Instructions:

4 large flour tortillas

Optional toppings: diced tomatoes, shredded lettuce, pickles, ketchup, mustard

Instructions:

Preheat your Blackstone griddle over medium-high heat.
In a large skillet, cook the ground beef over medium heat until browned and cooked through, breaking it apart with a spatula as it cooks.
Add the diced onion and minced garlic to the skillet with the cooked ground beef. Cook for an additional 2-3 minutes until the onion is softened.
Stir in the Worcestershire sauce, salt, and pepper, then remove the skillet from the heat.

Directions:
Preheat oven to 350°F (175°C).
In a large bowl, mix together ground beef, bread crumbs, egg, milk, onion, green pepper, mushrooms, Worcestershire sauce, garlic powder, salt, and pepper until well combined.
Press half of the meat mixture into the bottom of a loaf pan.

Sweet Chili Pineapple Sauce

Ingredients:

1 cup fresh pineapple, finely chopped
1/2 cup water
1/4 cup white vinegar
1/4 cup honey
2 tablespoons soy sauce
1 tablespoon fresh ginger, minced
2 garlic cloves, minced
2 teaspoons cornstarch
2 tablespoons water (additional for cornstarch)
1 teaspoon red chili flakes (adjust based on heat preference)
Salt to taste

Instructions :

In a saucepan over medium heat, combine pineapple, 1/2 cup water, vinegar, honey, soy sauce, ginger, and garlic. Bring the mixture to a simmer.
Reduce the heat and let simmer for 10 minutes, or until the pineapple is tender.

Balsamic Chicken Caprese Salad

Ingredients:

2 boneless, skinless chicken breasts
Salt and pepper to taste
1 tablespoon olive oil
1/4 cup balsamic glaze
2 cups cherry tomatoes, halved
8 ounces fresh mozzarella cheese, sliced
1/4 cup fresh basil leaves
Balsamic glaze, for drizzling

Directions:

Season the chicken breasts with salt and pepper on both sides.
In a skillet, heat olive oil over medium-high heat.
Add the seasoned chicken breasts to the skillet and cook for 6-8 minutes on each side, or until cooked through and golden brown.
During the last few minutes of cooking, brush the chicken breasts with balsamic glaze, allowing it to caramelize and coat the chicken.

Pina Colada Poke Cake

Ingredients:

• 1 box (15.25 oz) yellow cake mix, plus ingredients listed on the box (eggs, oil, water)
• 1 can (14 oz) sweetened condensed milk
• 1 can (15 oz) cream of coconut
• 1 can (20 oz) crushed pineapple, drained
• 1 cup sweetened shredded coconut
• 1 container (8 oz) frozen whipped topping, thawed
• Raspberry and additional shredded coconut, for garnish (optional)
Directions:
8. Preheat the oven to the temperature specified on the cake mix box. Grease a 9x13-inch baking dish.
9. Prepare the yellow cake mix according to the package instructions. Pour the batter into the prepared baking dish and bake according to the package instructions.
10. While the cake is baking, in a mixing bowl, whisk together the sweetened condensed milk and cream of coconut until well combined.
11. Once the cake is baked, remove it from the oven and use the handle of a wooden spoon to poke holes all over the top of the cake.
12. Pour the sweetened condensed milk mixture over the warm cake, making sure to fill the holes.
13. Spread the drained crushed pineapple over the top of the cake.
14. Sprinkle the sweetened shredded coconut evenly over the pineapple layer.

Ridiculously Easy Lemon Raspberry Scones

Ingredients:

1 cup heavy cream
8 tablespoons butter
2 cups all-purpose flour
6 tablespoons sugar
1 tablespoon baking powder
½ teaspoon baking soda
½ teaspoon salt
Zest of 1 medium-size lemon
½ cup fresh raspberries

Instructions :

Preheat the oven to 400 degrees Fahrenheit. Line a sheet pan with parchment paper.
Chill 1 cup heavy cream in the freezer for 10-15 minutes.
Melt 8 tablespoons of butter in a microwave-safe bowl. Set aside to cool.
In a medium-size bowl, whisk together flour, baking powder, baking soda, sugar, lemon zest, and salt.
Combine chilled heavy cream with melted butter, stirring until butter forms small clumps.
Add the butter/cream mixture to dry ingredients, stirring until flour is incorporated.
Break raspberries in half and sprinkle them over the batter, gently mixing.

Ingredients:

4 boneless, skinless chicken breasts, pounded to even thickness
Salt and pepper to taste
2 tablespoons olive oil
1 tablespoon unsalted butter
8 ounces mushrooms, sliced
1 cup chicken broth
1 cup heavy cream
2 cloves garlic, minced
1 teaspoon dried thyme
1/2 teaspoon dried oregano
12 ounces noodles, cooked and buttered
Fresh parsley, chopped for garnish
Grated Parmesan cheese, for garnish

Directions:

Season chicken breasts with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden brown on both sides and cooked through, about 4-5 minutes per side. Remove chicken from skillet and set aside.
In the same skillet, melt butter over medium heat. Add mushrooms and cook until they begin to brown and release their juices, about 5 minutes.

Grilled Artichokes

Ingredients:

2 large artichokes
optional: 2 garlic cloves, bay leafs (or thyme or sage leaves) and lemon slices

Italian Salsa Verde:

1 cup Italian parsley, finely chopped
1 fat garlic clove, grated
1 tablespoon capers,
1/2 cup olive oil
1–2 tablespoons lemon juice
salt and black pepper to taste
optional: 1/4-1/2 teaspoon chili flakes
optional: 1-2 anchovies, finely minced

Directions:

Place a large pot on the stove with just enough water to just come up to a steamer basket placed inside. To the water add the optional lemon slices, garlic cloves and bay leaves. Bring to a simmer.
Prep the artichokes: With a sharp knife, trim off the sharp tips and remove any small, tough outer leaves. Trim the stems. Using a spoon, scoop out the thin hairs nearest the heart.
Place the artichokes in the steamer basket, cut sides down, layering if necessary. Bring the water to a boil, cover and simmer on low heat for 25-45 minutes, depending on size. Steam until just tender. To test, just pull off a leaf; it should pull off with a gentle tug. Let cool.
While the artichokes are steaming, make the salsa verde. Place everything in a small bowl and mix well.
Preheat the grill to medium, and grease the grates well.
Lightly brush the artichokes with olive oil and sprinkle with salt and pepper. Place the artichokes open-side down on the grates, cover, and grill until good grill marks appear and they are heated through. Flip and grill 2 minutes, before placing on a platter, open side up.
Spoon the salsa verde over the artichokes and nestle some into the heart heart area- you wont need all. Serve the artichokes with the remaining salsa verde on the side with slices of lemon or lemon wedges.
