people don’t know is the making and casing of boudin was heavily influenced by Germans settlers, known for sausage making. It is also why traditionally boudin is eaten with a cracker, pickle, and grainy mustard. I also like it for breakfast. ゚viralシ
