One of our favorite easy lunches or dinners is Gyudon, a Japanese Beef Rice Bowl. It’s super easy to make and only requires a few ingredients. It’s savory, packed with flavors, and so delicious!
🌟 Gyudon (Japanese Beef & Rice Bowl) Recipe 🌟
Here’s what you need:
- 1 large onion, thinly sliced
- 1 lb thinly sliced beef
- 2 teaspoons sugar or honey (optional no honey for babies 12m & younger)
- 2 tablespoons rice vinegar
- 2 tablespoons (light) soy sauce
- 1 cup low-sodium chicken or beef stock (if you don’t have dashi stock)
- 1 egg, lightly beaten
- 1-2 tbsp (avocado) oil
- Chopped scallion and sesame seeds, for garnishing (optional)
Method:
1. In a bowl, mix together the liquid ingredients and sugar (stock, vinegar, soy sauce) and set aside.
2. Heat 2 tablespoons of oil in a large pan over medium-high heat, and cook the sliced onions for about 5 minutes.
3. Add the beef, then pour in the liquid mixture. Stir, cover, and bring to a simmer.
4. Cook for about 10-15 minutes until the liquid/sauce is reduced.
5. Turn the heat to low, and pour over the lightly beaten egg. Let it steam, and once the egg is cooked, turn off the heat.
6. Serve over freshly cooked rice, sprinkle with chopped scallions and sesame seeds, and enjoy! 🥰🫶🏻
Notes:
- You can adjust the taste to your liking by adding more soy sauce, vinegar, and sugar for adult portions.
- This dish normally uses dashi stock, but if you don’t have it, you can use low-sodium chicken stock instead.

If you’re in search of a simple and family-friendly orange chicken recipe, I’ve got you covered! It’s super easy to make, and you can whip up this dish in under 30 minutes. Here’s the recipe:
CHICKEN & BREADING
1 1/2 pounds boneless, skinless chicken breasts or thighs, diced into small pieces
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/3 cup all-purpose flour
1/4 cup cornstarch
ORANGE SAUCE
Juice from 1 cara-cara orange (about 1 cup, any type of navel orange can be used)
1 tablespoon white or rice vinegar
1 tablespoon low-sodium soy sauce
1-2 tablespoons honey (optional, adjust based on sweetness preference)
1/4 teaspoon garlic powder
1/2 teaspoon grated ginger or ginger powder
1 teaspoon orange zest or julienned orange peel
1 tablespoon cornstarch mixed with 1/4 cup water for slurry
—
• Start by seasoning diced chicken with the listed seasonings in a bowl, then coat them evenly with flour and cornstarch.
• Heat oil in a large skillet or frying pan, and cook the chicken over medium-high heat until it turns lightly browned and slightly crispy. It’s best to cook in batches. Once all the chicken is cooked, set it aside.
• Create the sauce by mixing grated ginger, orange juice, vinegar, soy sauce, garlic powder, honey, and orange peel. Ensure it is well combined.
• Pour the sauce into a pan and let it simmer for atleast 1 min, then lower the heat and add the slurry. Cook until the sauce thickens and bubbles.
• Reserve some of the sauce (optional).
• Combine the chicken with the remaining sauce, sprinkle with sesame seeds(optional), serve with some rice, and enjoy! 😊

Snack box for #onthego 🏃♀️🍇🍓🧀🥨
We already planned to have pizza for lunch today (as requested by my 9 yo), but knowing that my toddler isn’t a pizza enthusiast and only likes the crust ends or plain crust, I put together a snacky meal for her to enjoy alongside her plain pizza crust. 😅
What I prepared for her:
Almond cocoa puff pastry knots
String cheese
Strawberries and grapes
Extra snacks:
Pretzels
Miniature apples
