Chick-fil-A chicken copycat 😋 easy and yummy!!!

375° oven for 35 minutes

Ingredients:
6 to 8 pieces of chicken breast (butterflied to make it thin) or tenders
4 ounces bag of mission pork rinds plain (can be any brand you have as long as it’s plain)
1 1/2 cup of pickle juice
1/2 cup of mayo

Directions:
Clean chicken breast remove all extra fat. Place in a container with pickle juice and brine for two hours prior to baking. grind pork rinds until their bread crumb consistency, I just used blender for that. Remove chicken from pickle juice and tap dry with paper towels. Coat chicken breast on both sides with mayo and then place onto Pork rind crumbs. Place on baking sheet and bake in oven for about 35 minutes (modify for chicken tenders). Taste just like Chick-fil-A’s chicken!

KETO RAVIOLI‼️

24 slices provolone cheese
1 lb. Italian ground sausage, cooked and drained
2 tablespoons cream cheese
2 tablespoons sour cream
1 cup mozzarella cheese, shredded
1/2 cup Rao's Marinara (or your favorite kind)
Preheat oven to 350 degrees.
Line a baking sheet (or baking sheets) with parchment paper. Add the 24 slices of provolone cheese to the baking sheet or sheets (depending on how large your baking sheets are) leaving space in between each piece and set aside.
In a small bowl, mix together cooked Italian ground sausage, cream cheese, sour cream, and shredded cheese and set aside.
Place the baking sheet in the oven for 3 minutes or until cheese starts to bubble and turn golden brown around the edges. Remove the baking sheet from the oven and let cool for 3-5 minutes. You may have to do this in stages if you're using more than one baking sheet.
Add a scoop of Italian sausage filling to the middle of twelve cheese slices. Place the remaining twelve slices of melted provolone on top, lifting gently with a spatula.
Once placed, press down to seal the edges of the provolone cheese.
Turn oven to broil and place the baking sheet back in the oven. Keep an eye on the ravioli, you will only want these in for 30 seconds or so, just enough to heat the top slice to really seal the edges.
Remove ravioli from the oven and let cool for a few minutes before plating. Serve with your favorite keto marinara sauce and parmesan cheese (or pecorino romano!).

Crockpot Upside Down Taco Pie! 🌮

*1 Pound ground beef
* 1 Medium Yellow onion
* 1 Cup Green Chilis
* 14 Ounces Can of diced tomatoes
* 1 Envelope Taco seasoning or 3 Tablespoons Homemade keto taco seasoning
* 1 Cup Shredded cheddar cheese
Brown your hamburger with your onion once everything is browned drain any excess grease out. Add your green chilies diced tomatoes and seasoning. Mix well in place into the bottom of your crockpot. Add your one cup of cheddar cheese to the top- place on low for 4 Hours

* 2 Cups Almond flour
* 3 Eggs
* 2 Tablespoons of butter
* 1 tablespoon of salt
* 3 ounces of softened cream cheese
* 1 Tbsp baking powder
Mix and combine well. Take spoonfuls and drop that over the top of your taco meat mixture leave in about an inch between each one-You will do this at about three hours and 15 minutes in. Place the cover back on for an additional 45!

Scoop out into your bowl top with your favorite seasoning sour cream guacamole jalapeño etc.

Italian Stuffed Tomatoes

4 medium/large tomatoes
1 C crushed pork rinds
3/4 C freshly grated Parmesan cheese
1/4 C freshly grated Romano cheese
1 T finely minced fresh garlic
1/2 t kosher salt
1/4 t freshly ground black pepper
1 t dry oregano
1 t finely minced fresh mint
2 T good quality extra virgin olive oil

Cut tomatoes in half horizontally and with a teaspoon, scoop out seed pockets and discard, leaving pulp and core.
Once cut, place the tomatoes upside down on paper towels.
They will drain and dry and bake better this way.
Preheat oven to 450 and line a small pan with foil and spray with cooking spray.
Set aside.
While tomatoes are drying, in a medium bowl place all other ingredients and mix to combine.
Invert the tomatoes and place on prepared pan.
Start by filling all of the tomatoes.
Then place the remaining mixture over the top of each, pressing down slightly just to keep the crumbs in place.
Place uncovered in the oven for up to 20 minutes or until golden brown and just slightly soft on the outside of tomato.
Tomato size and ovens vary so cooking time may be plus or minus 5 minutes.
If they get too brown too quick, finish baking with foil over tops.

Ketofied snickers treat! So simple and so delicious!

White Chocolate Peanut Butter Clusters - or we call them a ketofied Snickers bar! 🍫
• 2 tbs of natural peanut butter
• 1/4 cup white choc chips
- melt those 👆🏻 together
• Add 1/2 cup peanuts - we used sea salt peanuts! Once it’s all mixed - we drizzled Lily’s dark chocolate on top! (Seriously tastes like a snickers!)
Put small spoonfuls on parchment paper and freeze for about 45 min! Enjoy!

🍔 Low Carb Bacon Cheeseburger Taquitos With Big Mac Sauce 🍔

Join my recipe group👇
• 1/2 lb ground beef, cooked
• 2 Tbsp Philadelphia cream cheese, softened
• 1/4 bacon crumbles
• 1/2 cup shredded cheddar cheese
• 2 Tbsp green onion, diced
• salt & pepper (or seasoning of choice)
• Mix all together.
• Take 2 CutDaCarb flatbread and cut into 4 smaller rectangles – making 8 pieces.
• Spread a small amount of cream cheese on the long side of each flatbread piece (this will seal them once rolled up). Spread the hamburger mixture along the opposite side and roll up each taquito.
• Fry in 1/2 inch of avocado oil until golden
BIG MAC SAUCE:
• 2 Tbsp mayo
• 2 Tbsp sugar free ketchup
• 1 tsp mustard
• 1 tsp diced dill pickle
• a sprinkle of onion powder & paprika
