Grilled Chicken and Quinoa Salad
Ingredients:
2 boneless, skinless chicken breasts
1 cup quinoa, rinsed
2 cups water or low-sodium chicken broth
1 cup cherry tomatoes, halved
1 cucumber, diced
1 red bell pepper, diced
1/4 cup red onion, finely chopped
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon dried oregano
Salt and pepper to taste
Fresh basil or parsley, chopped (optional, for garnish)
Instructions:
Cook the quinoa: In a medium saucepan, bring the water or chicken broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until the liquid is absorbed. Fluff with a fork and set aside to cool.
Season the chicken breasts with salt, pepper, and dried oregano.
Preheat a grill or grill pan over medium-high heat. Grill the chicken for about 6-7 minutes per side, or until fully cooked and juices run clear. Let the chicken rest for a few minutes, then slice it into strips.
In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red bell pepper, and red onion.
In a small bowl, whisk together the olive oil and balsamic vinegar. Pour over the quinoa salad and toss to combine.
Top the salad with the grilled chicken strips and garnish with fresh basil or parsley if desired. Serve immediately or refrigerate for later.
