We’re all about breakfast over here, especially when it’s something we can share with our littles! These Mini Pumpkin Banana Pancake Bites are a staple in our house. I can’t take credit for this genius idea, but it’s been a winner for us since the early baby-led weaning days and is still going strong! Plus, they’re totally customizable—flavor options are endless, so they never get old. It’s definitely part of our breakfast rotation!

Recipe for these Pumpkin Banana Pancake Bites is below—save it for an easy breakfast hit! 🍌🎃

PUMPKIN BANANA PANCAKE BITES RECIPE 🥞

Ingredients:
• 1 banana, sliced
• 1 cup flour
• 1/2 cup milk
• 1 egg
• 2 tbsp melted butter
• 1 tsp baking powder
• 1/2 cup pumpkin puree
• 1 tsp cinnamon
• Optional: 1 tsp super-seed booster (chia, flax, etc.)

Method:
1. Combine dry ingredients in a bowl.
2. Mix in egg, melted butter, milk, and pumpkin puree until smooth.
3. Dip banana slices in batter, then cook in a buttered pan until golden on both sides.

Serve warm and enjoy with your little ones! 🥰

Time-Saving Tip: You can also use boxed pancake mix and just add pumpkin puree for a quick twist! 😍

Golden, crispy, and packed with flavor—this Tuna Melt Waffles’ a family favorite for a reason! Perfectly seasoned tuna, melty cheese, and a hint of crunch from celery come together in waffle form for the ultimate comfort bite. Whether it’s a breakfast, quick lunch or a snack for the littles, this recipe has been loved by so many of you when I first posted this 2 years ago, so I’m sharing it again 🥰

Tip: Swap sweet relish for a touch of lemon juice; if you don’t have sweet relish, this will balance all the flavors together. Who’s ready to dig in? 😍🧇 Recipe below

Recipe:
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Ingredients:
• 5 oz canned light tuna, drained
• 1/4 of a celery stick, minced
• Italian parsley, minced
• 1 & 1/2 cups shredded cheese of choice (I used Monterey jack cheese for this batch)
• 1 egg
• 1 tbsp mayonnaise (or full fat Greek yogurt)
• 1 tbsp sweet relish (or 1/2 tsp lemon juice for a zesty alternative)
• 1/4 cup flour of choice (I used chickpea flour)
• 1/4 tsp each: garlic powder, onion powder, ground black pepper
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Method:
1. Drain water from the canned tuna.
2. In a large bowl, combine all ingredients and mix until well combined.
3. Heat up a waffle maker and grease with unsalted butter or oil spray.
4. Scoop a heaping tablespoon of the tuna mixture onto the waffle maker and cook for 2–3 minutes, or until golden and crispy.
5. Let cool before serving to littles and enjoy!

I just want to share how much we absolutely love these books from ! (definitely not an ad 😅) They recently expanded their collection with two new books. The series, “A Very Asian Guide to…”, explores different cuisines like Filipino, Indian, Vietnamese, and now the newest releases—Japanese & Malaysian and Singaporean! (There’s also a Korean one we’re hoping to add to our collection soon.)

As someone who’s loved cooking since I was a kid, I would have been over the moon to have something like this growing up. Sharing these stories of Asian cuisines with my own kids is so special. Each book is filled with recipes and traditions from different cultures, making it such a fun, vibrant way for kids to explore food and heritage. As a foodie, I find them amazing, and my kids are just as obsessed!

1. Stir-fried ramen with chicken and broccoli. I used dry ramen noodles without the sauce packet, only cooked with a few drops of low-sodium soy sauce. Served with washed kimchi (to remove the spice or just used store-bought white kimchi), banana slices, and cheese.

2. Deconstructed beef salpicao, buttery and garlicky pasta, oats-coated potato croquette (cutouts), and blueberries.

Whip up these eggless mini banana muffins – perfect for little hands and snack time smiles! Soft, sweet, and toddler-approved for any time of day. These are perfect make-ahead snacks for the week – freeze leftovers after 3 days and reheat for a quick, on-the-go treat!

Ingredients:

• 1 cup mashed bananas (about 2 large bananas)
• 1 cup flour (all-purpose or gluten-free)
• ⅓ cup brown sugar or coconut sugar
• ⅓ cup vegetable oil (like avocado or olive oil)
• ½ tsp cinnamon
• 1 tsp baking powder
• ½ tsp baking soda
• 1 tbsp chia seeds or flax meal mixed with 2 tbsp water (chia egg)
• ⅓ cup almond or oat milk

Instructions:

1. Preheat oven to 350°F (175°C).
2. Mix chia seeds and water to make a chia egg, then set aside to thicken.
3. Mash bananas until smooth.
4. In a large bowl, mix oil, milk, and sugar. Add the chia egg, then stir in flour, cinnamon, baking powder, and baking soda. Mix well, but don’t overmix.
5. Grease a mini muffin tin and fill each cup ¾ full with batter. You can add chocolate chips or other toppings if you like.
6. Bake for 15-17 minutes until golden and a toothpick comes out clean.
7. Let the muffins cool on a wire rack before enjoying.

My kids may not love carrots on their own, but put them in baked goods, and suddenly it’s their favorite snack! 😅🧡🥕 These mini carrot muffins are always a hit—soft, sweet, and only sweetened with dates and maple syrup (or honey) 🙌🏻✨

Recipe below if you want to give them a try:

Mini Carrot Muffins
Ingredients:

• 1 ½ cups finely grated carrots (about 1 large carrot)
• ¼ cup milk (I use whole milk)
• 2 eggs
• ⅓ cup oil or melted butter
• ¼ cup maple syrup
• 8 pitted dates
• 1 tsp vanilla extract
• 1 cup all-purpose flour
• 1 cup whole wheat flour
• 1 tsp baking powder
• ¼ tsp salt
• Optional: chocolate chips for mix-ins or toppings

Instructions:

1. Preheat your oven to 350°F and get your mini muffin pan ready.
2. Wash, peel, and finely grate the carrot. Blend it in a blender with the wet ingredients (milk, oil, eggs, dates, maple syrup, vanilla) until smooth.
3. In a separate bowl, mix the dry ingredients. Combine the wet and dry mixtures to make your batter.
4. Fill each muffin slot, add your favorite toppings, and bake for 12-14 minutes.

I served these with ‘s Carrot Mango smoothie melts, store-bought frozen sweet potato fries that I air-fried , and some chunky applesauce. 😋

It seems like lunch packing season is over for many, but for some of us, it’s still ongoing for the next two+ weeks lol. We’ve got this, right? Absolutely! 😅🤘

So here’s a recap of my grade schooler's lunches from last week (extra snacks not included) I like to stick with what I have prepared eg freezer stash, and leftovers if there are any while also accommodating my daughters’ preferences:

Monday - air-fried gyoza dumplings, egg, and veggie fried rice, brownie bites, and grapes.

Tuesday - breakfast burrito (egg, tots, ham, cheese), more tater tots, orange slices, and grapes.

Wednesday - cucumber BLT sandwich, berries, and chocolate chip cookies.

Thursday - Filipino-style spaghetti, orange slices, and blueberries, a slice of sourdough garlic bread on the side (not shown).

Friday - Pepperoni and cheese toast (ciabatta bread), brownie bites, and blueberries.

These egg-free waffles have become one of my favorite waffle recipes & our favorite breakfast option due to their crispy outside and fluffy inside, making a delightful breakfast meal. 🧇🍓🫐

I love serving them with fresh berries and maple syrup. Last time, I doubled the batch to store some in the freezer, and they freeze exceptionally well! so, you can always prepare this in advance to get ahead of a busy week. Here is the recipe:

Ingredients:

1 cup of all-purpose flour
½ cup of whole wheat flour
1 teaspoon of baking powder
¼ teaspoon of salt (optional)
3 tablespoons of sugar (I used pure cane but this is optional)
2 tablespoons of oil
1 cup of your preferred milk
⅓ cup of full-fat Greek yogurt

Instructions:

• Mix milk, Greek yogurt, and oil until smooth.
• Add flour, baking powder, salt, and sugar. Stir until the batter is smooth.
• Allow the batter to rest for at least 5 minutes.
• Preheat the waffle maker and lightly grease it. Pour ¼ cup of batter for each waffle. Cook until they turn golden brown and crispy. Serve & enjoy! 🥞

- reheating them in the air fryer is a great option for a crispier outcome
- I also split the batter in half last time, leaving one plain and mixing chocolate chips into the other half.

We’ve been enjoying smoothies a lot lately, and whenever my toddler has any leftover fruits, I like to freeze them and use them later for smoothies.
As a result, we have accumulated a lot of half-eaten bananas in the freezer. Lol! 😁

Today, for lunch, Rue asked for noodles, and I decided to make a chocolate banana smoothie to go with it. Here’s the recipe (for 2 servings):
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Ingredients:
• 1 large banana (I used frozen chunks, so this is an estimate)
• 3 medjool dates, pitted
• 1 tbsp peanut butter
• 1 tbsp unsweetened cocoa powder
• 1 tbsp h**p hearts (optional)
• 1/3 cup oat milk or milk of your choice
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Instructions:
1. Add all the ingredients to a blender.
2. Blend until smooth.
3. Check the consistency and add more liquid or ice as needed.
